These Beer Marinated Grilled Drumsticks are a simple masterpiece. A straightforward, budget-friendly recipe that's made for the grill and perfect for feeding a crowd, these little drummies are juicy, charred to perfection and are loaded with smooth, dark beer caramel flavors.

4 pounds chicken drumsticks
12 ounces Dunkel-style "dark" lager (such as Modelo Negra)
3 Tablespoons Brazilian Sofrito, or 6 garlic cloves, minced
1 Tablespoon paprika
1 cup barbecue sauce
1 Tablespoons brown sugar
1/2 cup olive oil
sal grosso style rock salt for grilling

Steps:

  • In a large bowl, combine the garlic, the paprika, the barbecue sauce, the brown sugar, the olive oil and whisk to combine.
  • Next, add in the beer and whisk to combine.
  • Add in the chicken drumsticks and stir gently to make sure they're all submerged in the marinade.
  • Cover the bowl with kitchen wrap, and refrigerate for at least 4 hours, or preferably overnight.
  • About an hour before you intend to grill the drumsticks, remove the bowl from the fridge, and pour out the marinade and discard. Leave the drumsticks in the bowl.
  • Preheat your grill.
  • Immediately before grilling, add in the grilling salt to the chicken drumsticks and mix to combine with your hands or tongs.
  • Lay your chicken drumsticks on the grill so that they are evenly spaced and over direct heat. Cook, turning every 5 or so minutes, for about 30 minutes, or until they are charred to perfection and reach an internal temperature of 165F degrees on an instant read thermometer.

3 lb chicken drumsticks (or thighs)
1 c mojo ( bottled marinade)
1 bottle beer
1 Tbsp powdered garlic
salt/pepper ( your taste)
1/4 c olive oil

Steps:

  • 1. put chicken in a large plastic bag, add all the ingredients
  • 2. marinade for 8 hours or over night
  • 3. bake at 325 for 2 hours..(slow & low) turning halfway. This can also be done on the grill...delicious, falls off the bone goodness.

1/2 bottle of your favorite root beer ( 1 cup )
1/2 c light brown sugar, packed
1/2 c ketchup
1 Tbsp bbq.sauce
2 Tbsp pepper jelly
1 tsp spicy mustard

Steps:

  • 1. Combine all ingredients in a saucepan and bring to a boil.
  • 2. Reduce heat simmer until reduced and thickened. Hold over very low heat until needed.
  • 3. This glaze will coat 12 to 24 drumsticks.

4 Chicken Drumsticks
1 cup of your favorite BBQ Sauce
1/2 cup of Honey
12 fl oz of your favorite beer
2 tbsp of Chipotle Powder
1 tbsp of Garlic Powder
1 tbsp of Black Pepper
1 tbsp of Lemon Juice
1 tbsp of Butter
1 tbsp of Salt
Cilantro for garnish

Steps:

  • In a bag, add chicken, chipotle powder, garlic powder, black pepper, lemon juice, salt and beer. Mix thoroughly so evenly coated and place in fridge to marinate for 4 hours.
  • Using charcoal or wood, safely create a fire for direct grilling
  • From your Stanley Base Camp Cook Set, pull out the skillet and spatula. Add skillet to fire and preheat for 2 minutes.
  • Add butter to skillet and let melt. Once melted, take chicken out of bag and add to skillet. Throw away marinade. Let chicken cook for about 20-25 minutes over fire or until internal temperature is 165F.
  • Once done, pull chicken off skillet and add to the Stanley Base Camp Pot. Add BBQ sauce and honey to chicken. Mix until thoroughly coated.
  • Add chicken back to skillet and let caramelize the outside layer for another 2-3 minutes.
  • Pull chicken off skillet, add cilantro if desired, pour a mega pint of beer into the Stanley Cermivac Stein from the Growler and enjoy!

They are not very spicy and have a barely there hint of beer flavor that makes it down to the bone. They are absolutely delicious!

10 Chicken Drumstick
1/4 cup Olive Oil
1 teaspoon Onion Salt
1 teaspoon Paprika
1/2 teaspoon Ground Cumin
1/4 teaspoon Cayenne Pepper

3 clove Garlic
1/2 Lime
1 cup Beer
1 handful Fresh Parsley
to taste Salt

Steps:

  • Rinse and pat dry your Chicken Drumstick (10) and toss them into a ziplock bag.
  • Mix together the Olive Oil (1/4 cup), Onion Salt (1 teaspoon), Paprika (1 teaspoon), Ground Cumin (1/2 teaspoon), Cayenne Pepper (1/4 teaspoon), Salt (to taste), and Ground Black Pepper (1/2 teaspoon) mix together to make a marinade.
  • Grate the Garlic (3 clove) and juice the Lime (1/2).
  • Pour in the Beer (1 cup).
  • Give the marinade mixture a good stir to mix it all together and taste it. Then add some salt according to your taste but don't be skimpy.
  • Lastly toss in Fresh Parsley (1 handful) and mix it in.
  • Pour the marinade into the zip lock bag with the chicken. Seal it and massage the marinade into all the pieces of chicken. Let the chicken marinate for at least a couple of hours in the fridge or overnight.
  • Once the chicken has marinated simply throw them on the grill for 25-30 minutes turning over the pieces & basting it with the marinade every 7 to 8 minutes until the internal temperature is above 170 degrees F (75 degrees C).
  • Serve them up hot and garnished with some fresh parsley and a squeeze of lime.

5 tablespoons maple syrup
2 tablespoons cider vinegar
2 tablespoons Dijon mustard
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh oregano, chopped
2 garlic cloves, crushed using a garlic press
1/2 teaspoon salt
1/4 teaspoon pepper
8 chicken drumsticks, skinless

Steps:

  • In a bowl whisk together the beer, 3 tablespoons of the maple syrup, vinegar, mustard, rosemary, oregano, garlic, 1/4 teaspoon of the salt and the pepper. Transfer mixture to a large baggie or marinating dish - add chicken. Turn to coat and refrigerate for 4 hours or overnight.
  • Spray grill rack with Pam and preheat grill to medium or prepare a medium fire in a charcoal grill.
  • Drain chicken and discard marinade.
  • Place chicken on grill, covered and turning occasionally for 30-40 minutes.
  • 10 minutes before chicken is done, brush the chicken with the remaining maple syrup (2 T), turning frequently until chicken is browned and cooked through.
  • Transfer to a platter and sprinkle with remaining salt (1/4 t).

1 teaspoon honey
2 cloves garlic, minced
