1 ½ pounds ground beef
1 cup chopped onion
½ cup water
1 (1 ounce) package taco seasoning mix
1 (10 ounce) can refried beans
½ cup salsa
1 (6 ounce) can sliced black olives
1 (4 ounce) can diced green chiles
15 taco shells, broken up, or more to taste
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Cook ground beef and onions in a skillet over medium heat until beef is browned, 7 to 10 minutes; drain grease. Stir in water and taco seasoning; cook, stirring often, until thickened, about 2 minutes. Add refried beans, salsa, olives, and green chiles. Cook and stir over low heat until ingredients are warmed through, 3 to 4 minutes.
  • Place half of the taco shells in the bottom of the baking dish. Pour in half of the ground beef mixture; sprinkle with half of the Cheddar cheese. Repeat with remaining taco shells, ground beef mixture, and Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and bubbly, 20 to 25 minutes.

12 thinly sliced sandwich steaks
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon chili powder
1 (11 ounce) can tomato soup
1 (14 ounce) can chili beans
1/3 cup sliced olive
1/2 cup chopped onion
1 cup grated cheddar cheese
1 bag corn chips

Steps:

  • Preheat the oven to 375° F.
  • Break 12 thinly sliced sandwich steaks into a skillet, cook and toss until browned without overcooking.
  • Season with 1/4 tsp.
  • of salt, pepper and 1/2 tsp.
  • of chili powder.
  • Add one (11 oz.) can of tomato soup and one (14 oz.) can of chili beans.
  • Cook slowly for a few minutes to heat and blend the flavors.
  • Spread a (10-1/2 oz.) package of corn chips in a baking dish, pour the steak mixture over the chips, top with 1/3 cup of sliced ripe olives, 1/2 cup of chopped onions and one cup of grated cheddar cheese.
  • Bake in the oven until the cheese melts, and serve piping hot.
  • I usually use Philly-Gourmet Sandwich Steaks for this because they are convienantly sliced and 100% pure beef.

½ cup chopped onion
½ cup mayonnaise
2 tablespoons chili powder
1 teaspoon ground cumin
2 cups crushed tortilla chips, divided
4 ounces shredded Cheddar cheese, divided
4 ounces shredded Monterey Jack cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.
  • Spread about half the ground beef mixture into the bottom of a 2-quart casserole dish. Spread about half the tortilla chips in a layer atop the beef mixture. 4 cup(s) broken tortilla chips

Steps:

  • Preheat oven to 375 degrees. Lightly grease a 11×7 inch casserole dish.
  • Brown the ground beef in a large skillet over medium heat. About halfway through the browning process add the onions and cook until the beef is browned and the onions are soft. Add the taco seasoning and water and simmer for 8-10 minutes.
  • Layer the tortilla chips in the bottom of a casserole dish. Warm the refried beans in the microwave for 2 minutes at 60% power. Add the sour cream and the hot sauce to the beans. Stir to combine.
  • Smooth the refried beans over the chips using an offset spatula. Spoon on the cooked seasoned ground beef. Sprinkle evenly with the cheddar and the Monterey Jack Cheese.
  • Bake uncovered 15-20 minutes or until the cheese is melted and the casserole is heated through. Top with cilantro, Pico de Gallo, and if desired sour cream.
  • NOTES Use good sturdy chips so they hold up well and don't get soggy. Pro Tip - don't risk dropping the ground beef in the sink to drain the fat. Simply tilt the pan and use a paper towel to absorb the grease. I buy Spice Islands taco seasoning at Costco. It has so much flavor and tastes better than the packets from the grocery store. You can also make this in a 9×13 inch casserole dish. It will just not be as thick. Top the casserole with whatever you like. Some suggestions might include lettuce, tomatoes, black olives, cilantro, or avocado. This casserole can be assembled up to a day in advance. Simply cover tightly with wrap and store in the refrigerator. About 30 minutes prior to baking remove from the refrigerator and let it come to room temperature. Don't forget to remove the wrap prior to baking. Store leftovers in an airtight container in the refrigerator for up to 3 days. Cover tightly with several layers of plastic wrap and freeze for up to 3 months. Do not add the toppings. Reserve those for adding right before serving. Defrost in the refrigerator overnight.

Steps:

  • Set oven to 350 degrees.
