BEER BISCUITS

Number Of Ingredients 7

2 1/4 cups all-purpose baking mix, recipe follows
2 tablespoons sugar
1 cup beer
6 cups all-purpose flour
3 tablespoons baking powder
2 teaspoons salt
3/4 cup shortening

Steps:

  • Preheat oven to 375 degrees F.
  • In a large mixing bowl, mix all ingredients with a whisk until just combined. Using 2 spoons divide dough into 4 even mounds and put on a baking sheet. Bake for 8 to 10 minutes until golden brown.
  • In a large bowl combine the flour, baking powder and salt. Cut in the shortening with a pastry knife or fork until the mixture is well blended. Use in recipes that call for Bisquick or all-purpose mix.
  • Yield: 7 cups

BBQ BRATS 'N BEER



BBQ Brats 'n Beer image

I made this recipe last night for the first time and they are good! This is great if you are having a gang in and want a "do it yourself" style dinner (whatever) have baked beans on the side.

6 bratwursts
1 (12 ounce) can lager beer
1 medium onion, chopped
10 whole black peppercorns
4 whole cloves
3 garlic cloves (optional)
6 Italian bread
sweet dark mustard (or your choice)
pickled hot peppers (or other relish or chutney)

Steps:

  • Put the brats, onions, peppercorns, cloves, garlic in a saucepan, pour in the beer.
  • Bring to a boil and simmer the brats 15 minutes.
  • Drain (you can do this early in the day and then just have the BBQ step to do before serving).
  • BBQ the brats about 10 minutes.
  • Spray with water while BBQing to form a crisp skin.
  • Serve on the roll with mustard and hot peppers or other relish or serve them as your meat for dinner.

Beer, to cover
1 medium large sweet onion
2 ounces (1/2 stick) butter
Serving suggestions: fresh baked brat buns with sauerkraut, onions, green peppers, ketchup, and/or mustard

Steps:

  • Place brats in a Dutch oven with onions and butter, cover the brats with beer. Bring to a boil and reduce to simmer until brats are cooked. Remove brats and set aside beer mixture. Grill brats until golden brown and return to beer mixture until ready to serve. Serve brats on fresh baked brat buns with sauerkraut, onions, green peppers, ketchup, and/or mustard.

I came up with this recipe by the name of the brats I use.(Beer'n Bratwurst Brats)

8 beer'n bratwurst brats
1/2 c water
1 can(s) of 8 grand biscuits
honey mustrad
1/2 c onion, chopped
1/2 c green bell pepper, chopped
1 Tbsp olive oil
8 Tbsp shredded cheddar cheese

Steps:

  • 1. Preheat oven to 350.
  • 2. In a skillet bring water to a boil, add the brats and cook 3 to 4 minutes on medium-low heat. Drain the water and cook 3 minutes preside to brown.
  • 3. Remove brats and add the oil to the skillet. Add the onion and green pepper and saute about 3 to 4 minutes. Remove and drain on paper towel.
  • 4. Flatten each biscuit with the palm of your hand. Brush mustard on each buscuit to taste.
  • 5. Add a brat to each biscuit.
  • 6. Divide the onion and green pepper between the brats.
  • 7. Top with the cheese.
  • 8. Fold each bicuit over the brat and the fillings and seal.
  • 9. Bake 5 to 10 minutes. Serve with extra mustard for dipping. (spicey mustard works well too!)

BEER BRATWURSTS

2 12-ounce bottles lager beer
1 large onion, cut into wedges
4 cloves garlic, smashed
1 2-inch piece ginger, thinly sliced
1 teaspoon caraway seeds
2 bay leaves
2 whole cloves
6 to 8 links fresh bratwurst (about 2 1/2 pounds)
4 tablespoons unsalted butter
6 to 8 sub rolls or Italian-bread segments
Whole-grain mustard, for serving
Assorted toppings, for serving (below)

Steps:

  • Combine 6 cups water, the beer, onion, garlic, ginger, caraway seeds, bay leaves and cloves in a large pot over medium-high heat; bring to a gentle simmer and cook 10 minutes. Add the bratwursts, return to a simmer and cook until almost done (the meat should still be slightly pink in the center), about 15 minutes. Remove from the heat and let the bratwursts cool completely in the cooking liquid, about 1 hour.
  • Preheat a grill to medium high. Transfer 2 cups of the cooking liquid to a small saucepan over medium heat. Add the butter and bring to a boil; cook until the butter melts, about 1 minute.
  • Grill the bratwursts, occasionally turning and basting with the butter mixture, until marked and cooked through, 10 to 12 minutes. Serve on rolls with mustard and other toppings.
  • Sweet-and-Sour Onions
  • Cook 2 chopped red onions in a skillet with 2 tablespoons olive oil over medium-high heat, stirring, until golden, about 8 minutes. Add 1/2 teaspoon caraway seeds; cook, stirring, 30 seconds. Add 1/4 cup red wine vinegar, 1 tablespoon brown sugar and 1/2 teaspoon kosher salt; cook, stirring until the onions are glazed, 1 minute. Let cool completely.
  • Bell Pepper Relish
  • Pulse 1 each chopped yellow bell pepper and orange bell pepper, 4 each chopped radishes and scallions, 1 chopped celery stalk and 1 garlic clove in a food processor until finely chopped. Whisk 2 tablespoons each cider vinegar and chopped parsley, 1 tablespoon olive oil, 2 teaspoons brown sugar, 1/2 teaspoon each celery salt and kosher salt, and pepper to taste in a large bowl. Add the vegetable mixture; toss to coat.
  • Smoky Beer Cheese
  • Combine 1/4 pound each shredded sharp cheddar and smoked gouda, 1 minced garlic clove, 1/2 cup lager beer, 2 teaspoons hot sauce, 1/2 teaspoon kosher salt, and pepper to taste in a food processor; pulse until smooth.
  • These toppings also taste great on burgers or hot dogs.

