Transform canned beans into an upmarket bistro style breakfast with the addition of chorizo! Baked beans is a breakfast staple in Australia and the UK. A great one takes hours to make. This is much faster to make than the traditional method, and the extra flavour oomph comes from the chorizo!

6 1/2 oz / 200g chorizo ((Note 1))
1 tbsp olive oil
2 garlic cloves (, minced)
1/2 onion (, diced (white, brown or yellow))
14 oz / 420g canned cannellini beans ((or any other white beans, such as navy), drained)
14 oz / 420g can crushed tomatoes
1/2 cup water
1 tbsp sugar ((brown, white or raw - or even honey))
1 tsp paprika
1 1/2 tsp cumin powder
1/2 tsp cayenne pepper or red chili flakes ((optional))
1 tsp salt
Black pepper
Eggs (, cooked to your liking sunny side up (or poached or boiled))
Sourdough bread slices (, toasted)

Steps:

  • Dice most of the chorizo, leaving some in slice form if you want to use them for garnish like I did.
  • Heat the olive oil in a skillet over high heat.
  • Add the garlic and onions and cook for 2 minutes or until starting to turn translucent.
  • Add the chorizo (all of it) and saute until the chorizo is nicely browned.
  • Add the remaining Baked Beans ingredients. Bring to simmer, then turn it down to medium low and leave to bubble away gently for 10 minutes or so, stirring occasionally. Add a splash of water if it gets too thick to your liking.
  • Adjust salt and pepper to taste.

2 cups rice, cooked
3 cups beans, cooked
1 tablespoon olive oil
3 garlic cloves, minced
1 tablespoon ground chipotle chile pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried cilantro
1 teaspoon annatto seasoning
1 medium onion, chopped
salt and pepper

Steps:

  • Cook rice as directed.
  • In a large skillet, saute onion, garlic and chorizo in olive oil. When onion is transparent, drain grease and add remaining ingredients.
  • Cook until warmed through.
  • Stir into cooked rice and serve.

Here's what you need: beans, chorizo, onion, ripe tomato, carrot, medium potatoes, peppers, garlic, ham bone, bay leaves, water, pimentón, extra virgin olive oil, salt

1 lb beans, steeped in water for 12 hours
½ lb chorizo, sliced
1 onion, chopped
1 ripe tomato, chopped
1 carrot, chopped
2 medium potatoes, diced
2 peppers, one green and one red, both chopped
3 cloves garlic, minced
1 piece ham bone
2 bay leaves
1 qt water
1 pimentón
extra virgin olive oil
salt

Steps:

  • Fry the onion and garlic for 5 minutes in an oil-coated saucepan on low heat. Once caramelized, add the chorizo and the ham bone and fry for a few more minutes.
  • Add the paprika and the beans, stir a little and cover with water. Add the vegetables and season with salt and pepper.
  • Bring to boil, lower the temperature to medium-low, and cook for about two hours with the lid on. During this time add half a glass of cold water twice.
  • Half an hour before the end of the cooking time, add the potatoes. Finally, remove the ham bone and bay leaf, mash the vegetables and return to the pot.
  • Serve warm.

These Mexican Baked Beans with Chorizo are smoky, sweet, and spicy! This gluten free recipe makes a TON, and it's freezable. Serve as a side at your next BBQ, piled on toast, or with fried eggs for brunch.

8 oz. Pork Chorizo (such as Cacique®)
1 onion (diced)
2 jalapeño peppers (seeds and ribs removed, finely diced)
2 cloves garlic (minced)
1 tablespoon smoked paprika
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon kosher salt (plus more if needed)
6 oz. can tomato paste
1/4 cup molasses
1/4 cup brown sugar (packed (light or dark is fine))
1/4 cup apple cider vinegar
60 oz. pinto beans (four small cans, drained and rinsed)
1/2 cup water
1/4 cup chopped fresh cilantro (plus more for serving)
juice of one lime

Steps:

