- Layer the potatoes, carrots, onion and celery in a 5-qt. slow cooker. Place flour in a large shallow dish. Add stew meat; turn to coat evenly. In a large skillet, brown meat in oil in batches. Place over vegetables., In a large bowl, combine the tomatoes, broth, mustard, salt, pepper, thyme and, if desired, browning sauce. Pour over beef. Cover and cook on low for 7-8 hours, or until the meat and vegetables are tender. If desired, sprinkle with fresh thyme before serving.

- Toss the beef with the paprika, 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Coat in flour and shake off any excess. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the beef and cook undisturbed until it begins to brown, about 3 minutes. Continue to cook, turning the beef as needed, until mostly browned, about 3 minutes more. Remove the skillet from the heat and transfer the beef to the insert of a 6-quart slow cooker; add the potatoes, mushrooms, carrots and onions and stir to combine.
- Heat the remaining 1 tablespoon of oil in the skillet over medium heat. Add the tomato paste and stir until the oil begins to turn brick-red, about 1 minute. Add the flour and wine and whisk until thick (it's OK if there are some lumps). Add the beef broth, thyme, caraway if using, 1/2 teaspoon salt and a few grinds of pepper and bring to a simmer, whisking; continue simmering and whisking until the gravy is smooth and thick, about 4 minutes.
- Pour the gravy into the slow cooker, cover and cook on low for 8 hours. The meat and vegetables should be tender.
- Season with salt and pepper and stir in the parsley. Serve the stew in bowls with dollops of sour cream and a sprinkle of paprika.

- Place flour in a plastic bag.
- Add meat cubes, a few at a time, shaking to coat.
- In a large saucepan or Dutch oven brown meat, half at a time, in hot oil.
- Drain off fat.
- In the bottom of a 3-1/2- or 4-quart electric crock pot layer onion, potatoes, green beans, corn, carrot, and meat.
- Combine vegetable juice cocktail, bouillon granules, Worcestershire sauce, marjoram, oregano, pepper, and bay leaf.
- Pour over meat and vegetables in crock pot.
- Cover and cook on low-heat setting for 10 to 12 hours or until meat and vegetables are tender.
- Discard bay leaf.

- 1. Combine vegetables in a 4 1/2 quart crock pot. Add bay leaves. Place beef, cornstarch* or flour* and pepper into a resealable plastic bag and toss to coat. Note: the cornstarch makes the beef crispy flour softer.Your choice*
- 2. Brown beef well on all sides in heated oil over medium-high heat in a large cast iron . Place beef on top of the vegetables in the crock pot.
- 3. Add broth, Worcestershire sauce, thyme and garlic to the skillet and combine well with pan drippings.Add wine to the skillet with sauce . Pour mixture over beef and vegetables.
- 4. Cook, covered; on high setting for 4 hours or until the beef reaches internal temperature of 165^ and is fork tender. Discard bay leaves before serving. May cook for 7 to 8 hours on low if desired.

- Layer potatoes, then carrots. Top with meat; sprinkle meat with soy sauce, salt, paprika, pepper and flour. Spread with chopped onions. Combine beef broth and tomato sauce; pour overall.
- Cover and cook on low 7-8 hours or on high 4-5. (I have found that I usually have to put this on high for about 6-7 hours, not sure if it is just my crock pot).
- Notes:.
- Instead of sprinkling the meat with soy sauce, salt, paprika, pepper and flour as the recipe says, I mix those all together in a bowl. This prevents the flour from becoming clumpy.
- Instead of chopped onion I use some of the small white boiling onions. I don't like onions but my husband does; these stay together pretty well and are easy for me to avoid.
- I tend to use baby carrots, I just find them easier to cut and don't have to peel them.
- I also like to add a couple dashes of cayenne pepper, it adds a zing.
- For the beef broth (I don't usually keep that on hand) I dissolve 1 beef bouillon cube into 1 cup boiling water.
- Lisa wrote that she sometimes will add about a 1/4 cup of BBQ sauce on the very top before she puts the cover on. Any variety, she says that adds an extra kick.

I came up with this idea after deciding to make beef stew and then realizing I had no wine or tomatoes in the house. The beef comes out super tender and the broth is very flavorful. It's great with hot crusty bread.

- Chop the leeks, shallots, garlic, carrots, turnips, celery, and potato and place in the bottom of a crock pot.
- Pick the leaves from the rosemary, sage, and thyme, and finely chop. Place in the crockpot.
- Place the beef on top of the veggies and herbs.
- Pour the stock and the beer over everything - it should just about cover.
- Crack the black pepper and sprinkle in the cayenne.
- Place the bay leaves into the crock pot, 1/4 inch under the surface.
- Cook on low for 8-10 hours, or high for 5 hours if you're in a hurry.

This is an excellent recipe for crock-pot beef stew, as adapted from a combination of two other highly-rated stove-top beef stew recipes posted. I made it as an experiment, and my friends and family exclaimed over it for days afterwards!

Steps:
- Heat 2 TBSPs oil in large skillet, season meat with salt and pepper, stir meat in oil until slightly browned.
- Transfer meat into crock-pot and add onions and 2 TBSPs oil to skillet, reduce heat to medium-sauté onions until golden brown, mix with meat.
- Sauté leeks briefly in skillet and add to meat and onions in crock pot.
- Add wine, tomatoes with juices, garlic, herbs, hoisin sauce, water, and bay leaves.
- Simmer for 4-5 hours on low setting, or 2 on high.
- Add carrots and potatoes and beef broth. Cook another 2 hours.
- Add mushrooms. Cook for final hour on low setting.
- Uncover, increase heat, stir until thickened-add cornstarch if necessary. Discard bay leaves.
- Sprinkle with parsley and serve.
