2 cups cooked and small-diced carrots
1 cup cooked and small-diced onion

TRADITIONAL ENGLISH BEEF & POTATO PICNIC PIES - PASTIES

Traditional English Beef & Potato Picnic Pies - Pasties image

Delicious little "hand pies" which are ideal for picnics as well as for brunch, lunch & light snacks. These are very easy to make & can be made ahead & frozen for up to 3 months. I made these using individual 5" disposable aluminium pie tins; however, the ingredients listed would also make a large double-crusted plate pie. Serve them warm or cold with pickles, relishes, chutneys & assorted salads. Also wonderful with hot gravy! The individual 5" pies that have been made here are quite generous, so if you wish, make them smaller than that - maybe in a muffin tin!

Time 2h

Yield 6 individual pies, 6 serving(s)

Number Of Ingredients 19

1 lb white potato, peeled, diced & boiled
2 -3 tablespoons milk
2 ounces butter
salt & pepper
1 lb minced beef
1 tablespoon olive oil
2 white onions, peeled & diced finely
1 -2 garlic clove, peeled & crushed- (optional)
15 ounces canned tomatoes
1 tablespoon soy sauce
1/2 pint beef stock, made with a stock cube
1 teaspoon mixed herbs
1 tablespoon tomato puree (optional)
black pepper
2 (9 ounce) packets puff pastry
flour
butter, for greasing
1 eggs, beaten well or 1 milk
sea salt

Steps:

  • First peel and cut your potatoes into even size chunks & then boil for about 15-20 minutes or until very tender, but not too mushy.
  • Drain the potatoes and add the milk, butter, salt & pepper to taste.
  • Mash very well with a potato masher or using a hand-held mixer.
  • Mash/mix until there are no lumps left.
  • The mashed potato should be smooth but fairly firm and not too soft.
  • Heat up the oil in a large roomy pan and add the diced onions. Add the garlic if using with the onions.
  • Cook the onions for about 15-20 minutes, until soft and golden.
  • Remove the onions and set to one side in a large mixing bowl.
  • Add the minced beef, adding a bit more oil if necessary. Stir the minced beef all the time to break down any lumps. Cook for about 15 - 20 minutes until cooked & brown all the way through.
  • Add the tinned tomatoes, soy sauce, herbs, tomato puree if using and a good twist of freshly ground black pepper. Mix together thoroughly.
  • Continue to simmer and add the beef stock - stirring all the time for a further 5 minutes.
  • Take off the heat and add the beef mixture to the onions.
  • Mix them together thoroughly & then add the mashed potatoes - mix again well.
  • Allow to cool slightly.
  • Pre-heat the oven to 220C, 425F or gas mark 7.
  • Grease 6 x 5" pie tins OR 1 x 9" ovenproof pie plate.
  • Sprinkle some flour onto a board and roll out the ready-made puff pastry.
  • Taking a saucer or a large cookie cutter, cut out six x bottoms for the pie tins, just slightly larger than the tins. (Invert the pie plate & cut around it for a plate pie.).
  • Put the pastry bottoms into the buttered tins (or on to the buttered plate) and fill generously with the beef and potato pie filling.
  • Cut out the lid/s and moisten the edges of the bottom pastry case with water; then place the lid/s on top - making sure they reach right up to the edge.
  • Crimp the edges of the pastry with a fork or your fingers to make a seal.
  • Cut two slits on top of the pies with a knife or scissors.
  • Glaze with the beaten egg (or milk) and sprinkle some sea salt.
  • Bake in the pre-heated oven for 25- 30 minutes until puffed up and golden brown.
  • Serve warm or cold with pickles, chutneys and assorted salads.
  • Ideal for picnics, snacks, light lunches & brunch.
  • Freezer:.
  • To freeze them, pack them with greaseproof paper between each pie in a freezer container. Defrost for at least 6 hours. Can be frozen before the final baking or after being baked. To cook when unbaked, defrost them & then follow the directions above.

