BERRIES AND CREAM
This is a simple, lovely way to serve fresh summer berries. I made this for brunch today and found it a refreshing end to the meal. This dish could also be made year-round using unsweetened frozen berries that have been thawed. Note: Preparation time includes time needed for berries to sit at room temperature.

Steps:
- In a medium bowl, combine berries, lemon zest and sugar. Gently toss, being careful not to break the blackberries and raspberries too much.
- Allow berry mixture to sit at room temperature for 30 minutes until berries begin to create their own juice, and sugar is dissolved.
- Serve in four small serving bowls (or dessert bowls) with around 2 tbs. cream drizzled attop per bowl.

- Mix together the sour cream and cinnamon in a small bowl. Divide the blueberries and raspberries among 4 coupe glasses or small bowls. Top each serving with a dollop of spiced sour cream, 1 tablespoon brown sugar and a good sprinkling of toasted almonds.
SPIKED SPICED BERRIES
This is a summer special. Serve it for a dinner party, BBQ, or for a romantic dinner for two (you'll want to make a smaller amount for that).

Steps:
- Clean and slice strawberries into ½" pieces and place in a large bowl.
- Wash blueberries, drain and add to bowl.
- Add wine and spices.
- Sprinkle with powdered sugar and stir to dissolve and distribute.
- Refrigerate at least 2 hours prior to serving, stirring it up periodically to redistribute the juices and any powdered sugar that may have settled to the bottom. Just prior to serving, mix in raspberries and blackberries.
- Serve berries in a bowl or ladle onto pound cake.

SIMPLE BERRIES AND CREAM: NO COOKING INVOLVED
When I was a little girl, I used to go pick wild blackberries with my Daddy. I'd get eaten alive with chiggers, but thinking about this yummy dessert made it all worth it. After we got a big container full, we'd drop some off with my Grandmother for a cobbler, but Daddy would keep at least 2 cups out for the 2 of us. This was our little treat!!! Today when I eat it, I still think of that time with my Daddy. Guess Daddy's girls never really grow up!

- Put 1 cup of fresh blackberries into the serving dish.
- NOTE: You can add 1/2 teaspoons sugar to the berries then stir: let them sit and they make their own fruit syrup.
- Pour in 1/2 cup of the half and half over the berries.
- I have served this to people in a pretty glass, with a biscotti on the side. Daddy and I just sat on the porch with the berries and cream!

MIXED BERRIES WITH SPICED MAPLE SYRUP

- In a small saucepan, combine the syrup, cinnamon, star anise, cloves and salt. Bring to a simmer over medium heat, then reduce the heat and simmer gently for 5 minutes. Remove from the heat and allow the mixture to cool completely. Strain the syrup through a fine mesh strainer, discarding the spices. Cool to room temperature.
- In a medium bowl, combine the heavy cream, creme fraiche, 2 teaspoons of the spiced syrup and vanilla. Using a large whisk or handheld mixer, beat until the cream thickens and soft peaks begin to form (careful not to over whip).
- Divide the berries among 4 coupe glasses or dessert dishes. Dollop with the whipped creme fraiche and drizzle with 1 to 2 teaspoons of the syrup. Sprinkle with almonds, if using. Leftover syrup will keep for 2 weeks in the refrigerator in a sealed jar.

- In a 1 quart saucepan, combine all ingredients except berries and cool whip.
- Cook over high heat, stirring occasionally until mixture comes to a boil.
- Boil for one minute.
- Remove the cinnamon stick and the cloves.
- Place the berries in a medium size bowl and pour the spice on top.
- Cover and refrigerate for at least 30 minutes.
- Line the bottom and sides of 4 dessert dishes with the cool whip.
- Fill the center of each dish with strawberries and syrup.
