1/2 cup orange juice
2 tablespoons lime juice
1 tablespoon adobo sauce (from chipotle peppers)
1 1/4 lbs beef sirloin or 1 1/4 lbs top beef loin steaks, finely chopped
2 large onions, diced (2 cups)
2 tablespoons minced garlic or 2 tablespoons bottled minced garlic
1 tablespoon chili powder
1 tablespoon cooking oil
1 1/2 lbs yukon gold potatoes or 1 1/2 lbs red potatoes, cooked* and diced
1 tablespoon chopped chipotle chile in adobo
2 roma tomatoes, seeded and chopped
1/4 cup snipped fresh cilantro
salt & fresh ground pepper
fried egg (optional)
1 sprig fresh cilantro (optional)

Steps:

  • In a large plastic bag set in a bowl, combine orange juice, lime juice, and adobo sauce.
  • Add meat, turning to coat.
  • Close bag.
  • Marinate in refrigerator for 30 minutes. Drain and discard marinade.
  • Pat meat dry with clean white paper towels. (Removing as much moisture as possible from the meat makes for a crispy hash.)
  • In a 12-inch heavy skillet cook the onion, garlic, and chili powder in hot oil over medium heat for 5 minutes or until onion is tender.
  • Add meat to skillet; cook and stir about 2 minutes or until meat is browned.
  • Stir in potatoes and chipotle peppers. Spread in an even layer in the skillet.
  • Cook for 8 minutes more or until potatoes are golden brown, turning occasionally.
  • Stir in tomatoes and chopped cilantro. Season with salt and pepper.
  • Serve with fried eggs and fresh cilantro.
  • *To Cook Potatoes: Remove eyes from potatoes. Cut potatoes into quarters. Cook, covered, in enough boiling lightly salted water to cover for 20 to 25 minutes or until tender.
  • Drain.

15 pounds Golden Angus eye round
Salt and freshly ground black pepper
1 bunch thyme
4 heads garlic
2 onions
2 large carrots, diced
6 quarts chicken stock
1 quart quartered potatoes
1 cup chopped chives
1 cup chopped parsley
1 tablespoon butter
Poached eggs, optional
Hollandaise Sauce, optional

Steps:

  • Preheat the oven to 300 degrees F. Season meat with salt and pepper and sear on all sides in a hot saute pan. Place meat in a large roasting pan and cover with thyme, garlic, onions, carrots, chicken stock, and potatoes. Braise in the oven for 2 hours or until meat is tender. Strain liquid and place in an ice bath. Cool meat in liquid. Chop roasted onions and potatoes into a small dice. Shred beef and mix with potatoes, onions, chives, and parsley. Raise the oven to 350 degrees F. Heat a 10-inch cast iron skillet and add 1 tablespoon of butter. Place 2 cups of roast beef mix in skillet and place in the oven for approximately 15 minutes or until meat is slightly crisp on outside. Serve with poached eggs and hollandaise sauce, if desired.

2 large russet potatoes, diced small
2 tablespoons butter
1 large onion, diced small
2 tablespoons minced garlic
1 jalapeno, minced
3/4 pound corned beef, diced small
1 tablespoon prepared horseradish
2 teaspoons chicken bouillon
2 tablespoons chopped chives
1 cup, finely grated Swiss cheese
Kosher salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the potatoes in a saucepan and cover with water and bring to a boil over high heat. Reduce the heat to low; and simmer for 1 minute making sure the potatoes are still firm. Drain the potatoes in colander and set aside.
  • Heat a 10-inch skillet, over medium-high. Add the butter and allow it to brown for 1 minute. Stir in the onions, garlic and jalapenos and cook for 5 minutes. Add the corned beef, horseradish, bouillon, potatoes, chives and Swiss cheese. Mix well, then remove from the heat. Spoon the hash into 6 (6-ounce) ramekins. Put the ramekins on a quarter sheet tray and bake until nicely browned, about 12 to 15 minutes. Remove from the oven and serve hot.

2 tablespoons butter or 2 tablespoons margarine
1/2 cup chopped onion
1 1/2 cups diced potatoes
3 cups cubed leftover roast beef
2 teaspoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1 cup milk
1/2 cup leftover gravy

Steps:

  • In large skillet, cook onion in butter until tender crisp.
  • Add remaining ingredients except milk and gravy.
  • Whisk milk and gravy together until smooth.
  • Add to skillet.
  • (If there is no leftover gravy, just increase milk to 1 1/2 cups.) Stir all together and bring to a boil.
  • Reduce heat and simmer, uncovered, for approximately 20 minutes or until potatoes are done.
  • The liquid should be absorbed.

1 1/2 cups beef broth

Steps:

  • Preheat oven to 350 degrees.

500g potato, peeled and chopped
2 tbsp vegetable oil
1 onion, roughly chopped
340g can corned beef, cut into cubes
2 tbsp Worcestershire sauce
baked beans and a little curly parsley, roughly chopped, to serve (optional)

Steps:

  • Put the potatoes in a pan, cover with cold water and bring to the boil. Cook for about 6-7 mins, then drain.
  • Heat the oil in a non-stick frying pan and cook the onion for 3-4 mins over a medium heat. Add the potatoes and corned beef, and push down with a spatula to crisp up, cooking for about 5 mins. Turn the mixture over, trying not to break up the meat and potatoes too much, then add the Worcestershire sauce. Cook for another 5 mins, pushing down to crisp the base again. Season a little, then serve with baked beans and a sprinkling of parsley, if you like.