BEEF AND POTATO PASTIES

Beef and Potato Pasties image

The Cornish pasty, a meat-filled hand pie (rhymes with "nasty," not "hasty"), was brought to northern Michigan by English immigrants, who ate it for lunch as they worked in the mines. For good reason-it's portable, fortifying food with straightforward flavor. A pasty-eating tradition remains in the region; they're nowadays typically served with butter and ketchup.

Provided by Sam Worley

Categories     Pastry     Beef     Potato     Michigan     Bake

Yield Makes 4

Number Of Ingredients 9

2 1/2 cups all-purpose flour, plus more for surface
2 teaspoons kosher salt, divided, plus more
10 1/2 tablespoons unsalted butter, divided, plus more for serving
3/4 pound boneless chuck steak, cut into 1/2" cubes
1 medium russet potato, peeled, cut into 1/2" cubes (about 1 1/2 cups)
1/2 medium onion, finely chopped (about 1 cup)
3/4 teaspoon freshly ground black pepper
1 large egg
Ketchup (for serving; optional)

Steps:

  • Mix 2 1/2 cups flour and 1 tsp. salt in a large bowl. Cut 10 Tbsp. butter into cubes (it doesn't have to be particularly cold, just firm enough to cut into pieces). Work butter into flour with your fingertips until mixture resembles breadcrumbs. Pour 3/4 cup boiling water over and mix with a wooden spoon. Knead with your hands until dough just starts to form.
  • Turn out onto a clean work surface and knead until dough forms, about 20 seconds; roll into a ball. Divide into 4 portions, shape into rounds, and chill until ready to use.
  • Preheat oven to 375°F. Mix beef, potato, onion, pepper, and 1 tsp. salt in a large bowl.
  • Roll out each round to a 9"-diameter circle on a lightly floured work surface. Arrange a heaping 3/4 cup filling over 1 half of each circle, leaving a 1" border between filling and edge of circle. Cut remaining 1/2 Tbsp. butter into 4 pieces; place on each mound of filling. Pull bottom half of dough over filling; crimp with your fingers to seal. (Alternately, use a fork to seal.)
  • Beat egg and a pinch of salt in a small bowl. Using a pastry brush, brush each pasty with egg wash. Cut a couple small slits in top of pasty. Transfer to a parchment-lined rimmed baking sheet and bake until golden brown and bubbling, 45-60 minutes. Serve with butter and ketchup, if desired.

MINNESOTA PASTIES

Minnesota Pasties image

When I was growing up, I worked in a bakery in my hometown that made these wonderful pocket meat pies. You can also make this veggie style by taking out the meat portion and adding broccoli, cauliflower and a cream cheese blend instead. This recipe makes Jumbo size pasties (one will feed two people). I make them smaller and...

Provided by Barbara Kavorkian

Categories     Other Main Dishes

Time 1h20m

Number Of Ingredients 15

CRUST
1 stick butter, cubed
1/2 c shortening (crisco)
1 c boiling water
1 tsp salt
3 1/2-4 c flour
FILLING
1 1/2 lb meat mixture (70% ground beef, 30% ground pork)
4 c diced onions (about 2 large)
1 c medium carrots, diced (about 2 )
3/4 can(s) rutabega, diced and peeled (about 1/4 of a small to small medium rutabega)
4 c diced potatoes (about 4-5)
2 tsp salt
1 tsp pepper
sprinkle of garlic salt

Steps:

  • 1. Crust: Melt butter and crisco in microwave. Stir in rest of ingredients. Do Not over mix. Let cool. Filling: In a very large bowl, add ground beef and pork together, squishing together with a clean hand to combine. Roughly break apart into smaller pieces (dime or nickle size) but not tiny. Add in veggies and mix ingredients well. Roll dough into 10 inch circles (for large ones). Add 1 cup filling on one side of circle. (this is for Jumbo, a smaller size is easier to work with using 1/2 cup filling and roughly 5 in round pieces of dough). Wet(with water) edges around side with filling. Add 1/2 tsp butter on top of filling. Fold dough over the side with the filling. Press and seal edges tightly. Trim edges and make a 1 in slit on top of pasty. Brush top with milk. Repeat until all ingredients are gone. (may need an extra batch of dough) Bake for 1 hr at 400° F. Let cool slightly before serving, or let cool completely before storing. Serve with your own brown or mushroom gravy mix or a brown gravy dry mix prepared according to instructions.
  • 2. Note: If you have a tool to make pocket pies, it may be easier to fill and press the dough. These ARE foodsaver friendly. To do this without losing its shape, freeze cooled pie in freezer first on a pan or plate. Once hardened, you can place them in the food bags. I do a few single ones, and some with two in them so I do not have to keep unthawing these. To reheat. Remove from foodsaver bag while frozen and place in container, or plate and let thaw in fridge or counter top. Reheat in microwave if you wish, but it is best to reheat at 400° for 20 minutes or so until heated through.

