Satay is one of my all time faaaaavourite street eats, which is not surprising considering I spent six years of my childhood growing up in Malaysia where it's every where!

3 stalks lemongrass (chopped)
3 cloves garlic (peeled)
2 cm ginger piece (peeled and chopped)
2 teaspoons turmeric powder
1 ½ tablespoons brown sugar
1 teaspoon salt
1 ½ tablespoons peanut oil
500 g beef steak (e.g. scotch, rump, sirloin, cut into bite-sized pieces)
500 g boneless skinless chicken thighs (cut into bite-sized pieces)
30 bamboo skewers (soaked in water)
2 stalks lemongrass (chopped)
3 cm ginger piece (peeled and chopped)
½ teaspoon cumin (ground)
½ teaspoon ground coriander
1-2 tablespoons chilli paste
2 tablespoons oil (e.g. peanut, canola or soy)
150 g roasted peanuts (coarsely ground)
½ cup water
3-4 tablespoons tamarind juice* (or lemon juice)
2-3 tablespoons brown sugar
soy sauce to taste (GF if required)
1 telegraph cucumber (cut into 3cm chunks)
1 red onion (cut into small 1-2cm chunks)

Steps:

  • Place all marinade ingredients in a food processor and blend until a smooth paste. Combine with chicken and beef pieces (in separate bowls) and leave to marinate in the fridge for at least 1 hour or up to overnight.
  • Thread marinated beef and chicken onto bamboo skewers and set aside until ready to cook.
  • To make the peanut sauce, combine lemongrass, ginger, cumin, coriander and chili paste in a food processor and blend until smooth. Heat oil in a wok and fry the spice paste for a few minutes until fragrant. Add ground peanuts, water, tamarind juice, and sugar. Season with salt and simmer until thick, about 5 minutes.
  • Cook beef and chicken satay on a preheated barbeque or grill plate until cooked through, about 3 minutes each side.
  • Serve satay with peanut sauce, cucumber and red onion.

1 1/2 pounds fillet of beef, or 4 whole chicken breasts
1 tablespoon chopped fresh ginger
1 onion, cut into chunks
4 cloves garlic
1 cup low-sodium soy sauce
1 teaspoon sambal (Indonesian chile paste), or 1 hot red chile
Juice of 1 lemon
2 tablespoons sugar
1/2 teaspoon ground cumin
2 tablespoons toasted sesame oil
Peanut Sauce

Steps:

  • Trim fat from beef or chicken. Cut into strips about 3 inches long and 1/2 inch thick. Refrigerate until needed.
  • Combine remaining ingredients in blender, and puree until smooth. Pour over meat, and mix to coat evenly. Marinate at least 1 hour or overnight.
  • Preheat grill or grill pan until hot. Thread a piece of meat lengthwise on each skewer, and grill until done, 2 to 3 minutes on each side. Baste occasionally with marinade during cooking. Serve immediately with peanut sauce.

4 lbs flank steaks or 4 lbs boneless chicken breasts
4 fluid ounces peanut oil
1 stalk lemongrass, minced
1 tablespoon minced garlic
1 1/2 teaspoons crushed chili peppers
1 tablespoon curry powder
1 tablespoon honey
1 fluid ounce Thai fish sauce or 1 fluid ounce vietnamese fish sauce
1 3/4 cloves garlic, minced
1/2 ounce cilantro, minced
13 1/2 ounces peanut butter
12 ounces soy sauce
7 1/2 ounces sugar
1 tablespoon rice wine or 1 tablespoon dry sherry
1 1/2-4 1/2 tablespoons chilies, hot

Steps:

  • Method for meat and marinade: Trim the meat and cut into long thin strips.
  • Combine all of the marinade ingredients, add the meat, and let marinate under refrigeration for at least 2 hours and up to 12 hours.
  • Soak bamboo skewers in water for a least 10 minutes before you are ready to grill the satays.
  • Thread the meat on the skewers, one strip per skewer.
  • Skewer meat can be returned to the marinade to hold until cooking time.
  • Place the skewered meat on the grill or boiler rods.
  • Grill or broil undisturbed for about 1 minute, turn and grill 1 minute more for medium rare, or as needed for the desired doneness.
  • Server the satays with the spicy peanut sauce.
  • Method for Spicy Peanut Sauce: Process all ingredients in food processor until smooth.
  • Cover and set aside at room temperature for 1 hour or overnight in the refrigerator.
  • Bring to room temperature before using, and stir briskly or reprocess to mix.

