BEEF IN BEER IN THE SLOW COOKER

Beef in Beer in the Slow Cooker image

Delicious tender beef cooked in the slow cooker with beer, shallots, bacon, and mushrooms. The Guiness® makes a lovely gravy without tasting overly strong of beer. This is quite a meaty dish so would also be nice with potatoes and carrots added. I serve this with crusty French bread to mop up the juices. Hearty and warming to come home to. Cooks in 5 hours in the slow cooker; however it would not hurt it to be cooked all day.

INSTANT POT® CORNED BEEF

Instant Pot® Corned Beef image

Corned beef used to be a weekend only treat for me due to how long it took to cook, until I discovered the Instant Pot®. Save yourself time and hassle by letting your Instant Pot® do all of the work for you, and in a fraction of the time. You can have it and all of the fixings on your table in 2 hours. If you decide to fix cabbage, be sure to keep it in large wedges so that it does not overcook.

PRESSURE COOKER BEEF AND GUINNESS STEW

Pressure Cooker Beef and Guinness Stew image

This pressure cooker recipe for hearty Guinness and beef stew is inspired by the traditional Irish recipe and includes carrots, garlic, and onions.

Provided by Jessica Harlan

Categories     Dinner     Entree

Time 55m

Yield 8

Number Of Ingredients 12

2 to 3 tablespoons vegetable oil
2 1/2 pounds beef stew meat (cut into 1-inch cubes)
1 medium onion (chopped)
2 cloves garlic (minced)
1 (14.5-ounce) can stout beer (such as Guinness )
1 teaspoon dried thyme
1 bay leaf
4 medium carrots (peeled and sliced on the bias into 1-inch pieces)
8 ounces frozen pearl onions (thawed)
2 tablespoons all-purpose flour
Kosher salt (to taste)
Freshly ground black pepper (to taste)

Steps:

  • Gather the ingredients.
  • In the pressure cooker, heat the vegetable oil over medium-high heat. Working in batches to avoid overcrowding the pan, sear the stew meat on all sides, about 3 to 4 minutes per batch, until browned. Transfer the seared meat to a plate and set aside.
  • Add more oil to the pan if needed and then sauté the chopped onion for 4 to 5 minutes or until it is softened and translucent. Add the garlic and sauté for 30 seconds, stirring constantly.
  • Return the stew meat to the pot. Add the beer, thyme, and bay leaf and stir to combine.
  • Lock the lid onto the pressure cooker and bring it to high pressure over high heat. When high pressure is reached, cook for 20 minutes, then remove the pot from the heat and quick-release the pressure by pressing the valve. Let stand for 5 minutes.
  • Add the carrots and pearl onions and stir to combine. Replace the lid on the pressure cooker, bring to high pressure, and cook 5 minutes. Remove from heat, and quick-release the pressure again. Remove the lid.
  • Find and remove the bay leaf and sprinkle flour over stew, stirring to combine. Simmer over medium-low heat until stew liquid thickens, about 5 minutes. Season to taste with salt and pepper.
  • Serve on buttered egg noodles or mashed potatoes or with crusty bread for dipping.
  • Enjoy.

BEEF IN BEER - 2-QT PRESSURE COOKER

Beef in Beer - 2-Qt Pressure Cooker image

Entered for safe-keeping, from "Quick Cuisine" by Kuhn Rikon. This recipe calls for the vegetables and sauce to be pureed after cooking, to be used as a sauce over the meat. Personally, I would prefer it chunky. The sauce is also good served over vegetables, especially mashed potatoes. I hear Chimay beer from Belgium is the best.