  • Preheat oven to 350 degrees F.
  • In a dutch oven (or other heavy, deep oven-proof skillet or pot), cook the pork chorizo over medium-high heat until browned, breaking it up into small crumbles as you go (about 3 minutes).
  • Add the onions and jalapeño peppers. Sauté until softened and browned (about 3 minutes).
  • Add the two cloves of minced garlic. Sauté until fragrant (about 30 seconds).
  • Add the smoked paprika (1 tablespoon), chili powder (1 tablespoon), cumin (1 tablespoon), and kosher salt (1 teaspoon). Stir to coat.
  • Add the whole can of tomato paste. Stir to coat and cook for about 1 minute, until it starts to turn a deep color.
  • Add the molasses (1/4 cup), brown sugar (1/4 cup) and apple cider vinegar (1/4 cup) and stir until sugar has melted and all ingredients are incorporated (about 3-4 minutes).
  • Add the four cans of drained and rinsed pinto beans and water (1/2 cup) and stir.
  • Place pot in preheated oven and bake for 45 minutes to an hour, uncovered, until thick and bubbly.
  • Stir in lime juice and fresh cilantro. Serve hot with extra cilantro for garnish. Season with more salt to taste, if needed.

8 ounces dried cannellini beans, soaked overnight
extra virgin olive oil
1 medium onion, finely sliced
3 garlic cloves, finely sliced
3/4 lb chorizo sausage, cubed
1 bunch fresh sage, torn into sprigs
sea salt & freshly ground black pepper
pecorino cheese, shaved, to serve

Steps:

  • Drain the soaked cannelloni beans and place them in a large saucepan.
  • Add in enough cold water to cover the beans and bring to the boil.
  • Cook briskly until tender, around 1 hour, topping up with more water as required. Drain the beans, reserving the cooking water.
  • Heat a splash of olive oil in a heavy-based frying pan. Add in the onion, garlic and chorizo.
  • Fry, stirring, for 2 minutes.
  • Add in the beans and sage and pour over enough of the reserved cooking water to just cover the beans.
  • Season with sea salt and freshly ground pepper and cook, stirring often, until the liquid has evaporated, around 10 minutes.
  • Transfer to a serving dish and drizzle with olive oil. Serve warm with a little grated Pecorino cheese.

1 quart water (or more)
1 lb black beans, sorted and rinsed
1 medium onion, sliced
1/4 cup lard, plus
2 teaspoons lard (or 1/4 c. plus 2 T.solid vegetable shortening)
2 large garlic cloves, halved
2 sprigs epazote or 2 teaspoons dried oregano
1 cup diced red onion
5 jalapenos, seeded, deveined and minced
1 lb chorizo sausage, casing removed
salt
4 1/2 ounces grated cheddar cheese (about 1 1/8 cups) or 4 1/2 ounces monterey jack cheese (about 1 1/8 cups)
finely chopped green onions (to garnish) or red onion, to garnish
minced fresh cilantro leaves (garnish)

Steps:

  • Bring water,beans,sliced onion,2 tablespoons lard and garlic to boil in heavy Dutch oven.
  • Reduce heat and simmer 1 1/2 hours.
  • Add epazote (or oregano) and simmer until beans are tender, adding water as needed, about 30 minutes.
  • Puree bean mixture through medium disc of food mill or coarsely chop in food processor using on/off turns; return to Dutch oven.
  • Heat remaining 1/4 cup lard in heavy large skillet over medium-low heat.
  • Add 1 Celsius red onions and 1 tablespoon minced chilies.;cover and cook until onion is translucent, stirring occasionally, about 10 minutes.
  • Increase heat to medium-high, add sausage and cook until no longer pink, breaking up with fork or potato masher, about 10 minutes.
  • Add to beans and bring to a boil; reduce heat,cover and simmer until mixture thickens, stirring occasionally, about 15 minutes.
  • Add salt to taste.
  • Cool completely, then refrigerate overnight.
  • Bring beans to room temperature; taste and adjust seasoning.
  • Preheat oven to 350 degrees.
  • Grease a large casserole and fill with beans.
  • Sprinkle with cheese, cover and bake until bubbling, about 20-30 minutes.
  • Serve immediately, passing remaining chilies, green onion and cilantro separately.

  • 4. Put the chicken and any juices back into pan.Bring to a simmer, then cover and cook in the oven for 30-40 minutes.
  • 5. Remove the thyme and bay leaf, and stir in spinach until it wilts. Serve and enjoy!
  • I give this recipe 5 STARS. It's simple to cook, very tasty, and a hearty meal perfect for winter. It's also fool proof just follow the simple recipe and you cant go wrong!