BEEF & POTATO HAND PIES (CORNISH PASTIES)

Beef & Potato Hand Pies (Cornish Pasties) image

Simple beef and potato hand pies (aka: classic Cornish Pasties) made with leftover roast and healthier store bought pie crust!

Provided by Dena Norton

Categories     lunch

Time 40m

Number Of Ingredients 6

3 cups each: cooked beef roast meat and potatoes
1/2 cup juices from cooked roast (stirred into meat and potato mixture)
Optional: cooked onions (carrots, English peas, or other veggies from your roast)
Dough for 2 pie crusts (if you're short on time, Trader Joe's has a frozen pie crust made with clean ingredients!)
1 egg (beaten)
sea salt and pepper

Steps:

  • Preheat oven to 400 degrees and line two baking sheets with parchment.
  • Roll out pie crusts and use a 8-9" tart pan or other pan, inverted, to cut the dough into 4 large circles. You may have to reform and roll the dough between cuttings to get all four circles. Lay 2 dough circles on each parchment lined baking sheet.
  • Pile about 1 1/2 cups of the meat and potato mixture (with juices) onto one half of each dough circle. Spread evenly over that half of the dough circle, leaving about 1/2" rim around the edge for crimping. Sprinkle some sea salt and pepper over the meat and potato mixture.
  • Use a pastry brush to brush the 1/2" rim of pastry with some of the beaten egg - this will serve as "glue" to seal the pastry edges.
  • Gently fold the "blank" side of each dough circle over the meat and potato filling side, matching the edges of the pastry to create a half-circle shaped hand pie. Use your finger to press and seal the edges of the pastry together, fluting them for decoration if desired.
  • Once each hand pie is formed, use a very sharp knife to lightly score the top of each pie.
  • Use a pastry brush to cover the surface of each hand pie with beaten egg.
  • Bake for 25-30 minutes or until crusts are golden and firm to the touch.

EASY BEEF PASTIES

Easy Beef Pasties image

These easy beef pasties (beef hand pies) are made with a buttery, flaky buttermilk pie crust wrapped around a savory mixture of beef, carrots, potatoes, and onions in a quick homemade gravy.

Provided by Tracy

Categories     Dinner

Time 1h30m

Number Of Ingredients 19

1 cup (8oz, 2 stick cold unsalted butter (cut into 1/2-inch chunks)
2 1/2 cups (300g) all-purpose flour
1 tablespoon granulated sugar
1 teaspoon salt
1/2 to 2/3 cup buttermilk
1 tablespoon unsalted butter
12 ounces beef chuck (stew meat) (diced 1/2-inch)
1 1/2 cups diced potatoes (1/2-inch dice)
3/4 cup diced carrots (1/4-inch dice)
Water
1 1/2 teaspoon salt*
1/2 teaspoon crushed rosemary
1/4 teaspoon pepper
1/4 teaspoon oregano
3 tablespoons unsalted butter
1/2 cup finely diced onion
2 tablespoons all-purpose flour
1 egg
1 tablespoon milk

Steps:

