MILD CHICKEN CURRY FOR KIDS



Mild Chicken Curry for Kids image

This family-friendly mild chicken curry is creamy, easy to make & absolutely delicious. My 3 kids love this recipe, and I usually serve it with homemade pilau rice and naan bread.

1 Onion (peeled)
2 Garlic Cloves (peeled)
2 tbsp Coriander stalks (not the leaves)
2 cm Root Ginger (peeled)
1 tbsp Olive Oil
4 tbsp Mild Curry Paste (e.g. korma)
1 tsp Turmeric
4 Chicken Breasts (cut into pieces)
50 g Ground Almonds
300 ml Chicken Stock
2 tbsp Mango Chutney
50 ml Double Cream

Steps:

  • Place the onion, garlic, ginger and coriander stalks in a food processor with 2 tablespoons of water and process until a paste forms.
  • Heat 1 tbsp oil in a shallow casserole and fry the onion paste for 5 minutes.
  • Add in the curry paste and turmeric and cook for a further 2 minutes.
  • Add the chicken, stock, ground almonds and mango chutney to the pan and simmer for 20 - 25 minutes until the chicken is cooked.
  • Add in the double cream just before serving. Use coriander leaves to garnish if you wish.

My family and friends love this recipe, it's easy to make and very tasty,I like to eat it over rice with hot naan bread. It's delicious.

1 lb boneless skinless chicken breast, cut into cubes
1 tablespoon olive oil
1 teaspoon curry powder
2 tablespoons white wine
1/2 red pepper, diced
1/2 green pepper, diced
1/2 yellow pepper, diced
1 small onion, diced
2 cloves garlic, crushed
3 tablespoons curry paste (Patak's is very good)
3 teaspoons sultanas
1 teaspoon red pepper powder
1 (14 ounce) can coconut milk
14 ounces canned or cooked baby corn, cut into 1 inch pieces
3 tablespoons instant potato flakes

Steps:

  • Coat chicken with curry powder.
  • Heat oil in wok or deep frying pan, add chicken and brown.
  • Remove chicken and set aside.
  • Keeping juices in pan add wine, peppers and onion, saute until almost tender,add garlic and simmer 3 minutes.
  • Stir in saltanas, red pepper powder and curry paste and cook 2-3 minutes.
  • Add chicken, coconut milk and baby corn, bring to boil (stir when needed) then simmer for 7-8 minutes.
  • Sprinkle in potatoe flakes and stir to thicken,simmer for 5 minites then serve.

  • Heat oil in a wok over medium heat and add the sliced onions. Fry them until they start to brown.
  • Meanwhile, mix all of your spices together in a small bowl - ginger, coriander, cumin, the contents of cardamom pods, cinnamon, garlic, ground black pepper and chilli flakes if using (not advisable for baby - these can be added separately at the end).
