- Preheat the oven to 350 degrees F (175 degrees C).
- Mix beef, onion, 1/2 of the tomato sauce, bread crumbs, egg, garlic, 1/2 teaspoon oregano, salt, and pepper in a large bowl. Pat into a 1/2-inch-thick rectangle on a sheet of waxed paper. Sprinkle mozzarella cheese on top.
- Lift up the short side of the waxed paper to start rolling up the meatloaf. Roll tightly, peeling back paper as you go. Seal edges in place. Transfer meatloaf to a loaf pan.
- Bake in the preheated oven for 1 hour. Combine remaining tomato sauce and 1/2 teaspoon oregano; pour over meatloaf and sprinkle with Parmesan cheese. Bake until cheese is melted, about 15 minutes more. Let stand for 5 minutes before serving.

- Preheat the oven to 180ºC/350ºF/gas 4.
- Trim each fennel bulb and chop into eight wedges, then place in a large roasting tray, drizzle with oil, season with sea salt and black pepper and roast for 30 minutes.
- Meanwhile, peel and dice the onions and carrots, place in a large pan with 1 tablespoon of oil on a medium-low heat and cook for 20 minutes, stirring occasionally.
- Pick the herb leaves, finely chop half of them and add to the veg pan, saving the rest for later.
- Leave the veg to cool completely, then tear in the mozzarella and add the breadcrumbs, minced meat, mustard, eggs, and a good pinch of sea salt and black pepper. Scrunch and mix well, then shape into a loaf.
- Make a space in the middle of the fennel tray and sit the meatloaf in the centre. Criss-cross the smoky bacon over the meatloaf, drizzle with a little oil, then cover the tray with tin foil.
- Roast for 30 minutes, then remove from the oven and discard the foil.
- Mix the chicken stock, jam and tomato purée together in a jug until smooth, then pour into the tray. Toss the reserved herbs with a little oil and scatter into the tray, then return to the oven for a final 45 minutes, or until cooked through.
- If the juices need thickening at this stage, simply put the tray on the hob to reduce for a few minutes, until they're the consistency of your liking, skimming away any fat from the surface, if needed.
- Serve the meatloaf, sweet fennel and juices with mash and seasonal greens.

I got the idea of using sausage in this from my hubby, and I built it from there. This makes an excelent, juicy, and very tasty meat loaf. Note: I mince my onions because I like the flavor, I just don't want to know they are there, but obviously you can chop them to your liking.

- Preheat oven to 350*.
- In a large bowl, combine beef, sausage, egg, crumbs, onion, water, garlic powder and seasoned salt.
- Mix together until all the ingredients are incorporated.
- Lightly spray baking dish (I use a glass, 8X10).
- Move meat mixture to baking dish, and press to the sides.
- Squirt ketchup across the top, or spread with a brush.
- Transfer to oven, and bake for 1.25 hours.

- Preheat oven to 350 degrees.
- Add all of the meatloaf ingredients to a large bowl except for the mozzarella cheese and the pesto. Mix by hand until all ingredients are well combined.
- Divide the mixture into two and place half of it onto a foil-lined baking sheet or in a large baking dish. Pat the meat mixture until it is in a 9 x 5-inch square rectangle shape. Make the outside edges slightly raised and the middle slightly depressed to make room for the cheese and pesto.
- Place the mozzarella cheese slices down the center of the meat, making sure none of it reaches the outside ½-inch. Pour the pesto sauce over the cheese slices.
- Add the remaining half of the meat mixture to the top of the cheese and pesto and form it into a log shape. Pay close attention to the edges to ensure they are completely sealed so no cheese can escape.
- Mix together the glaze ingredients in a medium-sized bowl and spread half of it over the top of the meatloaf.
- Cover the pan with a piece of foil and bake in the preheated oven for 40-45 minutes.
- Remove the foil and spread the remaining glaze over the meatloaf. Return it to the oven for an additional 15-20 minutes. You'll know it's done cooking when the internal temperature reaches 160 degrees.
- Let the meatloaf rest for 20 minutes before slicing in and serve with a sprinkle of fresh parsley. Enjoy!

- Preheat oven to 375 degrees F.
- Mix together eggs, bread crumbs, salt, oregano, parsley, parmesan, and 1/3 cup pizza sauce together until well combined.

- Preheat oven to 400 degrees and prepare a loaf pan with cooking spray or parchment paper.
- In a small bowl, toss cubed bread with milk. Set aside for 3-4 minutes to absorb.
- In a large mixing bowl, or the base of a stand mixer, combine fresh bread cubes soaked in milk, finely ground or micrograted onion, garlic Italian seasoning and salt. Mix to combine.
- Add crumbled ground beef and sausage, breaking into small pieces.
- Before mixing, top with Worcestershire sauce, lightly beaten egg, dry bread crumbs, Parmesan cheese, 1/2 cup shredded mozzarella and 1/4 cup marinara sauce.
- Blend until just mixed, either using your fingers to toss or putting the stand mixer on low. Too much mixing will make your meatloaf tough, so only mix until barely blended.
- Transfer meat mixture to cooking vessel of your choice, forming into a loaf as you go. You can make it free-form on a rimmed baking sheet, but I prefer using a meatloaf or bread loaf pan. Top with 1/2 cup marinara sauce.
- Bake, uncovered, for 40 minutes. Remove and top with remaining shredded mozzarella cheese and another shake of Italian seasoning (if desired).
- Cook for an additional 5 minutes. Allow to sit for 5-10 minutes before cutting and serving. Serve with additional marinara sauce, if desired.

HOMESTYLE SAUSAGE/GROUND BEEF MEATLOAF
This is the meatloaf my mom made and it was always one of her most requested recipes. I'm not sure if it's one of her recipes or not, since she was always clipping recipes from magazines and newpapers. It's still a big hit with family and friends and remains one of my most requested recipes. My hubby is a hunter, so I do make it with ground vension and vension sausage and it's wonderful. You can also make meatballs with the meat mixture and brown them in a skillet, pop them in a crockpot with spaghetti sauce and it's great served over pasta. The meatballs also make a wonderful appetizer served with your favorite sweet & sour or BBQ sauce. Any leftover meatloaf or meatballs make a mean sandwich the next day as well. I usually make two recipes and bake both loaves on a large baking sheet so I have enough for sandwiches the next day, LOL.
