1 tablespoon olive oil
1 cup chopped sweet onion
2 garlic cloves, minced
1 (15 ounce) can diced tomatoes with green chilies
2 cups vegetable juice, V-8
1 (15 ounce) can red kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 cup frozen corn
1 -2 teaspoon ground cumin
1/4-1/2 teaspoon cayenne pepper
1/2 teaspoon sugar
1/4 teaspoon black pepper
1/4 teaspoon salt
3 ounces light cream cheese, cubed
crushed corn chips
cilantro
shredded cheddar cheese

Steps:

  • In a large pot, heat oil. Saute onion and garlic for about 5-6 minutes or until soft.
  • Add the tomatoes w/ green chilies and vegetable juice. Bring to a boil.
  • Add the beans, corn, cumin, cayenne, sugar, pepper, and salt.
  • Reduce heat, cover and simmer for 20 minutes.
  • Remove from heat and stir in the cream cheese until melted.
  • Serve garnished with crushed corn chips and/or cheese and/or cilantro.

1 (15 ounce) can kidney beans
1 (15 ounce) can black beans
1 (15 ounce) can corn
1 (4 ounce) can diced green chilies
taco seasoning

Steps:

  • Put all ingredients together in a pan and let boil for about 10 minutes.
  • Serve with cheese, sour cream, rice and fritos.

I made this recipe using spices rather than packaged seasoning so that it is gluten friendly, I can control the salt, and so that I can leave out the onion and garlic powder as there are food sensitivities in my family, It is a delicious and hearty soup.

2 1/2 teaspoons paprika
3/4 teaspoon oregano
2 teaspoons cumin
1/4-1/2 teaspoon cayenne pepper (to taste)
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon garlic powder (optional, I leave out)
1/2 teaspoon onion powder (optional, I leave out)
1 teaspoon pepper
1 teaspoon salt
1 (796 ml) can diced tomatoes (I use no salt added)
1 (796 ml) can crushed tomatoes
1 (540 ml) can Mexican-style diced tomatoes
1 (127 ml) can green chilies
2 (341 ml) cans corn
1 (540 ml) can black beans (I use no salt added)
1 (540 ml) can pinto beans
1 (540 ml) can white kidney beans (I use no salt added)
1 (900 ml) carton low sodium beef broth
2 cups sour cream (for serving)
1 (255 g) bag Doritos (Nacho, optional for serving)
1 cup shredded cheddar cheese (for serving)
1 bunch cilantro (optional for serving)

Steps:

  • Brown ground beef in skillet.
  • Place all ingredients in pot on stove mix then simmer for 30 minutes on medium low heat stirring occasionally OR place in crock pot and mix then cook on low for 8 hours.
  • Serve with a dollop of sour cream, crushed up Doritos, shredded cheese, and cilantro in each bowl to taste.

  • Put the onion, garlic and sweet peppers into a handi chopper or food processor and pulse several times to chop it well. Remove from the chopper and add the tomatoes and give them a quick whir.
  • If you are preparing your taco meat from scratch, stir the onion, garlic and sweet peppers into the beef once it has started to brown, then add your taco seasoning according to instructions for your taco seasoning mix.
  • If you are using leftover taco meat, saute the onion and garlic in a teaspoon or so of olive oil until the onion starts to get soft, then add the sweet pepper and continue cooking for a couple minutes longer. Stir in the prepared taco meat and stir until hot.
  • Put the onion/meat mixture into a large saucepan and add the hot pepper, tomatoes, beef broth, bay leaf and other seasonings. Bring to a boil, then reduce heat and simmer for about 15 minutes.
