BLACKBERRY-GIN FIZZ FLOATS
Steps:
- Heat the blackberries, sugar and 1 tablespoon water in a small pot over medium heat, smashing the berries with a potato masher, until thick, about 5 minutes. Pour the mixture through a sieve into a bowl, pushing the juice through with a rubber spatula. Refrigerate until cold, at least 10 minutes.
- Fill a cocktail shaker with 2 tablespoons of the blackberry juice, 2 tablespoons mint, 2 ounces gin, 1 tablespoon lime juice and a handful of ice. Shake vigorously until the drink is ice cold, 5 or 6 times. Strain into a tall glass. Top with ginger ale and stir lightly. Repeat to make 3 more drinks. Top each with a scoop of ice cream.
VIRGIN BLUEBERRY FIZZ
Steps:
- Add the blueberries to a lowball glass and crush with a muddler. Add the Fresh Mint Syrup and fill the glass with ice. Top with the sparkling lemonade and stir everything together with a spoon. Thread 3 blueberries and the mint sprig on a small skewer and set on the side of the glass for garnish. Serve immediately.
- Stir together the sugar and 3/4 cup water in a small saucepan. Bring to a simmer over medium heat and cook until the sugar completely dissolves, 3 to 5 minutes. Turn off the heat. Use your hands to tear the bunch of mint in half and add it to the saucepan. Using a spoon, press down the mint to make sure that it is completely submerged. Allow the syrup to cool to room temperature in the saucepan, about 1 hour. Strain the mixture through a fine-mesh strainer set over a small bowl or liquid measuring cup. Use the back of a spoon to press down on the mint to extract as much flavor as possible. The syrup can be used immediately and will keep in the refrigerator for up to 2 weeks.

BANANA BERRY FIZZ
The new fizzy flavored water is one of my favorite drinks because it has no color (big plus for me since I have a food dye sensitivity), it comes in a ton of flavors, and hey, it's water so it keeps me hydrated. It's also great to use in drink recipes that call for flavored seltzer. At Wal-mart, it's 50 cents for a liter and who could ask for anything more!
