EASY BEET CHIPS
A different way to use up some beets!

Steps:
- Thinly slice beets to about 1/16-inch thickness using a mandoline. Place beet slices in a bowl and add salt. Toss to combine. Allow beets to sit about 30 minutes. Drain excess liquid.
- Preheat the oven to 300 degrees F (150 degrees C). Line 2 baking sheets with parchment paper.
- Pour olive oil over beets and toss to combine. Mix together garlic powder, black pepper, and dill in a small bowl. Sprinkle over beets and toss to coat. Place beet slices on baking sheets in a single layer.
- Bake in the preheated oven until crispy, 40 to 50 minutes. Sprinkle with additional salt, if desired.

VEGETABLE PEEL CHIPS RECIPE BY TASTY
Have a pile of vegetable peels and don't want to waste them? Toss them with olive oil and a few simple seasonings, then roast them into chips-it's that easy. The crisp, crunchy peels make a great snack or salad topper.

Steps:
- Place an oven rack in the center of the oven. Preheat the oven to 400˚F (200˚C).
- In a medium bowl, toss together the vegetable peels, olive oil, and salt.
- Spread the peels in an even layer on a baking sheet.
- Roast for 20-25 minutes, tossing halfway through, until the peels are dried and crisp, but not burnt.
- In a small bowl, mix together the garlic powder, paprika, and dried parsley. Toss the peel chips with the spice mixture. Season with salt to taste.
- The veggie peel chips will keep for up to 3 days stored in a cool, dry place.

Steps:
- Peel and slice beets as thinly as possible with a sharp knife or mandoline.
- Combine sliced beets, water, apple cider vinegar, and olive oil in a large bowl. Let marinate, at least 10 minutes.
- Arrange beets in a single layer on food dehydrator trays. Sprinkle fleur de sel over beets. Store any beets that don't fit in the refrigerator.
- Dehydrate according to manufacturer's instructions, 8 to 12 hours.

- Peel the beetroot. Rince it under cold water to make sure you remove all the dirt. Using a mandolin slicer (technically, you can also use a knife but it will be tricky), finely slice it about 1mm thick.
- Put the baking sheet in the oven and let it cook for 50 to 60 minutes or until the beetroot slices get crispy. And voilà!Bon appétit !
