Beef With Onions and Mushrooms image

I'm into quick and easy these days and this popped into my head when I was trying to think of something fast for dinner last night. This would be good with green beans or a salad on the side. Note that the 45 minute cooking time is a little deceptive because you can cut the onions and mushrooms while browning the meat.

Number Of Ingredients 7

1 1/2-2 lbs beef (sliced into bite size pieces)
2 -3 cups sweet onions, diced
8 ounces baby portabella mushrooms, diced
3 -4 cups red wine (whatever is on hand that isn't sweet)
2 -3 tablespoons beef bouillon powder
3 tablespoons olive oil
2 cups cooked brown rice (Uncle Ben's makes a 90 second microwaveable brown rice that has two cups of cooked rice in it)

Steps:

  • Heat oil in a heavy skillet cook beef until it is cooked through and well browned.
  • Remove beef from skillet and deglaze the pan with 2/3 of the wine, add the bouillon and reduce the sauce.
  • Add onions and mushrooms to the sauce and cook until mushrooms and onions are tender.
  • Add cooked beef to the onions and mushrooms and add the remaining wine.
  • Cook until the wine has reduced add the cooked rice and blend everything together.
  • Enjoy!

From http://friendsofdenmark.org. Posted for ZWT6. To make smorrebrod, cut crusts from slices of pumpernickel or rye bread, but not French bread, when using them for a base. Be careful to spread soft butter entirely over the piece of bread you use. This keeps moist ingredients from seeping through and making the bread soggy. Ingredients should be artfully arranged. Sandwith will be eaten with a knife and fork.

4 teaspoons butter, softened
4 slices danish pumpernickel bread or 4 slices rye bread, crusts removed
1 (8 ounce) jar herring fillets, in wine sauce drained and fillets cut into 1-inch strips
1 medium sweet onion, cut into thin rings
1 tomatoes (8 thin slices)
watercress or parsley sprig, for garnish

Steps:

  • Spread 1 teaspoon butter on each slice of bread, being sure to cover each completely.
  • Cut each buttered slice in half crosswise or into 2 (4-by-2-inch) pieces.
  • Top each piece of bread with one-eighth of the herring, placing the fish smooth-side up.
  • Top each with several onion rings and 1 tomato wedge.
  • Garnish with watercress or parsley.

4 cube steaks (about 1 lb.)
1/2 cup butter or 1/2 cup margarine, melted
2 medium onions, sliced and separated into rings
3 tablespoons all-purpose flour
1 (10 1/2 ounce) can beef consomme, undiluted
1 cup dry white wine
1 1/2 tablespoons vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
hot cooked rice
1/4 cup chopped fresh parsley

Steps:

  • In a large skillet, brown the steaks on both sides in butter; remove steaks and set aside.
  • Add onion; stir/saute until tender.
  • Sprinkle flour over onion; stir to combine.
  • Gradually add consomme and wine; cook until thickened, stirring constantly.
  • Stir in vinegar, salt, and pepper.
  • Put steaks in onion mixture; cover and simmer 20 minutes or until steaks are tender.
  • Serve over rice; sprinkle with parsley.