2 tablespoons lime juice
2 tablespoons light brown sugar
1 tablespoon grated fresh ginger

Steps:

  • For the satay: Whisk together the coconut milk, vegetable oil, lime juice, brown sugar, ginger, fish sauce, soy sauce, curry powder and garlic in a medium bowl.
  • Cut each chicken breast on the diagonal into 6 strips. Flatten the strips to a 1/4-inch thickness with the back of a chef's knife or meat mallet. Put the strips in a large resealable plastic bag and pour in the marinade. Marinate in the refrigerator, at least 2 hours and up to 6 hours.
  • For the peanut sauce: Meanwhile, heat the peanut oil in a small saute pan over medium-low heat until hot. Add the onion and jalapeno and cook until softened and fragrant, about 5 minutes. Add the garlic and ginger and cook for 20 seconds. Then add the coconut milk, peanut butter and curry paste. Increase the heat to medium and whisk until the mixture comes together, 2 to 3 minutes. Turn off the heat and whisk in the lime juice, soy sauce and fish sauce. If the sauce separates before you are ready to serve, whisk it until it emulsifies and use immediately.
  • Preheat a grill for cooking over medium-high heat. Drain the chicken from the marinade and pat it dry. Thread the chicken onto the skewers. Grill, turning once, until the chicken is cooked through and lightly charred in places, 2 to 3 minutes per side. Serve with the peanut sauce for dipping.

3 pounds beef top round or flank, cut into 1/2-inch thick strips
Peanut Sauce, recipe follows
1 tablespoon peanut oil
1 tablespoon minced garlic
6 slices chile pepper, minced
1 cup peanut butter
1 tablespoon sugar
1/2 teaspoon cayenne pepper
1/4 cup lime juice
1/4 cup soy sauce
1 tablespoon finely chopped lemongrass
12 ounces water

Steps:

  • Combine marinade ingredients in a shallow pan or bowl. Add beef and marinate, in the refrigerator, for 1 to 3 hours. Meanwhile, soak wooden skewers in water for at least 30 minutes.
  • Preheat a grill to medium-high heat. Skewer the meat and then grill for 2 to 3 minutes or until the desired degree of doneness. Serve with peanut sauce.
  • Heat peanut oil in a saute pan over low heat. Add garlic and "sweat" (cook until it softens and releases moisture but does not color) over low heat until fragrant, approximately 1 minute. Add the chile peppers and continue to cook for another minute. Add remaining ingredients and bring to a simmer. Adjust the consistency with additional water, if necessary.

I GOT THIS RECIPE FROM A WEBSITE THAT SAID IT WAS ADAPTED FROM FOOD TV. THIS IS WHAT SHE HAD WRITTEN ABOUT THE RECIPE. For those not familiar with Thai food, chicken satay consists of marinated strips of chicken breast, skewered, grilled and served with a delicious, somewhat spicy, peanut sauce. They are ubiquitous not only in Thai restaurants in the US, but in Thailand itself - where they are sold by street vendors for ridiculously low prices. When we visited Thailand, we were amazed at how much the food served there tasted like the food served at Thai restaurants in America. This is not always the case - Cambodian food in the US, for example, rarely resembles what's available there. I don't know if this is because Thai recipes have become standardized, or because the basic ingredients produce dishes of similar taste regardless of proportions or other ingredients. In any case, we found that this recipe for chicken satay produced a dish that tasted pretty much exactly like the chicken satay served at Thai restaurants here and in Thailand. Needless to say, it was very good. You should be able to buy the necessary ingredients at specialized Asian markets. Thai red curry was not available at my local Safeway, but I could find it easily at a local Asian market. Note that fish sauce usually comes in huge bottles, you only need a little bit, so try to buy the smallest size you can. The stuff is very smelly, but wonderful when mixed with the other ingredients. For my party, I tripled the recipe I'm including here. This was fine for the chicken itself, but it produced way too much peanut sauce. One recipe of peanut sauce would have been enough.

