BEEF POBLANO BLACK BEAN CHILI
Beef Poblano Black Bean Chili is flavorful with a slight hint of sweetness from the poblanos. Ground beef, Mexican beer, poblanos, jalapeños and beans create a hearty chili that makes a nice winter dinner or addition to game day!

Steps:
- In a large skillet heat the olive oil over medium-high heat. Add the beef and cook for 10 minutes or until the beef is browned, stirring to crumble as it cooks. Remove the beef and drain the fat, set aside in a bowl.
- In a large pot heat the canola oil over medium-high heat. Add the onion, jalapeños, poblanos and garlic and sauté for 10 minutes, or until the onion becomes tender. Add the beer and scrape the pan to remove the browned bits. Cook for 10 minutes, or until half of the liquid evaporates.
- Add the chili powder and cumin and cook for 2 minutes, stirring frequently.
- Stir in the beef, tomato sauce, chicken broth, kidney beans, black beans and fire roasted tomatoes and let simmer for 20 minutes, or until the chili thickens up slightly.
- Ladle 1 1/2 cups into each bowl and top with your favorite garnishes and a side of corn bread.
MEXICAN-STYLE BEEF AND BEAN CHILI

- Preheat the oven broiler.
- Spread the tomatoes, garlic, poblanos, onion, and Serrano chile out on a rimmed baking sheet. Broil, flipping until charred on all sides, about 3 minutes for the garlic and 10 minutes for the rest of the vegetables. Cool slightly and then core the tomatoes, stem the chiles and peel the garlic. Transfer all of the charred vegetables to a blender and pulse into coarse sauce.
- Heat the oil in a large Dutch oven or pot over high heat. Sprinkle the meat with salt and pepper and working in batches, add the beef the oil and cook until browned on all sides, about 3 minutes per batch. Transfer the meat to a large plate as it is browned.
- Add the chili powder, cumin, flour, oregano, chipotle powder and cinnamon to the pan drippings and whisk to make a paste. Stir in the beer and 2 cups water. Return the meat to the Dutch oven along with the collected juices, the tomato-pepper mixture and 2 teaspoons salt. Bring to a boil, reduce the heat to low, cover, and simmer for 30 minutes. Add the beans bring back to a simmer and cook, uncovered, stirring occasionally, until the meat is tender and the sauce is thick, about 1 1/2 hours more. Stir in the cocoa powder and adjust the seasoning with additional salt and pepper. Serve with diced avocado, shredded red cabbage, cilantro leaves, Cotija cheese and lime wedges.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place poblano peppers with cut sides down onto the prepared baking sheet.
- Cook under the preheated broiler until poblano pepper skins have blackened and blistered, 5 to 8 minutes. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 10 minutes.
- Heat a large skillet over medium-high heat. Add beef, chili powder, garlic, cumin, oregano, cayenne pepper, paprika, chipotle pepper, salt, and black pepper. Cook and stir until beef is no longer pink, about 4 minutes. Add onion; cook until slightly softened, about 2 minutes. Add tomatoes with green chiles; cook until onions are translucent, about 5 minutes more. Let beef mixture cool.
- Preheat oven to 350 degrees F (175 degrees C). Spray a casserole dish with cooking spray.
- Run water over the poblano peppers to remove skins and discard them. Drain peppers on paper towels. Place a layer of peppers on the bottom of the prepared dish; place 1/3 of the beef mixture on top. Cover with 1 cup shredded Mexican cheese blend. Repeat layers twice more in the same order.
- Bake, uncovered, in the preheated oven until golden brown on top, about 35 minutes.

- Wash and dry all produce. Trim, then thinly slice scallions, keeping greens and whites separate. Mince garlic. Core and seed poblano, then cut into ½-inch squares. Drain and rinse beans.
- Heat a drizzle of oil in a large pan over medium-high heat. Add turkey, breaking it up into pieces. Cook, tossing occasionally, until browned at the edges and no longer pink, 5-6 minutes. Season with salt and pepper. Remove from pan with a slotted spoon and set aside.
- Remove pan from heat and carefully pour out and discard any excess grease left by turkey. Return to medium-high heat and add scallion whites, poblano, and garlic. Cook, tossing, until lightly browned and softened, 5-6 minutes.
- Add chili powder to pan and toss to coat veggies. Cook until fragrant, about 30 seconds. Season with salt and pepper.
- Add stock concentrate, beans, tomatoes, beef, and 1 cup water to pan and stir to combine. Bring to a boil, then lower heat and let simmer until thick and stew-like, about 10 minutes. Let it simmer longer for a stronger flavor. Season with salt and pepper.
- Divide chili between bowls. Sprinkle with cheddar and scallion greens. Dollop with sour cream and serve.

- Transfer cooked and crumbled beef to a bowl, and return pan to heat. Add onion and poblano peppers to pan and saute, stirring occasionally, about 5 minutes, until soft. Add garlic and cook another 30 seconds or so.
- Transfer cooked beef back into pan, add seasonings (chili powder, ancho Chile powder, cumin and salt), stirring to combine. Cook about 30 seconds.
