This is a tasty and complete meal. My family is wild over this recipe and I'm always asked to bring it to pot luck parties.

2 cups elbow macaroni
1 pound ground beef
1 (10.25 ounce) can condensed tomato soup
1 (11.5 ounce) can tomato juice
1 (10 ounce) can whole kernel corn, drained
1 ½ cups shredded mozzarella cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a skillet over medium heat, brown the ground beef until no pink shows; drain excess fat. In the large pot, combine macaroni, beef, tomato soup, tomato juice and corn; heat through. Stir in cheese.

3 tablespoons butter (for Mac and Cheese)

1/2 cup milk (in addition to milk for mac and cheese)

Steps:

  • Preheat oven to 350°F.
  • Prepare mac and cheese according to directions on box.
  • Brown beef and onion with salt and pepper to taste.
  • Mix Macaroni and Cheese with Beef and add milk and cream of mushroom soup in buttered casserole dish.
  • Bake uncovered for 25 minutes.

1 medium onion, chopped
2 cloves garlic, chopped
1 medium red pepper, diced

4 cups low fat low sodium beef broth (stock)

1/2 teaspoon dried thyme
1/2 teaspoon dried sage

Steps:

  • Using a large deep saute pan heat oil and saute onion,garlic& red pepper for about 2 minutes.
  • Crumble in the ground beef and cook about 10 minutes or until cooked thoroughly.
  • Heat the beef broth on the stove or in the microwave.
  • Add hot broth,macaroni,tomatoes,& seasonings to the ground beef mixture.
  • Simmer about 10 minutes or until it has reduced and macaroni is cooked.
  • Mix in sour cream& cheese and cook over low heat another 5 minutes continuing to stir until creamy.
  • Mix in parsley& serve.

Steps:

  • Heat the oven to 350 degrees F.
  • Cook the macaroni according to package directions; drain and set aside. Heat the oil in a skillet; add the peppers, onion, and garlic, and saute until soft. Add the ground beef and saute until browned. Add the tomatoes, salt and pepper, to taste, and the basil, cumin, and oregano. In a large bowl, combine the macaroni and the beef mixture. 3 tablespoons unsalted butter
1 small onion, chopped
1 tablespoon tomato paste
1 tablespoon chili powder
8 ounces ground beef
2 tablespoons all-purpose flour
1 cup low-fat (1 percent) milk
2 1/2 cups shredded Mexican cheese blend (about 8 ounces)
2 tablespoons breadcrumbs (preferably panko)
2 scallions, thinly sliced

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 3/4 cup of the cooking water, then drain the pasta. Meanwhile, melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add the onion and cook, stirring, until soft, about 5 minutes. Add the tomato paste and chili powder and stir until brick red, about 2 minutes. Add the beef and cook, stirring, until browned, 4 minutes. Stir in 1/2 teaspoon salt. Spread the mixture in a 3-quart flameproof baking dish. Preheat the broiler. Melt the remaining 2 tablespoons butter in a pot over medium heat. Add the flour and cook, stirring, 1 minute. 1 whole egg
1/2 stick (4 tablespoons) butter
1/4 cup all-purpose flour
2 1/2 cups whole milk
2 heaping teaspoons dry mustard (more if desired)
1 pound sharp Cheddar, grated (not pre-grated cheese), plus more for baking
Salt
Seasoned salt
1/2 teaspoon ground black pepper
Optional spices: cayenne pepper, paprika, thyme
1 pound thick-cut peppered bacon
3 yellow onions, halved and sliced
3 tablespoons butter
8 ounces gorgonzola
Cooked sliders and/or macaroni and cheese, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the macaroni until still slightly firm. Drain and set aside.
  • In a small bowl, beat the egg. In a large pot, melt the butter and sprinkle in the flour. Whisk together over medium-low heat. Cook for a couple of minutes, whisking constantly. Don't let it burn. Pour in the milk, add the mustard and whisk until smooth. Cook until very thick, about 5 minutes. Reduce the heat to low.
  • Take 1/4 cup of the sauce and slowly pour it into the beaten egg, whisking constantly to avoid cooking the eggs. Whisk together until smooth. Pour the egg into the sauce, whisking constantly. Stir until smooth. Add in the cheese and stir to melt. Add 1/2 teaspoon salt, 1/2 teaspoon seasoned salt and the pepper. Add any additional spices if desired. Taste the sauce and add more salt and seasoned salt as needed! DO NOT UNDERSALT.
  • Pour in the drained, cooked macaroni and stir to combine. Serve immediately (while it's still very creamy) or pour into a buttered baking dish, top with extra cheese and bake until bubbly and golden on top, 20 to 25 minutes.
  • Fry the bacon in a skillet over medium-high heat until slightly crisp, about 8 minutes. Remove from the pan and cut into bite-size pieces.
  • In a separate pan, cook the onions in the butter over a low heat until caramelized, 20 to 30 minutes, stirring occasionally.
  • Use a fork to crumble the gorgonzola.
  • Put the bacon, caramelized onions and crumbled gorgonzola into separate bowls. Serve as delicious toppings for both sliders and macaroni cheese.

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta is cooked through but still slightly firm, about 8 minutes. Drain well.
  • Melt 1/4 cup butter in a large saucepan over medium heat. 1 large onion, diced
1 tablespoon canola oil
salt to taste
2 pounds lean ground beef
1 box macaroni
1 cup each grated cheddar and mozzarella cheeses
one 28-ounce can whole tomatoes, pureed in the can with a hand blender or in a blender blender
optional seasonings: black pepper, oregano, cumin, coriander, chopped garlic, hot smoked paprika, chilli powder-whatever you're in the mood for (i just used black pepper, garlic and a tablespoon of fish sauce, which gives it depth)

Steps:

  • 1. Sweat the onions in the oil with a three-fingered pinch of salt. Add the beef and cook it, breaking it up as you do. (Because my beef was very fatty, I cooked it separately and added it to the pot along with the tomatoes. Also an option, but uses an extra pan.) Add another three-fingered pinch of salt or two, along with any dry seasonings you want. Add the tomatoes and any fresh seasonings you may be using, bring to a simmer, then reduce the heat to low and cook for an hour.
  • 2. Cook the macaroni in boiling water till it's half done. Drain it and add it to the tomatoes. (I wanted this to stretch into two meals, so I used the whole box, but if you want your dish to be very tomatoey and beefy, you might want to add only half the macaroni). Stir it into the sauce. Taste it. Add more salt and other seasonings as needed, and cover. When it's cooled and the pasta has absorbed the tomato juices, transfer it to a large baking dish and cover it with foil. It can sit out for several hours like this, be refrigerated for up to two days, or frozen a few weeks.
  • 3. Bake it in a 400 degree oven till it's piping hot (about 45 minutes if it's cold to room temperature). Just before you're ready to eat, remove the foil, cover macaroni with the cheese and broil till it looks beautiful. Having used all the pasta, I put the second batch into the cleaned baking dish and covered it with foil, wrote "Mac and Beef, bake, cover with cheese and broil" on the foil with a sharpie-so that next time I'm gone, Donna has a mid-week meal ready to go. Now that we have this frozen version, it begs the question, "What is the difference between pulling this homemade version and baking it, and cooking the ubiquitous store-bought kind?" Besides the fact that it's more satisfying to serve from glass than from foil or plastic? Besides the good ingredients and lack of bad ones? Besides all that extra, gooey, delicious melted cheese? Besides that it was fun to make? Besides that it tastes better?