1/2 cup coconut milk
1 tablespoon fish sauce
2 teaspoons red curry paste

Steps:

  • In a bowl, combine all the marinade ingredients except the chicken. Slice the chicken into long, thin strips and pound it to flatten it. Add the chicken to marinade. Turn chicken to coat, cover and refrigerate at least one hour.
  • Thread each chicken strip onto a skewer. Grill for 7 minutes or until done, turning once. Serve with the peanut sauce.
  • Peanut Sauce.
  • • 1 cup coconut milk
  • • 3 tablespoons red curry paste
  • • 1/2 cup chunky peanut butter
  • • 1/2 cup chicken stock
  • • 1/4 cup palm sugar or brown sugar
  • • 2 tablespoons fresh lime juice
  • • 1 teaspoon salt
  • Instructions
  • Put coconut milk in a small saucepan and bring to a boil. Whisk in curry pate until dissolved. Whisk in the peanut butter, chicken stock and sugar. Reduce heat and simmer until smooth, stirring constantly, about 5 minutes. Remove from heat and add lime juice and salt. Set aside to cool to room temperature.

  • Mix together all the Peanut sauce ingredients in a small saucepan, heat gently over low heat until peanut butter is melted and all ingredients are combined and hot. Serve with meat. Satay is always best served with jasmine or white rice.

Banana leaves or ornamental kale
Lime slices
For peanut sauce:
1 cup creamy peanut butter (do not use old-fashioned style or freshly ground)

Steps:

  • For saté: Combine first 5 ingredients in large glass baking dish, Stir until sugar dissolves. Add shrimp, chicken and beef; stir to coat. Cover; chill 30 minutes to 1 hour.
  • Remove shrimp, chicken and beef from marinade. Thread on separate skewers, using about 3 shrimp per skewer and 2 beef or chicken pieces per skewer. Place on platter. (Can be prepared 2 hours ahead. Cover and chill.)
  • Prepare barbecue (medium-high heat) or preheat broiler. Grill skewered meats until cooked through, about 3 minutes per side. Line large platter with banana leaves. Place sauce in bowl in center of platter. Surround with skewers. Garnish with lime and flowers, if desired, and serve.
  • For peanut sauce:
  • Place peanut butter in heavy medium saucepan. Gradually mix in chicken broth. Add all remaining ingredients except lime peel. Stir over medium heat until smooth and thick, about 6 minutes. (Can be prepared 3 days ahead. Cover and refrigerate. Before serving, stir over medium heat until hot, thinning with water if necessary.) Pour sauce into bowl and garnish with lime peel. Makes about 3 cups.

This originates from a small cookbook that was attached to Australian Table Magazine. The satay sauce is good with chicken or beef. If you wish to lighten the fat you could use half and half or fat reduced cream with 2 or 3 drops of coconut essence (add one drop at a time and taste). Diabetic friendly using low fat option and substituting brown sugar with splenda (depending on your tolerence to sugar). Does not include chill time.

750 g rump steak
1/3 cup soy sauce
1/4 cup peanut oil
1 small onion
2 garlic cloves

  • For satay sauce put peanut butter, coconut milk, sugar and chilli in amall saucepan and stir over a medium heat until peanut butter melts and becomes thick. Remove from heat and stir through coriander.
  • Assemble beef satay by threading one or two strips onto presoaked wooden skewers, reserve marinade.
  • Preheat a chargrill or barbecue on high. Cook for about 4 minutes basting with marinade, turning frequently.
  • Serve with satay sauce.

  • (You may marinate the meat overnight if desired) while the beef is marinating, combine the ingredients for the peanut sauce in a saucepan and bring to a slow boil.
  • Simmer 4 to 5 minutes, adjusting consistency with more water or peanut butter as needed, and adjusting seasoning as needed.
  • Thread a piece of the marinated beef on each skewer.

1 tablespoon fresh lemon juice

Steps:
