1 lb ground beef round
1 (14 1/2 ounce) can zesty diced tomatoes, undrained
1 1/2 teaspoons jarred minced garlic
1 teaspoon jamaican jerk spice
2 large unpeeled baking potatoes, such as russets (8 to 10 ounces each)
salt
pepper
jamaican jerk spice
1/2 cup plain yogurt
3/4 teaspoon jarred minced garlic
1/2 teaspoon jamaican jerk spice

Steps:

  • Brown ground beef in large nonstick skillet over medium heat 8 to 10 minutes or until beef is not pink, breaking up into small crumbles.
  • Pour off drippings.
  • Drain and reserve 1 tablespoon of the tomatoes.
  • Add remaining tomatoes, 1-1/2 teaspoons garlic and 1 teaspoon jerk seasoning to beef; bring to a boil.
  • Reduce heat; cover and simmer 8 minutes, stirring occasionally.
  • Uncover skillet; continue simmering 7 minutes, stirring occasionally.
  • Season with salt and pepper.
  • Meanwhile cut potatoes lengthwise into 1/4-inch thick slices; pierce in several places with a fork.
  • Dip in cold water; sprinkle lightly with salt, pepper and jerk seasoning.
  • Place in single layer on nonstick baking pan.
  • Broil 3 to 6 inches from heat 10 to 12 minutes or until tender and lightly browned, turning once.
  • Combine topping ingredients and reserved 1 tablespoon tomatoes in small bowl; season with salt and pepper.
  • Spoon beef mixture over potatoes.
  • Serve with topping.

My boyfriend lived in Serbia for 3 years and always begs me to recreate some of his favorite dishes. Based on his sketchy explanations and a little research into Eastern European spices, I concocted this hearty and slightly spicy bake with ground beef, paprika, and vegetables like celery and peppers. Great with a glass of red wine!

1 pound ground beef
1 tablespoon olive oil
1 green bell pepper, chopped
1 onion, chopped
1 carrot, shredded
2 celery stalks, chopped
½ tablespoon paprika
½ teaspoon salt
¾ teaspoon black pepper
¼ teaspoon crushed red pepper
1 pinch ground cinnamon
1 pinch ground cloves
¼ cup water
⅛ cup red wine
1 cube beef bouillon
2 tablespoons half-and-half
2 potatoes, peeled and sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a casserole dish.
  • In a skillet over medium heat, cook the beef until evenly brown. Remove beef from skillet, reserving juices, and set aside. Mix in the olive oil, and saute the green pepper, onion, carrot, and celery until tender.
  • Return beef to the skillet, and season with paprika, salt, black pepper, red pepper, cinnamon, and cloves. Stir in the water and red wine until heated through. Dissolve the beef bouillon cube into the mixture. Remove skillet from heat, and mix in the half-and-half.
  • Layer the bottom of the prepared casserole dish with enough potato slices to cover. Place the beef and vegetable mixture over the potatoes, and top with remaining potatoes.
  • Cook, covered, 45 minutes in the preheated oven, or until the potatoes are tender.

4 teaspoons olive oil
1/2 lb stir-fry beef
1/4 small onion, thinly sliced
1/2 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon garlic powder
cayenne, to taste
1 teaspoon parsley flakes
1 tablespoon Worcestershire sauce
2/3 cup potato, cooked & diced

Steps:

  • Heat the oil over medium heat then add the onion & beef. Fry until the beef is no longer pink.
  • Turn the heat onto medium-low then add the spices, parsley, & Worcestershire. Continue to fry for 10 minutes, make sure to stir frequently.
  • Stir in the potatoes then continue to cook for 7 minutes. Serve with thick bread.

1 tablespoon chili powder
2 teaspoons dried oregano
1/2 teaspoon ground cinnamon
1 14 1/2-ounce can stewed tomatoes
2 teaspoons red wine vinegar

Steps:

  • Preheat oven to 450°F. Pierce potatoes in several places with fork. Microwave potatoes on high 7 minutes, turning once. Transfer potatoes to oven and bake until tender, about 20 minutes.
  • Meanwhile, saut&) beef in heavy large skillet over medium-high heat 4 minutes, breaking up meat with back of fork. Mix in chili powder, oregano and cinnamon. Add tomatoes and bring sauce to simmer, breaking up large tomato pieces with fork. Reduce heat, cover and simmer 8 minutes to blend flavors.
