Beef and Broccoli is an easy, 1-pan, 30-minute meal that is loaded with fresh broccoli, tender nutrition-packed beef, and the best stir fry sauce. We love this over steamy white rice.

1 lb flank steak (very thinly sliced into bite-sized strips)
2 Tbsp olive oil ((or vegetable oil), divided)
1 lb broccoli ((cut into 6 cups of florets))
2 tsp sesame seeds (optional garnish)
1 tsp fresh ginger (grated (loosely packed))
2 tsp garlic (grated (from 3 cloves))
1/2 cup hot water
6 Tbsp low sodium soy sauce ((or GF Tamari))
3 Tbsp packed light brown sugar
1 1/2 Tbsp corn starch
1/4 tsp black pepper
2 Tbsp sesame oil

Steps:

  • Prep: Start cooking white rice first so it's ready when the stir fry is done. Cover and freeze steak 30 minutes for easier slicing.
  • Combine all stir fry sauce ingredients in a bowl, stir well to dissolve the sugar, and set aside.
  • Place a large skillet over medium heat and add 1 Tbsp oil. Add broccoli florets and sauté 4-5 minutes, partially covered with lid, stirring or tossing several times until broccoli is bright green and crisp-tender then remove from pan. Tip: If you prefer softer broccoli, add 2 Tbsp water before covering with the lid and it will steam cook the broccoli.
  • Increase heat to high heat and add 1 Tbsp oil. Add beef in a single layer and sauté 2 minutes per side or just until cooked through. Quickly pull out a piece to test for doneness.
  • Add the sauce, reduce heat to medium/low and simmer 3-4 minutes. It will thicken. Add broccoli and stir to combine. Stir in 1-2 Tbsp water to thin the sauce if desired. Serve over white rice.

1 teaspoon soy sauce
1 teaspoon Chinese rice cooking wine or dry sherry
1/2 teaspoon cornstarch
1/8 teaspoon freshly ground black pepper
3/4 pound flank or sirloin, sliced thinly across the grain
For the sauce:
2 tablespoons oyster sauce
1 teaspoon Chinese rice cooking wine or dry sherry
1 tablespoon soy sauce
1/4 cup chicken broth
For the stir fry:
3/4 pound broccoli florets
2 tablespoons high-heat cooking oil
2 cloves garlic, very finely minced or pressed through a garlic press
1 teaspoon cornstarch, dissolved in 1 tablespoon water

Steps:

  • Prepare the sauce: Stir together the sauce ingredients (2 Tbsp oyster sauce, 1 teaspoon Chinese rice wine, 1 teaspoon soy sauce, 1/4 cup chicken broth) in a small bowl.
  • Serve immediately: Serve the stir fry immediately, either on its own or over cooked rice.

Tender strips of sirloin and crisp snow peas are cooked in a quick and flavorful sauce in this 25 minute Beef Stir Fry recipe.

1/2 cup low sodium soy sauce
3 tablespoons rice wine ((not rice vinegar - see note))
2 tablespoons corn starch
2 tablespoons brown sugar
1 tablespoon minced fresh ginger
1 clove garlic (, minced)
1 1/2 pounds beef sirloin (, fat trimmed and sliced across the grain, very thin into 1 1/2-inch long pieces)
1 tablespoon sesame oil
1 small head broccoli (, cut into florets)
pinch of salt
1/4 cup water
4 scallions ( , chopped and divided)
1/4 teaspoon red pepper flakes
cooked white rice (, for serving)

Steps:

  • In a bowl, whisk together the soy sauce, rice wine, and cornstarch until dissolved. Then whisk in the brown sugar, ginger, and garlic. Add sliced beef to bowl and toss to coat. Set aside.
  • Warm oil in a heavy nonstick skillet or wok over medium-high heat. Add broccoli, season with a pinch of salt and stir. Pour the water in the pan and immediately cover. Let steam for 2-3 minutes. With a slotted spoon, transfer the broccoli to a separate plate. Set aside.
  • Allow pan to get very hot again. With tongs, add half the meat by spreading it out in the skillet (leaving most of the marinade still in the bowl), along with half the scallions.
  • Let the meat sear, without stirring for 1 minute. Turn meat over and cook for another 30 seconds. Transfer to a clean plate.
  • Repeat with other half of meat, allowing pan to get very hot again first (adding additional oil, if needed.)
  • After turning the meat, add the first plateful of meat, the rest of the marinade, the cooked broccoli, red pepper flakes, and remaining half of the scallions.
  • Stir over high heat for 1 minute to thicken, remove from heat. Check seasonings and add salt only if it needs it.
  • Serve immediately over cooked hot rice and enjoy!
  • NOTE: Mirin is a sweet Japanese rice wine, available at all Asian markets and most common grocery stores. If you can't find it, a good substitute would be dry sherry mixed with a bit of granulated sugar. (Avoid rice wine vinegar, which would give the sauce an acidic taste.)

1 lb ground beef
4 ounces button mushrooms, stems discarded, caps sliced
2 garlic cloves, minced
1 cup frozen pearl onions, thawed
1 1/2 cups nonfat beef broth
1/2 cup dry red wine
2 teaspoons Worcestershire sauce (low sodium if necessary)
1 bay leaf
1/4 teaspoon pepper
1 lb broccoli floret
4 ounces uncooked pasta (gemelli, penne, farfalle, or rotelle)
1/2 cup fat free sour cream
2 tablespoons sliced almonds, dry-roasted if desired

Steps:

  • In a large skillet, cook the ground beef over medium-high heat for 7-8 minutes or until browned, stirring frequently to crumble the meat.
  • Pour into a colander and rinse under hot water to remove excess fat; drain well.
  • Wipe the skillet with a paper towel.
  • Add beef back to skillet along with mushrooms and garlic; cook over medium-high heat for 2-3 minutes or until the mushrooms are tender, stir often.
  • Add in onions, broth, wine, Worcestershire sauce, bay leaf, and pepper; stir to combine.
  • Bring to a boil.
  • Stir in broccoli and pasta.
  • Lower heat and simmer, covered, for 10 minutes or until broccoli and pasta are tender.
  • Remove from heat; stir constantly to cool the mixture slightly.
  • Stir in sour cream and almonds.
  • Cook over low heat for 1-2 minutes or until mixture is warmed through, stirring occasionally (don't let mixture boil b/c the sour cream will curdle).

Steps:

  • Mix the first 7 ingredients. In a large nonstick skillet, heat 1 teaspoon oil over medium-high heat; stir-fry beef until browned, 1-3 minutes.
