- Mix all ingredients except 2/3 c onion rings.
- Pour into buttered casserole and bake at 350 degrees for 30 minutes.
- Top with remaining onion rings and bake 5 minutes more or til onions are golden brown.
- I'm going to try it with low fat cm of mush soup. I'll let you know how it turns out.

My sister-in-law told me about this version of green bean casserole. This is a great recipe made with fresh ingredients!

- For the topping: Pulse bread, butter, salt, and pepper in food processor until mixture resembles coarse crumbs, about 10 one-second pulses. Transfer to large bowl and toss with onions; set aside.
- Adjust oven rack to middle position and heat oven to 425 degrees.
- Fill large bowl with ice water. Bring 4 qts. of water to boil in large Dutch oven. Add two tbls. salt and the green beans. Cook beans until bright green and crisp-tender, about 6 minutes. Drain beans in colander and plunge immediately into ice water to stop cooking. Spread beans on paper towel-lined baking sheet to drain.
- Add butter to now-empty Dutch oven and melt over medium-high heat until foaming subsides. Add mushrooms, garlic, 3/4 teaspoons salt, and 1/8 teaspoons pepper; cook until mushrooms release moisture and liquid evaporates, about 6 minutes. Add flour and cook for 1 minute, stirring constantly. Stir in broth and bring to simmer, stirring constantly. Add cream, reduce heat to medium, and simmer until sauce is thickened and reduced to 3 1/2 cups, about 12 minutes. Season with salt and pepper to taste.
- Add green beans to sauce and stir until evenly coated. Arrange in even layer in 3 quart (or 13 x 9") baking dish. Sprinkle with topping and bake until top is golden brown ans sauce is bubbling around edges, about 15 minutes. Serve immediately.
- To prepare ahead: Store breadcrumb topping in an airtight container in the refrigerator and combine with the onion just before cooking. Combine the beans and cooled sauce in a baking dish, cover with plastic wrap, and refrigerate for up to 24 hours. To serve, remove plastic wrap and heat casserole in a 425 degree oven for 10 minutes, then add the topping and bake as directed. This recipe can be halved and baked in a 2 quart (or 8" square) baking dish. Reduce cooking time of the sauce in Step 3 to about 6 minutes and the baking time in Step 4 to 10 minutes.

This is another holiday staple at my house. I have had it every way known, and it seems to have become an American holiday staple, but I still like it this way best. I think the frozen green beans is the closest to summer as you can get in the middle of winter. Canned just does not cut it.

- Put the frozen green beans in a casserole dish.
- Put the cream of mushroom soup in and mix to combine.
- Add about two tablespoons of water to dish and put the French fried onions on top and press down slightly to compact the mix.
- Bake at 350°F for about 30 to 45 minutes or until the onions are browned.
- If you like your green beans a little crunchy, cut the cooking time, if you like them really soft, then cook them longer.
- Serve hot.

- Place green beans and soup in a large microwave-safe bowl. Mix well and heat in the microwave on HIGH until warm (3 to 5 minutes). Steps:
- Melt margarine over medium heat.
- add onion and sauté until translucent.
- Add mushrooms and sauté until soft.
- Stir in flour. Cook for a few minutes, stirring constantly.
- Add the soy milk or non dairy creamer little by little, letting the flour-mushroom mixture absorb it.
- You should now have what looks similar to a creamy mushroom soup.
- Remove from heat and mix in garlic, salt, pepper, and green beans.
- Place in a greased 8 inch square baking dish.
- Top with French fried onions.
- Bake at 350 uncovered for 30 minutes, watch to make sure the onions on top don't burn.

- Preheat oven to 350 degrees F.
- In a small saucepan, heat the 2 tablespoons of canola oil over medium heat. Sprinkle in the flour and stir constantly to form a paste (you are making a roux, used to thicken the broth).
- Once a paste forms, slowly pour in the mushroom broth while whisking constantly to prevent lumps. Continue cooking until broth is thick.
- Meanwhile, layer green beans, mushrooms, and pearl onions in a casserole dish.
- Pour the thickened sauce over and bake for 25 minutes.
- While casserole is baking, place leeks in a small saucepan and add just enough canola oil to cover. Place the saucepan over low heat and allow leaks to slowly crisp. Cook until the leeks have stopped making noise. Remove from oil and drain on paper towels.
- Remove casserole from the oven, stir it, and top with the crispy leeks. Return it to the oven and bake for another 5 minutes. Serve.

- Heat 1 tbsp of the butter and the oil in a large pan and fry the mushrooms for 10-15 mins until golden. Stir in the green beans and cook for another 3-4 mins until the beans turn bright green. Scoop out the veg onto a plate.
- Heat the oven to 200C/180C fan/gas 6. Melt the remaining butter in the pan until foaming. Remove from the heat briefly and sprinkle over the flour, stirring into the butter to make a golden brown paste. Return to the heat and add the milk, a splash at a time, continually stirring until all the milk has been added and you get a smooth, thick white sauce. Season well. Stir the beans and mushrooms into the white sauce, and spoon into a medium ovenproof dish.
- Scatter over the crispy onions, then bake for 20-30 mins until bubbling and golden, covering if the onions brown too quickly.

My mom used to make this all the time. She would experiment with all types of food and in turn, her creations were wonderful!! Though, I do not know if this is one of her original recipes but it was handwritten in her notebook of recipes that was given to me at the time of her death.

- Combine water, beans and salt. Bring to a quick boil.
- Reduce heat until it has thawed and slightly crisp. **About 4 minutes** Drain them.
- In a 2 quart casserole dish, layer the beans and chestnuts.
- Next, mix the milk and soup into a separate bowl. Add pepper.
- Pour this over the beans and chestnuts. Bake at 350* for 25 minutes.
- Remove from oven and top with the onion rings and bake again until they are a golden brown.
