Pleasingly Easy Pulled Pork image

Pulled pork, in its simplest and fastest of slow-cooked methods, begins with boneless pork shoulder. The top of a pork shoulder is referred to as a "butt" or "Boston butt" BUT it is shoulder meat nonetheless. It was shipped in barrels at one time, and it was buttressed up the sides of the barrels, as the fable goes. The higher the cut the fattier the meat; if you want to remove fat from pulled pork, make it a day ahead to cool it and skim.

4 pounds boneless pork shoulder
About 1 tablespoon pimenton (smoked paprika)
About 1 tablespoon kosher salt
About 1 1/2 teaspoons (half a palm full) granulated garlic
About 1 1/2 teaspoons (half a palm full) granulated onion
About 1 1/2 teaspoons (half a palm full) dried oregano or marjoram
About 1 1/2 teaspoons (half a palm full) coarse black pepper
3 tablespoons neutral oil such as olive oil (NOT EVOO), safflower oil or canola oil
12 ounces (1 1/2 cups) lager, white wine or organic cloudy apple cider
1 1/2 cups chicken stock or bone broth
Barbecue Sauce, optional, recipe follows
2 tablespoons neutral oil
1 small onion, finely chopped
1 jalapeno or serrano pepper, finely chopped
4 cloves garlic, chopped
Salt and pepper
1/2 cup cider or white vinegar
About 1 1/2 cups organic ketchup or tomato sauce
About 1/4 cup Worcestershire sauce
About 3 tablespoons light brown sugar
About 2 tablespoons cayenne pepper sauce, such as Frank's RedHot

Steps:

  • Preheat oven to 300 degrees F, rack 1 rung below center.
  • Bring pork to room temperature, about 30 minutes, and pat dry.
  • Combine paprika, salt, garlic, onion, oregano or marjoram and pepper in a bowl, then coat meat evenly, rubbing mixture into meat.
  • Heat a large Dutch oven over medium-high heat with oil, 3 turns of the pan. When oil ripples and smokes, add the meat and brown on all sides, 8 to 10 minutes total. Add beer, wine or cider and reduce a minute or so, then add stock. Cover and place in oven. Cook 3 hours until very tender, then shred meat with tines of 2 forks, removing larger pieces of fat or connective tissue as you work. Stir meat and drippings together with Barbecue Sauce, if using.
  • Heat oil in medium saucepot or skillet over medium to medium-high heat. Add onions, chile, garlic, salt and pepper, then soften 5 to 6 minutes. Add vinegar and reduce 1 to 2 minutes, then add ketchup or sauce, Worcestershire, brown sugar and hot sauce. Simmer over low heat for flavors to combine. Add to pork and drippings and combine.

1/4 cup sweet paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon ground cumin
1 teaspoon cayenne pepper
salt
pepper
1 (5 lb) boneless pork butt, trimmed and quartered
1 cup barbecue sauce, plus extra for serving
cider vinegar

Steps:

  • Combine sugar, paprika, garlic powder, onion powder, cumin, cayenne, and 1/2 teaspoon salt in a bowl.
  • Using a fork, prick pork all over.
  • Rub sugar mixture over pork, wrap tightly in plastic wrap, and refrigerate for 8-24 hours.
  • Unwrap pork and place in slow cooker.
  • Spread barbecue sauce evenly over pork, cover, and cook until pork is tender, 9-11 hours on LOW or 5-7 hours on HIGH.
  • Transfer pork to large bowl; let cool slightly, then shred into bite-size pieces discarding excess fat; cover to keep warm.
  • Let braising liquid settle for 5 minutes, then remove fat from surface using a large spoon.
  • Season with salt, pepper, sugar, and vinegar to taste.
  • Toss shredded pork with 1 cup braising liquid; add more liquid as needed to keep meat moist.
  • Serve on buns with pickle chips and more barbecue sauce.

This is a very easy meal to prepare for the new cook. Serve with sweet red onion slices, pickles and chips and you have a great meal that tastes like you're a seasoned cook.

1 (3 to 4 lb) pork roast, bone-in or boneless
1 small bottle of your favorite bar-b-que sauce (i like a hickory smoked flavored sauce)
1 medium onion, chopped
3 Tbsp dijon mustard
split hamburger buns, your favorite rolls or texas toast

Steps:

  • 1. Place pork roast in a 4 or 5-qt. slow cooker.
  • 2. In a medium bowl, combine the bar-b-que sauce, onion, and mustard; pour over roast.
  • 3. Cover and cook on low for 8-10 hours or until meat is tender.
  • 4. Remove meat; cool slightly. Skim fat from cooking juices and discard.
  • 5. Remove the bone if using bone-in roast; shred pork with two forks and return to slow cooker; heat through.
  • 6. Place pulled pork and slaw on your bread and serve with pickle spears, and chips.

1 ½ tablespoons ground black pepper

8 pounds pork shoulder roast (butt roast), rind removed
½ cup barbeque sauce, or to taste
18 large hamburger buns, split

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Mix brown sugar, paprika, garlic powder, black pepper, and salt in a bowl. Spread mustard over pork roast and sprinkle with brown sugar mixture, using the entire amount. Line a shallow baking dish with aluminum foil. Place a rack in the prepared baking dish and arrange pork roast on rack.
  • Bake in the preheated oven until very tender, 9 to 11 hours. Let pork cool, then shred into bite-size pieces. Stir barbeque sauce into pork to moisten; serve with hamburger buns.
