GRILLED CHILI STEAK WITH GARLIC-LIME BUTTER



Grilled Chili Steak with Garlic-Lime Butter image

As we head into grilling season, this is something you should definitely add to the rotation. New York strip steaks are dry-brined with a chili rub, grilled to perfection, and topped with a rich garlic-lime butter providing a flavor profile similar to that of a bowl of chili. Serve with a cold potato salad, baked or barbecued beans, or a green salad if desired.

2 teaspoons chili powder
½ teaspoon ground cumin
½ teaspoon ground chipotle powder
1 teaspoon freshly ground black pepper
3 pinches cayenne pepper
2 (10 ounce) New York strip steaks
1 ½ teaspoons kosher salt
1 clove garlic, sliced
1 pinch salt
2 tablespoons salted butter, softened
1 medium lime, zested
1 teaspoon vegetable oil
grated lime zest for garnish

Steps:

  • Mix chili powder, cumin, chipotle powder, pepper, and cayenne for rub together in a small bowl.
  • Place steaks on a large plate. Sprinkle kosher salt generously on both sides, then sprinkle rub over the salt.
  • Twist 3 pieces of foil into 1/2-inch diameter rolls and place them under the steaks to act as a rack and lift the steaks up from the plate. Pop steaks into the fridge and leave uncovered to dry-brine for 3 to 12 hours.
  • Meanwhile, place garlic and salt for garlic-lime butter in a mortar. Grind to a paste with a pestle. Add butter and lime zest and stir with a small spoon to combine. Set aside.
  • Preheat a charcoal grill for high heat. Remove steaks from the refrigerator and brush with vegetable oil on both sides.
  • Place steaks on the preheated grill and cook until firm and reddish-pink and juicy in the center and meat gently springs back to the touch, about 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C) for medium-rare.
  • Remove from the grill and top with garlic-lime butter.

Steps:

2 cloves garlic, minced
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
A pinch cayenne pepper
1 1/4 pound top sirloin steaks cut 1-inch thick
12 small corn tortillas (5 to 6 inches in diameter)
3 cups shredded red cabbage
1/2 cup chopped cilantro leaves
1 lime, cut into wedges
2 cups Avocado Lime Salsa, recipe follows
1 large cucumber peeled, seeded and cut into chunks (about 2 cups)
2 avocados, cut into chunks
1/2 red onion, diced
2 limes, juiced (about 1/4 cup)
Salt
1/4 cup chopped cilantro leaves
2 jalapeno chiles, chopped, plus more to taste

Steps:

  • In a small bowl stir together chili powder, garlic, cinnamon, salt and cayenne pepper. Rub spice mixture on both sides of steaks.
  • Grill or broil steaks for 5 to 6 minutes on each side for medium rare, turning once. Remove from grill and let meat sit for 10 to 15 minutes. Carve into thin slices.
  • Warm tortillas by placing them on the grill, for about 30 seconds, turning once. Or place 6 tortillas at a time between 2 moist paper towels and microwave for 45 seconds. Wrap in cloth napkin or place in a tortilla warmer to keep warm. Place the carved steak, warm tortillas, cabbage, cilantro, lime and Avocado Lime Salsa in serving dishes and let diners make their own tacos at the table.
  • Place cucumber, avocado and onion in a large bowl and add lime juice and salt. Add cilantro and chiles and toss gently.