This is our family's way of making beer brats! We love them this way and they are even better re-grilled the next day! Depending on how much you drink while you are prepping you may need more or less beer!

3 (12 ounce) cans beer
5 uncooked bratwursts (we like Johnsonville best)
1/8 cup yellow mustard
1/8 cup stone ground mustard
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
1 medium onion, cut into rings about 1/3 of an inch thick
sauerkraut (optional)
1 large red bell pepper (cut in rings the same size as the onions)
5 hot dog buns or 5 hoagie rolls

Steps:

  • Get a large grill safe dish (we use the reynolds disposable roasters), place the onions, red bell peppers (if using) and brats in the bottom.
  • Mix the two mustards, Worcestershire sauce and brown sugar together and dump this mixture over the brats and onions etc.
  • Stir until the onions and brats are evenly coated.
  • Pour enough beer into the dish to cover the brats and onion, then give it a slight stir to mix the mustard mixture with the beer.
  • Put in fridge and let sit at least 30 minutes, but an hour or two is much better. When marinating time is up, remove and let come to room temperature.
  • Pre heat your grill to medium high heat.
  • Place the container directly on the grate and cook the brats in the beer mixture for 10-15 minutes, until the beer is steamy and hot. Remove from heat. But do not discard yet.
  • Turn the grill down to medium heat (or however you like your brats grilled).
  • Remove the onions and brats from the beer mixture. Then place the brats on one side of the grill and the onions on the other.
  • Grill brats and onions, turning occasionally until done. Each time you turn, baste with the remaining beer mixture. The onions should be somewhat caramelized and soft.
  • Discard the remaining beer mixture and serve on buns or hoagies with sauerkraut and other condiments as desired.

1 pinch caraway seed
pepper
6 whole bratwursts (Prick with a fork or slice in a couple spots to keep them from exploding)
2 (16 ounce) cans beer
6 ounces sauerkraut, rinsed

Steps:

  • Melt butter in a Dutch oven saute onions till tender 5 minutes.
  • Add sugar, caraway seeds, and pepper stir in and place brats on top, cover the brats with beer drink the remaining. Bring to a boil and reduce to simmer until brats are cooked. Remove brats and add kraut and stir.
  • Place brats on medium high grill and cook brats until golden brown and return to beer/kraut mixture until ready to serve. Serve brats on fresh baked brat buns with sauerkraut & onions, fresh grated horseradish, ketchup, and/or mustard.

Brats in a blanket take the classic pigs in a blanket appetizer to the next level for dinner! I used fully cooked brats to make this super easy, but fresh brats are delicious if you have time to cook them ahead. Go crazy with your favorite flavors--I used jalapeño-Cheddar brats here!

Nonstick cooking spray, for the baking sheet
One 8-ounce tube refrigerated crescent rolls
8 fully cooked brats, such as jalapeño-Cheddar-flavored
1 large egg
1/2 teaspoon poppy seeds
1/4 teaspoon sesame seeds
1/2 cup IPA beer
2 tablespoons brown sugar
1/2 cup yellow mustard
2 tablespoons coarse-ground Dijon mustard

Steps:

  • Preheat the oven to 350 degrees F. Spray a rimmed baking sheet with nonstick cooking spray.
  • Carefully unroll and separate 8 of the perforated triangles of crescent dough. Starting with the smaller end of each dough triangle, wrap it around a brat and pinch the seams together to totally seal. Place the wrapped brats on the prepared baking sheet.
  • Beat the egg in a small bowl. Brush the brats with the egg and sprinkle the poppy and sesame seeds on top. Bake until the dough is golden brown, 20 to 25 minutes.
  • To make the beer mustard, add the beer to a small saucepan. Bring to a simmer; simmer over medium heat until reduced by half, about 10 minutes. Add the brown sugar and stir until dissolved, about 1 minute. Add the yellow mustard and Dijon mustard to a small heatproof bowl. Pour in the reduced beer and stir to combine.
  • Serve the brats in a blanket with the beer mustard on the side for dipping.
