SPINACH SALAD WITH RED CURRANT VINAIGRETTE

Spinach Salad With Red Currant Vinaigrette image

This is from my cookbook for backpackers, paddlers and campers. The book is called A Fork in the Trail. We often take this salad on picnics, to potluck dinners and on regular camping trips. This is also a recipe you can easily tinker with. Changing the jelly and/or the vinegar can create some interesting combinations.

Provided by A Fork in the Trail

SPINACH SALAD WITH CITRUS VINAIGRETTE

Spinach Salad with Citrus Vinaigrette image

Categories     Salad     Side     Spinach     Raw

Yield 4 to 6 servings

Number Of Ingredients 17

Citrus Vinaigrette
1/2 cup extra-virgin olive oil
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
2 tablespoons freshly squeezed lemon juice
1 tablespoon freshly squeezed orange juice
1 teaspoon fresh thyme leaves, chopped
1 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Spinach Salad
1 (10-ounce) bag of spinach (about 6 cups)
2 oranges, cut into segments (see Note)
1/2 cup sliced almonds, toasted (see page 168)
1/2 red onion, thinly sliced
Salt and freshly ground black pepper
Parmesan Frico (page 229)

Steps:

  • Combine all the ingredients for the Citrus Vinaigrette in a jar or a tight-sealing plastic container. Shake to blend.
  • Combine the spinach, orange segments, almonds, red onion, salt, and pepper in a large bowl. Toss with the Citrus Vinaigrette. Serve on individual plates, topped with 1 or 2 Parmesan Frico.
  • Note
  • To cut orange segments, first use a small sharp knife to cut off the top and bottom of the orange. Stand the orange on one of the cut ends and make long, straight cuts to slice away all of the peel and white pith. Hold the peeled orange in your palm and cut on each side of the membranes to free the segments.

MAMA VI'S SPINACH SALAD WITH CURRY AND CHUTNEY DRESSING

Mama Vi's Spinach Salad With Curry and Chutney Dressing image

My mother took an East Indian cooking class at our local college. When I was a teen she tried out the recipes she liked on us kids. I remember this salad being a favorite of ours. How authentically East Indian it is, I don't know, but it is good and I haven't seen any just like it.

Categories     < 30 Mins

Time 20m

Yield 3 serving(s)

Number Of Ingredients 12

1/4 cup white wine vinegar
1/4 cup salad oil
2 tablespoons fruit chutney
2 teaspoons sugar
1/2 teaspoon salt
1 1/2 teaspoons curry powder
1 teaspoon mustard powder
3 cups fresh spinach leaves
1 1/2 cups Red Delicious apples
1/2 cup raisins
1/2 cup peanuts
2 tablespoons scallions

Steps:

  • Make salad dressing with first seven ingredients, blending to make the salad dressing in a food processor. Set dressing aside, cover and chill in the refrigerator for later use.
  • Prepare the vegetables by tearing the fresh spinach leaves into bite sized pieces.
  • Dice the apple into bite size pieces.
  • Dice the green onions.
  • Measure out raisins and peanuts.
  • In a large salad serving bowl, place torn fresh spinach (on bottom), apple bits, raisins, peanuts and diced green onion.
  • Dress the salad veggies pouring over them the desired amount of dressing you find appropriate to start with, and lightly toss to coat the salad.
  • Serve immediately. Salad wilts and gets soggy if not eaten right away, when prepared.

SPINACH SALAD WITH WARM CRANBERRY VINAIGRETTE

Spinach Salad With Warm Cranberry Vinaigrette image

I heard this recipe described on the Daily Dish by Annie Copps, senior food editor at Yankee Magazine. It sounded so good, I had to try it. It's become one of our favorite salads.

Provided by WorkingMom2three

Categories     Spinach

Time 25m

Yield 4 serving(s)

Number Of Ingredients 16

1 red onion, sliced into thin rings
2 tablespoons olive oil
kosher salt or sea salt
black pepper, freshly ground, to taste
1/2 cup dried cranberries
1 (6 ounce) package Baby Spinach, washed and dried
1/2 cup pumpkin seeds, shelled and lightly toasted (pepitas)
1/4 cup red wine vinegar
2 teaspoons Dijon mustard
1/4 teaspoon mustard powder
1/2 teaspoon kosher salt or 1/2 teaspoon sea salt
1/4 teaspoon black pepper, freshly ground
1 small garlic clove, minced
2 tablespoons cranberry juice
2 teaspoons honey
1/2 cup walnut oil

Steps:

  • In a medium pan over medium-high heat, saute onion in oil until softened and slightly carmelized, about 10 minutes.
  • Season with salt and pepper.
  • While onions are cooking, combine vinegar, mustard, mustard powder, salt, pepper, garlic, cranberry juice, and honey.
  • Toast pumpkin seeds lightly.
  • Add vinaigrette and dried cranberries to onions and heat through.
  • Place spinach in a salad bowl (note: I usually can only find 7oz packages of spinach), pour warmed vinaigrette mixture over salad, add pumpkin seeds, and toss lightly. Serve immediately.
  • Notes: this makes more than 4 servings, but the original recipe said 4. Once I didn't have any cranberry juice, so I used jellied cranberry, and it was fine - the dressing was a little thicker, but still very good!

SPINACH SALAD WITH CURRY VINAIGRETTE - REVIEW BY FRANCE C
Loved the tangy dressing in this simple salad. I don't usually have slab bacon on hand, so I just used thick cut bacon, but I imagine it'd be even better with the nice crispy lardons. Toasting the curry powder really brings out the flavors - just be careful not to over-toast as it can become bitter. This salad is tasty as is, however I have also made it with green onions, grilled …

This salad was a hit at my boyfriend's birthday party. Since he is vegetarian, I substituted the bacon with tempeh "fakin' bacon" which tastes closer to the real thing than any vegi-meat around and has a nice crunchy consistancy. I also added cherry tomatoes. Yummy... I will be making it again.
