- In a Dutch oven, cook beef over medium heat until no longer pink; drain. Return to pan; add the beans, cheese, enchilada sauce, water, onion and seasonings. Bring to a boil. Reduce heat; cover and simmer for 10 minutes., Spoon 1/2 cup filling off center on each tortilla. Fold sides and end over filling and roll up., Freeze option: Wrap individually in paper towels, then foil. Transfer to a resealable plastic bag. May be frozen for up to 2 months. To use, unwrap foil. Place paper towel-wrapped burritos on a microwave-safe plate. Microwave on high until heated through, 3-4 minutes. Serve with toppings of your choice.

BRISKET 'N' BEAN BURRITOS

- Place brisket in a 5-qt. slow cooker; top with onion and bacon. Combine tomato sauce, pepper and salt; pour over meat. Cook, covered, on low until meat is tender, 4-1/2 to 5 hours. , In a microwave-safe bowl, combine refried beans, salsa and chilies. Microwave, covered, on high until heated through, 2-3 minutes., Remove meat from slow cooker; when cool enough to handle, shred with 2 forks. Layer bean mixture, meat and cheese off-center on each tortilla. Fold bottom and sides of tortilla over filling and roll up. Serve immediately., Freeze option: Individually wrap burritos in foil and freeze in freezer container. To use, partially thaw overnight in refrigerator. Preheat oven to 350°. Bake foil-wrapped burritos on a baking sheet until heated through. To reheat one burrito, remove foil and rewrap in damp paper towel; microwave on high until heated through, turning once. Let stand 15 seconds. May be frozen up to 2 months.

QUICK 'N' EASY BEEF & BEAN BURRITOS
These are a weeknight favorite of our family's and they are made from ingredients I always have on hand! I can have dinner on the table in 40 minutes from start to finish and everyone always cleans their plates!

- Preheat oven to 350 degrees.
- Heat a tablespoon or so of Olive Oil in skillet and add garlic and onion. Saute for a minute or two.
- Add ground beef and cook until browned; Drain.
- Stir in seasonings and tomato sauce over medium heat; Add refried beans and mix thoroughly.
- Generously spoon beef and bean mixture into floured tortillas, sprinkle with cheese, roll up and place seam side down in a lightly greased 8" x 8" square casserole dish.
- Spread any remaining filling on top and bake in oven for 20-25 minutes, or until heated through.
- Sprinkle remaining cheese on top a few minutes prior to removing from oven or immediately after removing from oven.
- Serve with sour cream, guacamole, hot sauce, etc.
BEEF 'N BEAN BURRITO STACK (CROCK POT, SLOW COOKER)

- First, make foil "handles." Fold a 30-inch long piece of foil in half lengthwise. Place in bottom of a slow cooker with both ends hanging over top edge of cooker.The foil strip will make it much easier to remove the burrito stack when done.
- Lightly grease crockpot. In saucepan, combine the first six ingredients; simmer for 20 minutes over low heat. In a large skillet over medium heat, brown ground beef with onion, bell pepper, and minced jalapeno or mild peppers. Drain off fat. Stir about 1/3 of sauce mix into the browned beef mixture.
- Spoon a small amount of sauce into bottom of the slow cooker.
- Spread a small amount of refried beans over one of the flour tortillas. Place the tortilla on top of sauce in Crock Pot, tearing to fit if necessary. Spoon meat mixture over tortilla and then top with a small amount of the shredded cheese. Continue layering until tortillas are used or within an inch of top of crockpot. Cover and cook on LOW 6 to 8 hours or on HIGH for 3-4 hours. Lift burritos out by the foil handles and place on serving plate. Cut in wedges; garnish with chopped tomato, shredded lettuce, sour cream, sliced ripe olives, or your own favorite combination. Serves 4 to 6.

- 1. Preheat oven to 375 degrees.
- 2. In a large skillet over medium-high heat, cook ground beef until brown, drain and rinse.
- 3. Return meat to skillet, reduce heat to medium and add tomatoes, 1/2 cup reserved tomato juice, chili powder, garlic, cumin, refried beans, green chilies, black olives, and 1/2 cup cheese.
- 4. Cook for about 10 minutes, blending well.
- 5. Fill each tortilla with about 1/3 cup mixture, roll up, and place in greased baking dish(es), seam side down.
- 6. Pour any extra beef mixture around sides of tortillas.
- 7. Sprinkle with the rest of the cheese.
- 8. Bake for 20 minutes, or until the cheese is bubbly.
- 9. Serve with garnishes desired.

This is a delicious but simple recipe that's bursting with flavor! Also good for a quick meal and can easily be doubled for larger batches. I can honestly say that when we have these, there are never any leftovers.

- Saute onion & garlic in skillet on medium heat. Add steak & cook until brown. (Do not drain, those juices add lots of flavor later!).
- Drain tomatoes & kidney beans, add to skillet and cook for 5-10 minutes.
- Sprinkle cilantro all over & mix well. Cook for a few more minutes until heated throughout.
- Warm up flour tortillas, sprinkle cheese inside, & spoon desired amount into tortilla. Enjoy!

- Saute onion in oil until tender.
- Add beef and garlic and cook until beef is no longer pink.
- Drain.
- Add chili powder, cumin & other seasonings.
- Stir in tomato sauce and simmer 5 minutes.
- Add refried beans and cook and stir until well blended.
- Set aside to cool completely.
- Divide meat mixture into 12 portions.
- Soften tortillas, according to package instructions, and place a portion of meat on each.
- Roll up, burrito style.
- These may be frozen as follows.
- Place seam side down on a cookie sheet and freeze until frozen.
- Wrap each individually and return to freezer.
