BEER CHEESE DIP
This easy beer cheese dip is great served hot, warm, or even cold with soft pretzels, tortilla chips, or fresh veggies!

Steps:
- Melt butter, flour, onion powder, garlic powder, and cayenne pepper over medium heat in a saucepan. Cook 1 minute.
- Stir in milk and beer a bit at a time, whisking until smooth after each addition. Continue cooking over medium heat, add in mustard and Worcestershire, cooking sauce until thick and bubbly.
- Reduce heat to low, add cheeses, and stir just until melted and smooth.
- Serve warm with vegetables, tortilla chips or soft pretzels.

- Place cheese in a food processor; pulse until finely chopped, about 1 minute. Add Worcestershire sauce, mustard, garlic, salt and pepper. Gradually add beer while continuing to process until mixture is smooth and spreadable, about 1-1/2 minutes., Transfer to a serving bowl or gift jars. Refrigerate, covered, up to 1 week. Serve with crackers or vegetables.

BEER CHEESE DIP
Legend has it that the original beer cheese (a cold spreadable version) was born as a bar snack in Winchester, KY, in the 1930s. A warm version, served as a dip, later made its way into local haunts.

- Bring the lager, mustard powder and Worcestershire sauce to a simmer in a small saucepan over medium heat and cook for 1 to 2 minutes, then reduce the heat to low. Add the cream cheese and cook, whisking, until melted and smooth. Gradually add handfuls of the cheeses, whisking to melt between each addition; do not let the mixture boil. Cook, whisking, until completely smooth, then add the cayenne and garlic powder and season with salt to taste. Serve warm or at room temperature; the sauce will thicken as it cools.

- Grate the cheeses finely.
- Mix the cheeses with the garlic, dry mustard and Worcestershire.
- Gradually beat in the beer until the mixture is well blended and of spreading consistency.
- Store in a covered container in the refrigerator.

- Beat together first 5 ingredients at low speed with a heavy-duty electric stand mixer until blended. Gradually add beer, beating until blended after each addition. Beat at medium-high speed 1 minute or until blended and creamy. Season with salt and pepper to taste. Cover and chill 2 hours. Garnish, if desired. Store in an airtight container in refrigerator up to 2 weeks.
- *Grilled Beer-Cheese Sandwich*: Spread 1 teaspoons softened butter evenly on 1 side of 2 bread slices. Place bread slices, buttered sides down, on wax paper. Spread 1/4 cup Beer-Cheese Spread onto 1 side of 1 bread slice. Top with remaining bread slice, buttered side up. Cook sandwich in a nonstick skillet or griddle over medium heat 3 to 5 minutes on each side or until golden brown and cheese is melted.

- In a food processor, place onion, garlic, mustard, catsup, horseradish, cream cheese, 1/3 of the Cheddar and 1/2 of the beer. Process for 40 seconds. Scrape down sides of bowl.
- Add remaining beer and another 1/3 of the Cheddar. Process another 60 seconds. Scrape down sides again and add remaining cheese. Process another 60 secnds.
- Let "ripen" in the refrigerator in a covered bowl for several hours -- a couple days is better.
- Let stand at room temperature until it reaches spreading consistency.

- Add the cubed cheese to a food processor and pulse on high until smooth. A ball might form and that’s fine.
- Turn the food processor to high. Using the hole in the lid, pour in the beer slowly. You might want to add a bit more beer depending on your desired texture, but for me ½ cup was great.
