OVEN BEEF BACK RIBS

An easy recipe for tender, flavorful oven beef back ribs. It's not a quick recipe, but it's truly easy, and the result is so very flavorful!

1/2 cup apple cider vinegar
2 tablespoons hot pepper sauce (Such as Frank's RedHot)
2 racks beef back ribs (2 lb. each )
Olive oil spray
2 teaspoons smoked salt
1/2 teaspoon black pepper
2 teaspoons smoked paprika
1 teaspoon onion powder
1 teaspoon garlic powder

Steps:

  • Preheat your oven to 250 degrees F. Line a rimmed baking sheet with parchment or foil (for easy cleanup).
  • In a small jar or bowl, whisk together the apple cider vinegar and the hot sauce. Set aside.
  • If you wish, remove the thin membrane from the bone side of the ribs. Here's how.
  • Place the ribs on the prepared baking sheet, bone side down. (Use two baking sheets if they don't fit in one). Spray the tops of the ribs with olive oil and sprinkle them with smoked salt, black pepper, smoked paprika, onion powder, and garlic powder.
  • Bake the ribs, uncovered, for 1 hour.
  • Mix the apple cider vinegar marinade again, then pour it into three small bowls, dividing it evenly. Baste the tops of the ribs with 1/3 of the marinade.
  • Return the ribs to the oven and bake them for three more hours, uncovered, basting the top with 1/3 of the marinade every hour (make sure you rinse the basting brush after each basting with hot soapy water).
  • After 4 hours of baking, the ribs should be nicely browned and very tender. At this point, you can serve them. But to make them even better, reduce the oven to 200 degrees F, and keep them in the oven for one more hour. This will ensure extra tender beef with a crispy, caramelized exterior.
  • Remove the ribs from the oven, cut into six portions and serve.

5 pounds beef Back Ribs, cut into 2 to 4 rib sections
1 tablespoon vegetable oil
1-1/2 cups finely chopped onion
1 tablespoon minced garlic
1 to 1-1/2 teaspoon crushed red pepper flakes
1-1/2 cups chili sauce
1/2 cup water
3 tablespoons fresh lemon juice
1/2 teaspoon salt

Steps:

  • 1.Heat oil in medium saucepan over medium high heat until hot. Add onion, garlic and pepper flakes; cook and stir 4 to 5 minutes or until onion is tender. Add chili sauce, water and lemon juice; bring to a boil. Reduce heat and simmer 5 minutes, stirring frequently. Season with salt. Reserve 1/2 cup sauce for basting. 2.Prepare charcoal grill for indirect cooking by igniting an equal number of charcoal briquets on each side of fire grate, leaving open space in the center. When coals are medium, ash-covered (25 to 30 minutes), add 3 to 4 new briquets to each side. Position cooking grid with handles over coals so additional briquets may be added when necessary. 3.Place ribs, meat side up, in large (16-1/8 x 11-3/4 x 2-7/8 inches) foil roasting pan. Pour remaining sauce over ribs; turn ribs to coat. Cover tightly with aluminum foil; place foil pan on cooking grid. Cover with grill lid and grill over medium heat 1 to 1-1/2 hours or until ribs are fork-tender. Carefully remove roasting pan from grill; remove ribs from pan and place, meat side up, on grill rack. Baste ribs with reserved sauce; grill, covered, 10 to 15 minutes, turning and basting once. Cooks' Notes: Add 3 to 4 additional briquets to each side of fire grate every 30 minutes or as necessary to maintain proper heat during grilling.

Even a barbeque purist cannot scoff at these foil-wrapped, baked and glazed baby back ribs. They're satisfyingly sweet, savory, smoky and flavorful. The meat falls off the bones! Baking in foil also reduces the amount of clean up. You'll be busy enjoying these ribs -- who has time for dishes?

2 slabs baby back ribs, about 1 pound each (see Cook's Note)
1/4 cup light brown sugar
1 tablespoon chipotle chile powder
2 teaspoons kosher salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon seafood seasoning, such as Old Bay
1/2 teaspoon freshly ground black pepper
1 cup apple cider
2 tablespoons apple cider vinegar
1 tablespoon pure maple syrup
1 tablespoon Worcestershire sauce
2 cloves garlic, minced

Steps:

  • In a small bowl, combine the brown sugar, chipotle chile powder, salt, onion powder, garlic powder, seafood seasoning and black pepper.
  • Place each slab of ribs on a piece of aluminum foil large enough to fold over and seal, then place on a baking sheet. Do not seal the ribs in the foil yet (see Cook's Note). Generously sprinkle the dry rub on both sides of the ribs. Place in the refrigerator, meat-side down and uncovered, for at least 1 hour. Preheat the oven to 300 degrees F.
  • In a small bowl, combine the apple cider, apple cider vinegar, maple syrup, Worcestershire and minced garlic. Pour half the liquid over each slab and tightly seal each in the aluminum foil, crimping the edges to make a packet.
  • Transfer the foil packets and baking sheet to the oven and bake until the meat is tender and starts to pull away from the bones, about 2 hours.
  • Remove the sheet pan from the oven. Carefully open the aluminum packets and pour the braising liquid into a small saucepan. Bring the liquid to a simmer over medium heat until it becomes a thick and syrupy glaze, about 4 minutes.
  • While the braising liquid reduces, line a baking sheet with foil and gently transfer the ribs to it. Position a rack on the top level of the oven and preheat the broiler.
  • Using a pastry brush, generously brush the ribs with about half the glaze. Place the ribs under the broiler for about 1 minute. Brush with the remaining glaze and return to the broiled until charred in spots, about 1 minute more. Slice each rack between the bones into 2-rib portions and serve.