Provided by KateL

Categories     One Dish Meal

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 12

1 lb beef top round steak or 1 lb flank steak, pounded into thin 3x4-inch pieces
2 tablespoons dijon-style mustard
salt & freshly ground black pepper
1 teaspoon paprika
2 tablespoons olive oil
12 ounces dark beer
2 tablespoons flour
1 tablespoon tomato paste
1 cup beef broth
1 medium onion, peeled and chopped
2 carrots, peeled and sliced
1 leek, white part only, sliced

Steps:

  • Mix mustard, salt, pepper and paprika together and spread both sides of each piece of beef with mixture. (The beef can be marinated for 15 minutes to 2 hours in the refrigerator, covered.).
  • In a 2-quart Pressure Frypan, heat 1 tablespoon oil.
  • Brown each piece of beef over high heat. Remove and set aside. Add more oil as needed until each piece is browned.
  • Add a small amount of the beer to pan and stir to loosen any brown bits that may be sticking. Stir in flour and tomato paste, adding beer to make paste-like consistency.
  • Place beef back in pan on top of the paste mixture. Add onion, carrots, leek, remaining beer and broth.
  • Close lid and bring pressure to 1st red ring (low pressure) over high heat. Adjust heat to stabilize pressure at 1st red ring. Cook for 15 minutes.
  • Remove from heat and use Natural Release Method.
  • Remove beef. Puree vegetables in a food processor, blender or mill.
  • Adjust seasoning to taste.
  • Arrange beef on warm platter and cover with pureed vegetable sauce.

CL BEEF POT ROAST AND GRAVY - 6-QT PRESSURE COOKER

CL Beef Pot Roast and Gravy - 6-Qt Pressure Cooker image

Entered for safe-keeping, adapted from Julianna Grimes, September 2010 Cooking Light. Calls for 6- or 8-quart pressure cooker. For best results, use Pressure Cooker Beef Stock for lower sodium but rich taste. Don't omit the parsnips or turnips -- they provide a very mellow flavor. I don't see many potatoes labeled Yukon Gold any more; now they might be called "yellow". A serving = 3 oz. beef, 2/3 cup vegetables, and 2 tablespoons sauce.

Provided by KateL

Categories     One Dish Meal

Time 1h36m

Yield 12 serving(s)

Number Of Ingredients 15

3 lbs boneless chuck roast, trimmed
1 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
2 teaspoons olive oil
3 cups rich homemade beef stock (preferably made in pressure cooker, Cooking Light Pressure-Cooker Beef Stock - 6-Qt Pressure Cooker)
1/2 cup dry red wine
4 fresh thyme sprigs, tied securely together with twine
3 garlic cloves, chopped
3 large parsnips, peeled and diagonally cut into 2-inch pieces
3 large carrots, peeled and diagonally cut into 2-inch pieces
1 lb turnip, each cut into 8 wedges
1 lb yukon gold potato, peeled and cut into 2-inch pieces
1 large onion, cut into 8 wedges
2 tablespoons all-purpose flour
12 fresh thyme sprigs (optional)

Steps:

  • Sprinkle roast evenly with salt and pepper.
  • Heat a 6- or 8-quart pressure cooker over medium-high heat. Add oil to cooker; swirl to coat.
  • Add roast to cooker. Sauté 5 minutes, browning on all sides.
  • Stir in 3 cups rich beef stock and wine.
  • Close lid securely. Bring to high pressure over high heat. Reduce heat to medium or level needed to maintain high pressure. Cook for 35 minutes.
  • Remove from heat. Use quick release method favored by your pressure cooker manufacturer: release pressure through steam vent, or place cooker under cold running water to release pressure.
  • Remove lid, directing steam away from you. Add thyme sprigs, garlic, parsnips, carrots, turnips, potatoes and onions.
  • Close lid securely. Return to high pressure, cook 1 minute.
  • Remove from heat. Use quick release method favored by your pressure cooker manufacturer: release pressure through steam vent, or place cooker under cold running water to release pressure. Let stand 5 minutes.
  • Remove roast. Slice roast thinly, and place on a platter.
  • Remove vegetables from cooker using a slotted spoon, and place on platter with roast. Cover and keep roast and vegetables warm.
  • Strain cooking liquid through a cheesecloth-lined sieve into a large bowl. Discard solids.
  • Bring cooking liquid to a boil over medium-high heat in a large, wide skillet. Cook until reduced to 1 1/2 cups (about 15 minutes).
  • Remove 1/4 cup cooking liquid from pan. Add 2 tablespoons flour, stirring with a whisk.
  • Return flour mixture to pan. Cook 2 minutes or until slightly thick, stirring with a whisk.
  • Serve sauce with roast and vegetables. Garnish each serving with a fresh thyme sprig, if desired.
