BROCCOLI, BEEF & POTATO HOTDISH
This easy casserole, full of ground beef, roasted broccoli and topped with hash browns, was inspired by the classic Minnesota Tater Tot hotdish. Roasting the broccoli before adding it to the casserole gives the whole dish a much more complex and exciting flavor, but it's by no means necessary. If you want to keep it simple, skip roasting the broccoli (Step 2) and use 6 cups frozen broccoli, thawed, in its place (omit 1 tablespoon oil, as well).

- Preheat oven to 450 degrees F.
- Toss broccoli with 1 tablespoon oil in a large bowl. Spread out on a baking sheet and roast, stirring once halfway though, until just soft and browned in spots, about 15 minutes.
- Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium heat. Add beef and onion and cook, breaking up the beef with a wooden spoon, until the beef is browned and the onion is softened, 10 to 12 minutes. Stir in Worcestershire, garlic powder and 1/4 teaspoon salt. Set aside.
- Whisk milk and cornstarch in a large saucepan. Bring to a boil over medium-high heat, whisking often, until bubbling and thickened enough to coat the back of a spoon, 6 to 8 minutes total. Remove from the heat and stir in Cheddar, 3/4 teaspoon salt and turmeric until the cheese is melted.
- Spread the beef mixture in a 9-by-13-inch (or similar 3-quart) baking dish. Top with the broccoli and pour the cheese sauce evenly over the top.
- Combine potatoes, egg, pepper and the remaining 1/4 teaspoon salt in a medium bowl. Sprinkle evenly over the casserole. Coat the top with cooking spray.
- Bake the casserole until it is bubbling and the potatoes are beginning to brown, about 40 minutes. Sprinkle with paprika. Let stand for 10 minutes before serving.

- Preheat oven to 375°F.
- Peel potatoes and cut into large chunks. Place potatoes in a large pot of boiling water along with garlic cloves. Boil for 13-15 minutes or until tender. Drain well.
- Cook bacon until crisp. Set aside.
- Place broccoli in a microwavable bowl, add 1 cup of water. Cover with plastic wrap and microwave 3 minutes or until tender crisp. Drain well. (Or steam broccoli on the stove if you prefer).

- Preheat oven to 350 degrees F and Grease and 9" X 11" casserole dish
- Cook ground beef in skillet with diced onion until browned and cooked through. Drain and set aside.
- Slice potatoes into 1/4 inch thick rounds.
- Place sliced potatoes on a plate and cover with saran wrap. Alternatively, you can simply cover it with a microwave safe cover if you don't want to use saran wrap.
- Cook in the microwave for 8 minutes or until fork through easily. *I do this in 2 batches**BE CAREFUL when you take the saran wrap off ( if you use it) as lots of steam is released and it's HOT!
- Melt butter in separate bowl in microwave safe bowl.
- Arrange half of the potatoes in bottom of dish and drizzle with butter.
- In a separate medium mixing bowl, mix 1/2 cup grated Swiss cheese, spinach, cottage cheese, garlic and egg. Then add ground beef. Mix well.
- Spread the spinach and ground beef mixture over the first layer of potatoes and butter.
- Cover with remaining potatoes, drizzle with remaining 2 1/2 tbsp butter.
- Sprinkle with remaining 1 1/2 cups Swiss cheese.
- Bake 40-50 minutes or until potatoes are soft. Cool for 5 minutes

- First, preheat oven to 375ºF and spray a 9-inch x 13-inch casserole dish with nonstick cooking spray.
- Then, sprinkle the white rice onto the bottom of the casserole dish.
- Next, prepare veggies. Cut broccoli into bite-sized pieces and finely dice a large red pepper and half a yellow onion. Add those to the casserole dish.
- Prepare sauce by mixing together soy sauce, hoisin, minced garlic, maple syrup, red chili sauce, beef broth, and water. Set aside.
- Prepare flank steak by placing it in between 2 pieces of parchment paper. Then, using a meat tenderizer, tenderize meat until it's around 1/2-inch thick. This will help break down the beef and make it a lot less chewy.
- Next, slice the beef into 1/2-inch pieces and add it to the casserole dish.
- Pour the sauce over steak, veggies, and rice, and use a large wooden spoon to mix everything together.
- Cover casserole dish with a piece of tin foil and bake at 375ºF for 20 minutes.
- Remove from oven and mix. Cover again and bake for an additional 15 minutes.
- Remove from oven and uncover. Then, bake for an additional 10-15 minutes, uncovered or until the beef is fully cooked and the rice is no longer crunchy.
- Let sit for around 5-10 minutes before serving to let the sauce fully soak up.

HEARTY BEEF AND POTATO CASSEROLE
This recipe came from a church cookbook, so I have no way of knowing whether it came from another source, or if this was someone's own creation. Regardless, it has been a family favorite ever since.
