BEA'S FAVORITE MAC AND CHEESE



Bea's Favorite Mac and Cheese image

I like using fusilli for this recipe as it holds so much of the sauce in the noodle, but, you can use other pasta types if you like. I have also used green onions in lieu of regular onions with great results.

1/2 lb fusilli
6 tablespoons butter
3 tablespoons all-purpose flour
1 tablespoon mustard powder
3 cups milk
1/2 cup onion, finely diced
1 bay leaf
1/2 teaspoon sweet paprika
1 large egg
12 ounces old cheddar cheese, shredded
1/2 teaspoon garlic powder
1/2 teaspoon salt
pepper
1 cup panko breadcrumbs

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cook pasta al dente.
  • While the pasta cooks, in a separate pot melt 3 tbsp butter.
  • Whisk in flour and mustard, keep it moving for 5 minutes, ensuring there are no lumps.
  • Stir in milk, onion, bay leaf and paprika. Simmer for 10 minutes and remove bay leaf.
  • Temper in the egg (adding some hot liquid to it before mixing it in).
  • Stir in ¾ of the cheese. Season with salt, pepper and garlic powder.
  • Fold in pasta and pour into a buttered 2 quart casserole dish. Top with remaining cheese.
  • Melt remaining butter in a sauté pan and toss in bread crumbs.
  • Top macaroni with bread crumbs and bake for 30 minutes.
  • Remove from oven and let rest 5 minutes before serving.

2 tablespoons unsalted butter
3 1/2 tablespoons all-purpose flour
1 1/2 cups whole milk
7 ounces Flagship cheese, grated (about 1 3/4 cups)
1 ounce Just Jack cheese, grated (1/4 cup)
½ teaspoon coarse salt
¼ to ½ teaspoon chipotle chili powder
1/8 teaspoon garlic powder
PASTA
6 ounces penne pasta (about 3 ¼ cups)
1 ounce (1/4 cup) Flagship cheese, grated
1 ounce (1/4 cup) Just Jack cheese, grated
¼ to ½ teaspoon chipotle chili powder Instructions

Steps:

  • To prepare sauce, melt butter in a heavy-bottomed saucepan over medium heat and whisk in the flour. Continue whisking and cook for 2 minutes. Slowly add milk, whisking constantly. Cook until sauce thickens, about 10 minutes, stirring frequently. Remove from heat. Add cheeses, salt, chili powder and garlic powder. Stir until cheese is melted and all ingredients are incorporated, about 3 minutes. Set aside. Preheat oven to 350F. Butter or oil an 8-inch baking dish. Cook penne 2 minutes less than package directions. (It will finish cooking in the oven.) Rinse pasta in cold water and drain well. Combine pasta and sauce in a medium bowl; mix carefully but thoroughly. Scrape the pasta into the prepared baking dish. Sprinkle top with cheeses and then the chili powder. Bake, uncovered, 20 minutes. Let stand 5 minutes before serving.

  • Cook pasta.
  • combine milk and beans in food processor or blender.
  • pour into saucepan, heat 1-2 minutes, add cheese and cook until smooth and creamy. Add remaining spices. Stir in noodles, serve warm.

This is a macaroni and cheese I first made 3 years ago when I was in California. When I got back to Texas I made it for my mom. This is now her favorite baked macaroni and cheese. She begs me to make it when I come to visit.

2 tablespoons butter
¼ cup finely chopped onion
2 tablespoons all-purpose flour
2 cups milk
¾ teaspoon salt
½ teaspoon dry mustard
¼ teaspoon ground black pepper
1 (8 ounce) package elbow macaroni
2 cups shredded sharp Cheddar cheese
1 (8 ounce) package processed American cheese, cut into strips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a medium saucepan over medium heat. Saute onion for 2 minutes. Stir in flour and cook 1 minute, stirring constantly. Stir in milk, salt, mustard and pepper; cook, stirring frequently, until mixture boils and thickens.
  • Meanwhile, bring a pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
  • To the milk mixture add the Cheddar and American cheeses; stir until cheese melts. Combine macaroni and cheese sauce in a 2 quart baking dish; mix well.
  • Bake in preheated oven for 30 minutes, or until hot and bubbly. Let cool 10 minutes before serving.
