VEGAN QUINOA BEET BURGERS



Vegan Quinoa Beet Burgers image

This Vegan Quinoa Beet Burger is THE best veggie burger I've ever made! Inspired by my favorite restaurant veggie burger, you'll be sinking your teeth into a flavorful, smoky and mouthwatering veggie burger!

1.75 ounces chopped mushrooms
2 ounces bell peppers
7 ounces black beans
1 cup cooked quinoa
1/2 onion (diced)
4 cloves garlic (minced)
1/4 cup oat flour (certified GF old-fashioned oats)
3 ounces roasted (chopped beets)
1/2 teaspoon paprika
Salt & Pepper to taste
1 tablespoon maple syrup
1 tablespoon soy sauce
1/4 teaspoon liquid smoke (optional)

Steps:

  • In a food processor, add the beets. Pulse until cut up, about 30 seconds. Add the rest of the ingredients, including seasonings. Pulse until combined, not too much to make it mushy but until incorporated.
  • On a cookie sheet lined with parchment paper, form the mixture into burgers (ensure to spray your hands with oil first - they are sticky!). They can make 3 large burgers or 6 smaller burgers. Refrigerate for about 2 hours, or overnight if possible.
  • When burgers are chilled, in a pan over medium heat, heat about 2 tablespoons olive oil. Add the burgers to it and cook about 4-6 minutes on each side, until crispy and cooked through.
  • Serve as you desire, in a burger form or in a lettuce wrap. We added burger buns, onions, tomato and lettuce and mustard. Enjoy!

Ingredients
1 onion minced
3 garlic gloves minced
2 cups boiled quinoa
2 beet boiled/cooked
2 avocados
1 lemon
some red vine winegar
salt and pepper to taste

Steps:

  • 1. Once the beet is boiled, mash the beets in a bowl. Remove any excess fluid. 2. Add onions, cilantro, garlic gloves, juice from a lemon, 1-2 teaspoons of red vinegar. 3. Add cooked quinoa. Mix well. 4. Preheat oven at 400 degrees. 5. Make the beet and quinoa patties. Bake for 20 minutes. 6. Add cut sweet potato/yam fries in the oven until it browns. It took about 15-20 minutes. 7. While these are baking in the oven, make the guacamole. 8. Once the patties and sweet potato fries are done, its time to assemble the burger! I used whole wheat ciabatta. 9. Added a layer of freshly cut cilantro. 10. The beet burger. Topped by guacamole. 11. And finally the freshly baked sweet potato fries on top! Enjoy!

  • If using fresh eggplant, add to a steaming basket and steam until fork tender, about 5 minutes. Transfer to a food processor and process on high until smooth. Transfer to a mixing bowl and set aside. If using baba ganoush, simply skip this step.
  • In a small bowl, add remaining 2 tablespoons of flaxseed meal and water. Quickly stir and set aside.
  • Add beets, quinoa, oats, 3 tablespoons of flaxseed meal and garlic into a large mixing bowl (or directly into the bowl of a food processor) and mix to combine. Transfer to a food processor and pulse to combine the ingredients. Transfer back to the bowl.
  • Add flax eggs (flax and water mixture) along with the pureed eggplant and hummus into the bowl. Mix until the dough comes together and you can shape it into patties. Season with salt and pepper. [note: if it seems too wet, let it sit for 10 - 15 minutes until you add more flax to let the oats and flax soak up some of the liquid. You want to be able to shape them into patties]

  • Scrub and wash the outside of a sweet potato. Use a fork to stab the potato several times and then place it in the microwave and cook for two minutes. Remove from the oven and allow it to cool. After it's cooled, chop into large cubes.
  • Place the gluten-free crackers in a food processor and pulse until a coarse flour is formed. Pour half of this on a plate and set aside.
  • To the remaining half of the cracker crumbs, add the cubed sweet potatoes, drained chickpeas, green onions, cashews, garlic powder, salt, nutritional yeast flakes, quinoa, ground flax seeds, and cornstarch. Pulse for a couple of seconds and then use a spatula to push the ingredients back down. Pulse again for several seconds. I like to leave some texture in the burgers so I'm not trying to puree it down to a paste, just creating a cohesive mass.
  • Add about a half cup of cornmeal and pulse for another second or two to combine. Let that mixture sit for about 5 minutes. If it's still too sticky to handle, add another quarter cup of cornmeal and pulse again. Add the chopped kale and stir to distribute throughout the mixture.