  • Before you begin measuring everything out, place the cubed butter in the freezer to chill.
  • Stir together flour, sugar, and salt, and pour into the food processor. Add butter and pulse until butter is cut into the flour, but still has visible chunks.
  • While pulsing, slowly pour in 1/2 cup of the buttermilk and continue to pulse until the buttermilk is incorporated into the dough. At this point, your dough should look like rough crumbs and hold their shape if squeezed together. If dough does not hold its shape, drizzle in a little more buttermilk, up to 2½ additional tablespoons, until it does. The dough will look a little scary at this point, but don't worry. It's supposed to look like that!
  • Lay a sheet of plastic wrap on the counter and dump half of your dough crumbs onto the sheet. Gather the edges of the plastic wrap and press tightly together to form a 1-inch thick disk. Do the same with the rest of the dough. Place in a plastic bag and refrigerate for at least an hour, up to 24.
  • Preheat oven to 400°F.
  • In a medium saucepan, melt butter over medium-high heat (watch closely, you don't want to burn the butter) and add the meat. Cook until well browned.
  • Add potatoes and carrots and cover with just enough water that the meat and vegetables are submerged. Add salt, rosemary, pepper, and oregano.
  • Bring to a boil, turn down to medium and simmer for five minutes. Meat should be cooked through and potatoes should be softened, but still have a bit of a bite to them.
  • Remove from heat and drain the cooking liquid into a separate container for later use. Set liquid and meat and veggies aside.
  • In a medium saucepan, melt remaining 3 tablespoons of butter over medium heat. Add onions and cook until they begin to soften, about 2 to 3 minutes. Add flour and whisk continuously for 1 minute until a sticky paste forms and flour turns golden. Whisk in 1 cup of the reserved cooking liquid from your meat and potatoes (discard the rest). Simmer for 2 to 4 minutes, whisking continuously, until a thick gravy forms. Remove from heat and stir in the meat and vegetable mixture, making sure everything is well coated.
  • Whisk together egg and milk in a small bowl to make your egg wash.
  • On a well-floured surface, divide your dough into 4 to 6 equal-size pieces and roll into balls. If you are slow at rolling out pastry dough, place all the balls, but one, back in the fridge and work with one at a time so the dough stays chilled and easy to work with.
  • Re-flour your work surface and roll first ball out to 3/8 inch thick with a floured rolling pin, forming as round of a circle as you can manage (trim edges with a knife to make a perfect circle if necessary). Pick up your dough to make sure it is not stuck to your work surface. If it is, use a metal spatula to dislodge it before filling.
  • Brush egg wash around the edges of your pie crust to help seal it and spoon beef mixture over slightly less than half of the dough, leaving a 1/2-inch border. Fold dough over the filling and use a fork to crimp the edges closed. Cut 3 slashes in the top and transfer to baking pan.
  • Repeat with remaining dough balls. You may have a bit of meat mixture left over, depending on how thin you rolled out your dough. You can eat it with a spoon.
  • Brush pasties with egg wash and and bake for 15 to 20 minutes, until they are beautiful and golden.
  • Allow to cool slightly and enjoy.

MICHIGAN PASTY (MEAT HAND PIE)

Michigan Pasty (Meat Hand Pie) image

W

Provided by @MakeItYours

Number Of Ingredients 13

3 cups all-purpose flour, plus extra for rolling dough
1 cup shortening or lard
Kosher salt
1 cup ice cold water
8 ounces ground beef
4 ounces rutabaga, cut into 1/4-inch dice
1 medium carrot, cut into 1/4-inch dice
1 small yellow onion, finely chopped
1 small russet potato, peeled and cut into 1/4-inch dice
1/4 cup picked fresh parsley leaves, chopped
Freshly ground black pepper
1 egg, whisked
Ketchup, for serving

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Add the flour, shortening and a pinch of salt to a food processor and run the motor until the dough starts to clump together. With the motor running, drizzle in the water. Stop the motor when a ball begins to form. Wrap the dough in plastic and refrigerate for about 1 hour. This step allows the glutens to relax and makes for easier rolling. Mix together the beef, rutabaga, carrots, onions, potatoes and parsley. Sprinkle with salt and pepper. Set aside until ready to form the pies. Cut the dough into 6 even pieces, about 5 ounces each, and form into balls. Make sure the dough is cold for easier handling. Flour a work surface and roll out each ball of dough into an 8-inch circle. Evenly divide the filling (about 3/4 cup per pastie) on one half of each dough circle. Fold the dough over to cover the mixture and crimp the edges using a fork. Slice 3 small slits on top of each pocket. This prevents steam from building up and splitting the dough. Brush the pasties with the egg and bake on the prepared baking sheet until the crust is golden brown and flaky, about 1 hour 15 minutes. Serve with ketchup. Cook's Note: Pasties can be baked and then frozen. To reheat, place in a 300 degree F oven until warmed through, about 20 minutes.

