Champagne Soaked Berries with Whipped Cream Recipe - (4.5/5) image

1/2 cup Champagne or other sparkling wine
4 tablespoons agave nectar, divided
1 teaspoon grated orange rind
1 (16-ounce) package fresh strawberries, halved
2 (6-ounce) packages fresh blueberries
1/2 cup heavy whipping cream
8 amaretti cookies, coarsely crumbled

Steps:

  • Combine Champagne, 3 tablespoons agave, and rind in a large bowl. Add berries and toss gently to combine. Cover and chill 30 minutes. Place cream in a medium bowl. Beat with a mixer at high speed until stiff peaks form. Beat in remaining 1 tablespoon agave. Place 3/4 cup berry mixture in each of 8 bowls. Top each serving with 2 tablespoons whipped cream. Divide crushed cookies among servings.

1 cup chilled heavy whipping cream
2 tablespoons confectioners' sugar
1 teaspoon vanilla bean paste
1/4 cup creme fraiche
Zest of 1 orange
1 teaspoon orange liqueur
6 ounces raspberries
6 ounces blueberries
6 ounces strawberries, hulled and cut into quarters

Steps:

  • Add the heavy cream and sugar to the chilled bowl of a stand mixer (you can also use a hand mixer or a whisk and a large chilled bowl). Whip on medium speed until the cream holds soft peaks. Add the vanilla bean paste, creme fraiche, orange zest and orange liqueur and whip on medium speed until the cream holds medium peaks.
  • Layer fruit in a bowl, spoon over whipped cream and serve.

5 large egg yolks
1/2 cup granulated sugar
1 vanilla bean, split
2 tablespoons rum
2 pints raspberries
1/4 cup confectioners' sugar
2 tablespoons orange liqueur, such as Grand Marnier
Zest of 1 orange
6 vanilla wafer cookies
6 sprigs fresh mint

Steps:

  • For the cream: In a saucepan, bring some water to a boil, then reduce the heat to a simmer. Have a mixing bowl ready that will fit over the top of the pan but not sink all the way in.
  • Put the egg yolks in the mixing bowl off heat. Add the granulated sugar and whisk until the yolks start to turn pale. Place the mixing bowl over the saucepan with the simmering water. Scrape the seeds from the vanilla bean and add to the egg mixture. Slowly add the rum and whisk to combine. Cook over the simmering water until thick, using a rubber spatula to scrape the bowl, about 5 minutes. Cover with plastic wrap and refrigerate until cool.
  • For the orange liqueur raspberries: Add the raspberries, confectioners' sugar, orange liqueur and orange zest to a bowl and mix together. Let macerate for 1 hour.
  • To assemble: Pile the fruit into 6 individual martini glasses and top with the cream. Crush a cookie over each one and garnish with mint.

1/4 teaspoon Champagne flavoring (recommended: LorAnn Gourmet)
1 (16-ounce) bag frozen mixed berries, thawed in refrigerator

Steps:

  • In a small bowl, stir together the whipped topping and Champagne flavor. Layer the berries and champagne cream in champagne flutes. Serve immediately.

This is very fancy-looking served in wine glasses. Champagne-based gelatin dessert with strawberries and blueberries. Posted for ZWT 2006. Time does not include allowing the gelatin to refrigerate until set.

1 liter champagne or 1 liter sparkling white wine
1 1/2 tablespoons gelatin
1 cup sugar
4 slices lemon rind
4 slices orange rind
1 2/3 cups small strawberries, hulled
1 2/3 cups blueberries

Steps:

  • In a bowl, pour 2 cups champagne or sparkling white wine, and allow the bubbles to subside.
  • Sprinkle the gelatine over the top in an even layer. Leave until the gelatine is spongy - do not stir.
  • Place the remaining champagne in a large saucepan. Add the sugar, lemon and orange rinds, and heat gently, stirring until all sugar is dissolved.
  • Remove the pan from the heat. Add the gelatine mixture and stir until thoroughly dissolved. Leave the jelly to cool completely, then remove the lemon and orange rind.
  • Divide the strawberries and blueberries among eight 1/2 cup wine glasses or clear bowls and pour the jelly over them.
  • Chill until the jelly has fully set. Remove from the fridge 15 minutes before serving.

This is a simple, lovely way to serve fresh summer berries. I made this for brunch today and found it a refreshing end to the meal. This dish could also be made year-round using unsweetened frozen berries that have been thawed. Note: Preparation time includes time needed for berries to sit at room temperature.

1/2 cup blackberry
1/2 cup raspberries
1/2 cup strawberry, hulled and quartered
1/2 cup blueberries
1 teaspoon lemon zest
2 tablespoons granulated sugar
1/4 cup light cream (or half-and-half or milk)

Steps:

  • In a medium bowl, combine berries, lemon zest and sugar. Gently toss, being careful not to break the blackberries and raspberries too much.
  • Allow berry mixture to sit at room temperature for 30 minutes until berries begin to create their own juice, and sugar is dissolved.
  • Serve in four small serving bowls (or dessert bowls) with around 2 tbs. cream drizzled attop per bowl.