Steps:

  • Preheat oven to 275° Fahrenheit. Line baking sheet with aluminum foil and set aside.
  • Mix all dry rub ingredients together in small bowl, then sprinkle evenly over ribs.
  • Remove ribs from oven. Unwrap and discard aluminum foil, drain fat, then return ribs to baking sheet with bone side facing down. Brush with barbecue sauce.
  • Set oven to high broil and broil ribs for 3-5 minutes or until crispy and caramelized. Remove from oven carefully and serve warm.

2 slabs BBQ beef ribs
2 tablespoons kosher salt
1 1/2 tablespoons light brown sugar
1 tablespoon paprika
1 tablespoon ancho chile powder
1 tablespoon ground cumin
2 teaspoons freshly ground black pepper
1/2 cup pure maple syrup
1/4 cup apple juice
3 tablespoons light brown sugar
3 tablespoons apple cider vinegar
3 tablespoons Dijon mustard
1 teaspoon ancho chile powder
Pinch of cayenne
Kosher salt and freshly ground black pepper

Steps:

  • Prepare the grill for indirect heat using hickory and charcoal and heat to 250 degrees F.
  • Place the ribs on a clean cutting board and pull off the membrane, the thin fatty skin that lines the underside of the ribs. Trim the ribs of excess fat and meat.
  • For the rub: Whisk together 2 tablespoons salt, brown sugar, paprika, chile powder, cumin and pepper. Rub the beef ribs with the seasoning and place on a sheet tray, cover with plastic wrap, and if time, let marinate in the refrigerator for 8 hours or overnight.
  • For the glaze: Add the maple syrup, apple juice, brown sugar, vinegar, mustard, chile powder, cayenne, salt and pepper to a medium saucepan and bring to a simmer. Cook until syrupy, about 8 minutes, stirring with a wooden spoon on occasion.
  • Remove the ribs from the refrigerator. Place the ribs meatier-side-down on the grill away from the coals. Cook the beef 3 hours, adding more coals as needed. Turn and cook until the ribs "bend" and the meat easily separates from the bone using a fork, about 45 minutes more. Brush on the glaze to the ribs and cook for another 5 minutes. Remove and slice into individual ribs.

3 lbs beef back ribs ((1 full rack of ribs))
1 steak or rib seasoning ((Use mine or store bought))
1 cup BBQ sauce ((Your favorite))

Steps:

  • Preheat oven to 350°F (176°C).
  • Rinse and pat dry ribs with a paper towel.
  • (Optional) Remove membrane off the underside of the ribs if desired.
  • Cut each rib apart from each other.
  • Apply a good amount of my steak seasoning (or your favorite beef seasoning) to the ribs.
  • Line a baking tray with foil or parchment paper. Put the ribs on the tray, and bake at 350°F (176°C). for 1 hour.
  • After 1 hour, remove your ribs from the oven. Increase temperature to 450°F (232°C).
  • Brush your favorite BBQ sauce over the ribs, and return to the oven at 450°F (232°C) for 10 to 15 minutes.
  • Remove from oven and allow to cool slightly, serve and enjoy!

I tried to find a recipe that was not too complicated, This was the result. I started with a very basic recipe from "Cooking with Chef Doug", and added some extra spices to it. It was delicious. Since neither of us likes BBQ sauce, this recipe is ideal for us.

2 lbs baby back ribs
1/8 teaspoon pepper
1/8 teaspoon seasoning salt
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon basil leaves, crushed

Steps:

  • Preheat the oven to 300 degrees.
  • Spray a baking dish with a non-stick spray.
  • Remove the thin membrane from the bone side of the ribs. Using a paper towel to hold the membrane will make this easier.
  • Mix dry ingredients together in a small bowl or dish.
  • Rub the dry ingredients into each side of the slab(s) of ribs.
  • Place ribs, bone side down, into baking dish. Cover with aluminum foil, cut two or three slits into the foil.
  • Bake for one hour to one hour fifteen minutes, remove the foil. Cook for an additional hour, or until the meat is tender enough to pull apart easily.
  • If desired, cover with favorite BBQ sauce.

6 lbs beef short ribs (2 per person)
salt and pepper
2 tablespoons extra virgin olive oil
1 (8 ounce) bottle dry red wine, pinot noir
1 lb small white pearl onion, peeled
1 1/2 tablespoons fresh rosemary, coarsely chopped
2 tablespoons grainy mustard
1 pint grape tomatoes

  • Pre heat oven to 350.
  • Heat 1 tbsp evoo in a Dutch Oven, over medium heat.
  • Season ribs with salt and pepper.
  • Brown ribs on all sides, about 10 minutes, transfer a bowl.
  • Increase heat to high, add the wine and bring to a boil.
  • Lower heat and boil gently until reduced by half, about 10 minutes.
  • Return ribs and any juices to the Dutch Oven.
  • Cover and bake for 1 hour and 15 minutes.
  • Meanwhile in a large non-stick skillet, heat the remaining tbsp evoo over medium high heat.
  • Add the onions, salt, pepper, and rosemary; cook, stirring occasionally for 5 minutes, or until the onions begin to brown.
  • Add the onion mixture to the ribs, cover, and bake an additional 30 minutes.
  • Transfer the ribs and onions to a bowl and let the cooking liquid stand a few minutes to allow the fat the separate; discard the fat.
  • Bring the liquid to a boil, whisk in the mustard and season with salt and pepper to taste. Return the ribs and onions back to pot and add the tomatoes.
  • Cover, lower the heat to medium, and simmer until the tomatoes are tender, about 10 minutes.