  • Make the dough: Sift together the all-purpose and cake flours, cornstarch, baking powder, and salt in a large bowl. Transfer to the bowl of a food processor fitted with a metal blade. Add the cold shortening and margarine and process until the mixture resembles pebbles. Add the soy milk, 1 tablespoon at a time, pulsing between additions, and adding just enough to hold the dough together. Once the dough begins to form a ball in the processor, flour a work surface lightly, place the dough on it and shape into a flat, round disk. Wrap in plastic and let rest in refrigerator for 1 hour or overnight. While the dough is chilling, make the filling: Heat the oil in a 12-inch skillet set over medium-high heat until it shimmers. Pat the beef cubes dry with paper towels and season with the salt and pepper. Place the beef into the skillet and cook, stirring, until browned. Transfer the beef to a platter and set aside, reserving the skillet. Add more oil to the skillet if necessary. Add the shallot
  • Divide the dough into 10 pieces. Roll each piece between your palms to form a ball slightly smaller than a tennis ball. Place 1 ball on the work surface and begin to roll it into a circle about 5 to 6 inches in diameter. If the dough rips, gently dab a little water over the surface, sprinkle with a bit of flour and continue to roll until the dough is about ¼ to ⅓ inch thick. Spoon about 3½ to 4 tablespoons of the filling on one side of the dough circle, leaving about ½ inch of dough uncovered around the edge. Fold the dough over the filling, into a half-moon shape, and press the edges down gently to seal. Pierce the top of the pasty 2 or 3 times with a sharp knife and transfer to the prepared baking sheet. Repeat with the remaining dough and filling to make 10 pasties. Brush the filled pasties with the egg wash. Place the baking sheets in the oven and bake for 10 minutes, turning the baking sheet 180° halfway through the baking time. Reduce the oven temperature to 350°F, and continue t
  • The process of adding a liquid such as wine, brandy, or stock to the bottom of the pan after browning meat or vegetables in it is called deglazing. By doing this, you are rescuing all the caramelized sugars from the meat and shallot that have collected on the bottom of the pan and integrating them into your sauce or stew. Just be a bit careful if the liquid has a high alcohol content (I am sure you like having eyebrows). You can simply tilt the pan away from you or take a step back for a moment.

  • Chop the steak, potato, yellow onion, turnip, and carrots into small uniform cubes. Toss them all into a large bowl, sprinkle with salt, pepper, rosemary, and garlic and toss to combine. Pour the wine over all and toss a final time to mix. Set aside.
  • Roll your pie crust out between two pieces of parchment paper into a rectangle that's about 1/8-1/4 inch thick. Remove the top layer of parchment paper. Use a 7-8 inch round pot lid to cut circles out of the rectangle. Spoon about 1/2 cup of the steak filling in the center of each circle. Fold the circle in half and pinch together the edge to seal. Flute the edges or crimp with a fork. Gather any scraps of pie crust up into a ball then reroll and repeat until there's no pie crust left. You should be able to get 6-8 circles out of 2 pie crusts depending on the size of your pot lid.
  • Carefully place pasties on a parchment lined baking sheet. Whisk together water and egg and brush mixture evenly over the pie crust. If the seal doesn't seem secure, use the egg wash to pinch any loose parts closed. (Note: at this point, you can slide the tray into the freezer, freeze the pasties until firm, then remove from the tray, wrap in plastic wrap, place in a freezer safe ziplock bag and freeze until ready to bake). Otherwise, bake in the preheated oven for 30-35 minutes or until golden brown.
