BEEF COTTAGE CHEESE PIE
I found this on the internet one night when I needed to use up some cottage cheese. I made it with a savory rye crust, and the whole family enjoyed it. The filling reminded me of sloppy joes, so next time I have leftover sloppy joe filling, I might try using it up in a pie like this. This is a quick and easy family-friendly meal.

Steps:
- Brown together onion, celery, garlic, and ground beef in a heavy skillet. Drain any excess fat. Add pepper, salt, ketchup, and mustard to skillet and cook and stir for 3 minutes. Turn this meat mixture into the pie crust.
- Beat eggs and add cottage cheese and Parmesan cheese. Pour this mixture over meat in the pie pan. Bake at 350 degrees for 40-45 minutes, or until crust is golden and topping is puffed.

TRADITIONAL ENGLISH COTTAGE PIE WITH CHEESE AND LEEK TOPPING
Cottage pie, like its opposite lamb number, Shepherd's pie, was the ingenious idea of housewives many years ago, in order to create another warm and comforting meal usually from the Sunday Lunch left-overs! Cooked beef or lamb were diced or shredded and sometimes the vegetables were added to the meat mixture - such as peas or carrots. This recipe uses raw minced beef, but you could use minced cooked beef if you wish, I have added it as an alternative. The leeks were always added to the mashed potato topping when I was growing up - it was another way of utilising the leftovers! A bit like a Bubble and Squeak topping. I am not a lover of peas being added in my Cottage Pie, so I have suggested them as an option - I always prefer carrots as the vegetable to be added. Try to use mature Farmhouse Cheddar cheese for the topping - a little goes a long way, as it is so strong in flavour. The cheese is very luxurious, but takes this simple and comforting pie to a higher taste level, in my humble opinion! Serve bubbling hot straight from the oven with steamed cabbage, carrots or any seasonal vegetables and a jug of gravy.

Steps:
- To make the pie filling:.
- Fry the onions and carrots if using, in the butter or beef dripping until they are soft.
- Add the minced/chopped beef and cook for about 10 to 20 minutes or until the onion and carrot have browned and the minced beef has taken on some colour and is firm. (It also depends if you are using cooked or raw minced beef.).
- Season well with salt and pepper, then add the mixed herbs. Stir in the flour, and mix well.
- Mix the tomato puree and Worcestershire sauce with the stock and add it to the meat mixture, bringing it all to simmering point. Simmer until the stock has reduced by aboout a third, add the peas if using and take off the heat. Set aside whilst you make the topping.
- To make the topping:.
- Boil the potatoes in slightly salted water then mash them well, adding half of the butter and all of the milk gradually. Season to taste.
- If using fresh leeks, fry the leeks gently in the remaining butter, until soft and slightly coloured.
- Stir the cooked leeks into the mashed potato mixture and give it all a good mix.
- Assemble:.
- Put the meat mixture into a large and deep well greased baking dish and spread the potato mixture on top; then sprinkle with the grated cheese. You can also use 4 - 6 smaller pie dishes if you wish.
- Put into a pre-heated oven, 200C/400F/Gas Mark 6 for about 25 to 30 minutes until the topping is crusty, golden and bubbling.
- Serve with an assortment of fresh seasonal vegetables and a jug of gravy.

Beef cottage cheese pie is an old-fashioned recipe that combines on-hand ingredients including onions, garlic, and cottage cheese for a hearty dinner.

Steps:
- Preheat oven to 350 F. Line the pie pan with the pie crust and flute edges. Set aside.
- Cook the onion, garlic, and ground beef in a heavy skillet over medium heat until the ground beef is thoroughly cooked, stirring to break up meat.
- Drain off any excess fat from the meat mixture.
- Add the ketchup, mustard, flour, dried marjoram leaves, salt, and pepper to the skillet with the meat mixture and cook and stir for 3 minutes.
- Remove the skillet from the heat and let cool for 10 minutes. Turn this meat mixture into the pie crust-lined pan and smooth the top. Don't press down on the mixture; just make sure the top is smooth and even.
- In a small bowl, beat eggs and add cottage cheese and Parmesan cheese; mix thoroughly.
- Pour this mixture over meat in the pie pan.
- Bake the pie at 350 F for 30 to 40 minutes, or until filling is set, the crust is golden, and topping is set and starting to brown in spots.
- Let the pie cool for 5 minutes, then cut into wedges to serve.

IRISH COTTAGE PIE WITH GROUND BEEF RECIPE BY TASTY
Here's what you need: butter, onion, garlics, ground beef, dried parsley, dried rosemary, dried thyme, salt, ground black pepper, worcestershire sauce, tomato paste, all purpose flour, beef broth, mixed peas and carrots, diced tomato, frozen corn kernels, shredded sharp cheddar cheese, chicken broth, butter, salt, sour cream, potato flakes, green onions, pepper

Steps:
- Preheat the oven to 400°F.
- Melt butter in a skillet over medium-high heat. Cook the onions for 5 minutes. Then, add garlic and cook for 1 minute.
- Set onions and garlic aside and in the same skillet, add ground meat. Cook and stir for 6-8 minutes until thoroughly browned. Drain & rinse meat in a colander.
- Add meat back in the skillet over medium-low heat. Stir in parsley, rosemary, thyme, salt, pepper, and Worcestershire sauce. Then, stir in flour, and tomato paste. Stir until completely well incorporated
- Stir in broth (or wine), peas, carrots, tomatoes and corn. Simmer for 5 minutes.
- Evenly smooth meat mixture onto bottom of the skillet (or press into the bottom of a 9x9"inch baking dish). Sprinkle cheddar cheese over the top.
- Potatoes: Heat broth, butter, and salt in a bowl in the microwave until hot. Stir in sour cream and potato flakes and mix with a fork. Let sit until liquid has been fully absorbed. (Note: the potatoes need to be thick to pipe perfect peaks.
- Use a "star tip" on a piping bag (or a Ziploc bag with corner snipped). Fill bag and pipe potatoes into skillet or baking dish, covering the meat.
- Sprinkle chopped onions & pepper on top.
- Bake uncovered for 30 minutes.
- Serve hot.
