MAPLE HAM AND EGG CUPS

Steps:
- Spray your muffin cups (we used jumbo cups but you can use regular ones).
- Place your ham down in the cup
- Add a drop or two of maple syrup and a piece of butter on top of each piece of ham
- Add an egg to each cup
- Season as desired and baked at 400 for 20 minutes.
- Serve on toast.
BAKED HAM AND EGG CUPS

Steps:
- 1. Preheat the oven to 400 degrees F. Line the ramekins with nonstick aluminum foil and place on a baking sheet.
- 2. Stack 2 slices of ham directly on top of each other and fit into a ramekin to form a cup, making sure the ends of the ham hang over the ramekin slightly. Repeat with the remaining ham. Dividing evenly, sprinkle half of the cheese into the bottoms of the ham cups. Crack an egg into each and add 1 tablespoon cream. Divide the rest of the cheese, 1/4 teaspoon salt and 1/4 teaspoon pepper evenly among the cups.
- 3. Bake until the egg whites are set and the yolks are still soft, 20 to 24 minutes, rotating the baking sheet halfway; some cups may cook faster than others. Sprinkle with the chives and then carefully lift the ham cups out of the foil so you do not tear the ham or break the shape of the cup. Place on a large platter or on individual plates and serve.
EGGS IN MAPLE-HAM CUPS
I have not tried this yet. The recipe came from the Clean Home Journal Website. It is a pretty simple recipe with impressing results. They would be pretty for a brunch.

Steps:
- Position one baking rack in the middle of the oven & preheat to 400 degrees F. Using a pastry brush & the melted butter or margarine, generously coat the inside of all 12 cups in a standard-size muffin tin.
- Fit 1 slice of ham into each cup, pressing down to gently line the cup. The ends will stick up over the edges of the cups before cooking. (The ham shrinks during baking resulting in a more cup-like appearance.).
- Spoon 1/2 teaspoon of maple syrup into the bottom of each ham cup, followed by 1/2 teaspoon of dill or chives. (If using dried herbs, use 1/8 teaspoon.) Crack 1 egg into each ham cup.
- Bake until whites are cooked and yolks are firm, about 20 minutes If any large bubbles form on the eggs during baking, pierce them with a toothpick or wooden skewer while they cook.
- Remove the baking pan from the oven and season eggs with salt and pepper. Using 2 teaspoons or small spatulas, carefully lift the full ham cups out and place them on a serving plate. Garnish with fresh herb sprigs if using. Serve immediately.
EGGS IN A HAM CUP
Another tasty recipe from Alberta Egg Producers. You can also use a microwave-proof wide mug if you don't have a ramekin or custard cup. You can cook more than one at a time, just make sure that they have cooked through; they should need more time the more you are cooking. Enjoy!

- Spray a 10 oz microwaveable ramekin or custard cup with vegetable spray. Place ham slice in ramekin. Sprinkle with onion and 1 tbsp shredded cheese.
- In a small bowl, beat together eggs, yogurt and pepper until blended; pour into ham cup in ramekin. Sprinkle with parsley and remaining cheese. Cover loosely with plastic wrap, turning it back slightly to vent. Microwave on medium-high (70%) for 2-1/2 minutes to 3 minutes or until cooked as desired.
- Remove from microwave but do not remove plastic wrap; let stand for 1 minute. Remove plastic wrap and serve.

Tasty toast cups with a hint of maple syrup, an egg, and a tasty surprise of bacon inside. A delicious and fun breakfast or brunch; serve with a cup of coffee or glass of orange juice. Make these in regular muffin cups (or you can use buttered ramekins, but increase the time to about 16 minutes because it takes longer for the heat to penetrate the ramekins). - Preheat the oven to 400 degrees F. Butter six muffin cups.
- In a small saucepan, melt the butter and add the syrup. (You can also do this in a microwave).
- Remove the crusts from the bread. Flatten each slice with a rolling pin. Brush both sides of each slice with the syrup mixture.
- Put one slice into each muffin cup and sprinkle the bacon pieces in the cups.
- Break an egg into each cup and bake until the eggs are set; start checking after about 5 minutes.
- Lift the toast cups from the pan and serve immediately, drizzled with additional syrup, if desired.

- Note the tomatoes should be fresh picked and should be at the point where you can still hollow them out but headed for buttery soft in the next day or so.
- Herbs: oregano,chervil, basil, sage, Mrs. Dash.
- Preheat oven to 425°F while slicing tomatoes. Remove tops the scoop out seeds and pulp.
- Place in a shallow baking dish, sprinkle with a bit of salt or Mrs Dash [I used Italian], fresh ground pepper and put in a pinch of the parmesan cheese.
- Crack the egg into the tomato. Sprinkle with pepper, salt or Mrs. Dash, other herbs and a tiny bit of parmesan.
- Bake for 20 minutes for soft yolks and 30 to 35 for hard. During the last 4 minutes place two slices of the cheddar cheese in a cross pattern on top. Melt and let brown. When I removed I put a small amount of fresh chives on top of the cheese.
- Serves 8.

- In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. In a small saucepan, heat syrup and butter until butter is melted; set aside., Trim crust from bread; flatten slices with a rolling pin. Brush one side generously with syrup mixture; press each slice into a greased muffin cup with syrup side down. Divide bacon among muffin cups., Carefully break one egg into each cup. Sprinkle with salt and pepper. Cover with foil. Bake at 400° until egg whites are completely set and yolks begin to thicken but are not hard, 18-20 minutes. Serve immediately.

You don't have to wait until a special occasion, make these for your breakfast tomorrow. I entered the recipe as 1 egg so you can easily scale it to just the number you need. If serving a crowd, use your muffin tin/silpat. Just 1 or a few use a ramekin or silpat cup. Add other things to the cup as the spirit moves you!

- Preheat oven to 375F.
- Oil your ramekin (or silpat cup or muffin tin).
- Place the ham inside of it, making a nice cup.
- Crack your egg into the center.
- Top with green onion and cheese.
- Salt and pepper to taste.
- Bake for 15-20 minutes. I prefer the yolk still runny -- less time.
- Pop onto your plate and serve.