2 whole green chiles, such as Hatch or poblano pepper
1 cup minced fresh cilantro
1/2 cup butter, softened
2 garlic cloves, minced
2 teaspoons minced fresh oregano
1 tablespoon lime juice
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
3 pounds beef ribeye steaks
1 tablespoon olive oil
1 teaspoon coarse sea salt
Pickled jalapeno slices, optional

Steps:

  • Cut peppers lengthwise in half. Remove stems and seeds; flatten slightly. Grill chiles, skin side down, until skins blister, about 3 minutes. Immediately place peppers in a small bowl; let stand, covered, 20 minutes., Peel off and discard charred skin. Place grilled peppers, cilantro, butter, garlic, oregano, lime juice, 1/4 teaspoon salt and 1/4 teaspoon pepper in a food processor; pulse until just combined. Refrigerate until firm., Brush steaks with oil and sprinkle with remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Grill, covered, over medium-high heat or broil 4 in. from heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), about 4 minutes on each side. Let stand 5 minutes. Cut into thin slices., Meanwhile, in a small saucepan, melt half the chile butter. Drizzle over steaks. Serve remaining butter with steaks. Sprinkle with coarse sea salt. 3 large garlic cloves (mashed)
1 teaspoon salt
1 teaspoon cumin
2 teaspoons honey (or use white sugar)
4 tablespoons Worcestershire sauce
4 loin strip steaks (about 1-inch thick)

Steps:

  • In a small bowl mash the garlic cloves with 1 teaspoon salt to make a paste, then add in chili powder, cumin, honey and Worcestershire sauce; mix to make a paste.
  • Arrange the steaks on a plate or platter and rub both sides of the steaks with the chili paste.
  • Transfer the steaks to a large resealable plastic bag.
  • Refrigerate for 24 hours (or up to 2 days). Remove the steaks 1 hour and 15 minutes and let sit at room temperature (this is IMPORTANT, the steaks must stay out at room temperature before grilling!).
  • Prepare the grill.
  • Grill the steaks about 5-6 minutes on each side for medium-rare.

1 cup Chimayo chile powder
½ cup olive oil
5 fresh Serrano chiles, stemmed, seeded, chopped
1 Tbsp White Vinegar
½ bunch fresh Cilantro, stemmed, chopped
1 egg yolk juice of 1 lime
½ tsp Kosher salt
¼ tsp fresh Black pepper
2 cups olive oil, (NOT extra virgin)
2 whole bulbs Garlic
5 medium-large Baking Potatoes
½ cup grated Manchego cheese, (Gouda-like)
½ cup minced fresh chives
1 whole egg
salt and pepper
Butter for frying

Steps:

  • To prepare the steaks, pat the chile powder evenly over all sides and place them in a shallow glass dish. Drizzle the olive oil over all. Cover and marinate in the refrigerator for at least 6 hours or up to 36 hours. To prepare the mayonnaise, put all the ingredients, except the olive oil, in a food processor or blender fitted with the the metal blade. Process thoroughly to a mash consisitency. With the motor running, slowly add the olive oil in a thin, steady stream, continuing to process until the mixture thickens and emulsifies. Cover and refrigerate until serving time. To prepare the potatoes first trim and roast the whole garlic cloves (leave the skin on but cut off the tips, place the whole head, cut side up, in a small baking pan. Fill the pan with enough water to go 1/2 way up the sides of the bulbs. Drizzle exposed cloves with olive oil. Cover with foil and bake @ 375degrees for 1 hour.) Place the unpeeled potatoes in a saucepan, add water to cover and bring to a boil. Boil 25-35 minutes; test for doneness by piercing with a fork. Drain the potatoes and let cool until they can be handled. Then grate into a large mixing bowl, skin and all, using the largest holes on a hand-held standing grater. Squeeze the whole roasted garlic cloves from their skins into the grated potato. Add the cheese, egg and chives and mix well. Season to taste with the salt and pepper. Form the mixture into 6 cakes, each about 1-1/2 inches thick (or, as I prefer, 12 cakes, 3/4 inch thick.) Cover and refrigerate at least 30 minutes or for up to 24 hours before frying. Prepare a fire in a charcoal grill. Arrange the steaks on a grill rack over med-hot coals and grill, turning once, until cooked to desired doneness While the steaks are grilling, heat a griddle or large cast iron skillet until med-hot. Lightly brush the surface with butter and add the cakes. Fry, turning once, until nicely browned and heated through, 4-6 minutes on a side.
