- Preheat oven to 375 degrees.
- In a 2-quart Dutch oven, cook bacon over medium, flipping occasionally, until some of the fat is rendered and bacon is browned in places, about 7 minutes. Transfer to a plate.
- In a large bowl, combine maple syrup, mustard, ketchup, brown sugar, chicken broth, Worcestershire, and garlic. Stir in beans. Season with 1 1/2 teaspoons salt and 1/2 teaspoon pepper.
- Transfer beans to Dutch oven and top with bacon and thyme. Bake, covered, for 30 minutes. Uncover and continue to bake until liquid has thickened and bacon is brown, about 40 minutes more. Let sit 5 minutes; mix well before serving.

- Heat oil over high heat (can skip oil if bacon is super fatty). Add bacon and cook for 2 minutes.
- Add onion and garlic. Cook for 3 minutes until onion and bacon are golden.
- Add remaining ingredients. Stir, bring to simmer, then place lid on.
- Then either turn down heat to medium low (simmering gently) and cook on the stove for 1 hour, stirring every now and then so the bottom doesn't catch. OR bake at 160°C/325°F for 60 minutes.
- SLOW COOKER option: Reduce water to 1/4 cup, transfer to slow cooker and cook for 6 hours on low.

- In a large saucepan over medium high heat, combine the beans, tomato sauce, chicken stock and onions. Bring to a low boil, reduce heat to low and simmer for 10 to 15 minutes.

- Pick through the beans and give them a rinse. Put them in a bowl and cover them with water by two inches. Let them soak overnight.Drain the beans and place them in a pot. Add the chicken stock and 4 cups of water. Bring to a boil, then reduce to a simmer. While the beans are cooking, cook the bacon in a large skillet over medium heat until just barely crisp. Remove to a paper towel lined plate. Add 2/3 of the bacon to the beans and reserve the rest for garnish.Drain the bacon grease from the pan and add the onions, carrots, and celery. Season them with some salt and pepper and cook until just beginning to soften, about 3 to 4 minutes. Add the garlic and tomato paste and cook for another minute or two. Add the vegetables to the beans. Add the bay leaf and give it a good stir. Cover and cook on low (to medium-low) until the beans are tender, about 1 1/2 hours. BROAD BEANS WITH BACON

- Boil the beans in salted water for 5 minutes or until just tender. Drain and set aside.
- In a large frying pan, fry the bacon over a high heat to release the fat. You might need a splash of oil, depending on whether on the type of bacon you're using.
- Continue frying the bacon until deeply browned.
- Add the beans to the bacon and fry for 5 minutes, stirring frequently to cover them in the fat and flavour.

- In a large heavy bottomed pan, cook the bacon over medium heat. Remove bacon to a paper towel-lined plate. Remove all but 1 tablespoon of the bacon fat.
- Add vegetables to pan and cook until onions are translucent and carrots and celery are beginning to soften, 4-5 minutes.
- Add garlic and tomato paste and cook, stirring, for another minute or until fragrant.

- Combine beans, water, garlic, tomato, and salt in slow cooker.
- Cover. Cook on high 5 hours, stirring occasionally. When the beans become soft, drain off some liquid.
- While the beans cook, brown bacon in skillet. Drain, reserving drippings. Crumble bacon. Add half of bacon and 3 tablespoons drippings to beans. Stir.
- Mash or puree beans with a food processor. Fry the mashed bean mixture in the remaining bacon drippings. Add more salt to taste.
- To serve, sprinkle the remaining bacon and shredded cheese on top of beans.
- VARIATIONS:.
- Instead of draining off liquid, add 1/3 cup dry minute rice and continue cooking about 20 minutes. Add a dash of hot sauce and a dollop of sour cream to individual servings.
- Instead of frying the mashed bean mixture, place several spoonfuls on flour tortillas; roll up, and serve.

- Blanch beans in salted boiling water for 1 min. Drain, shock in cold water, drain again; set aside.
- In a large frypan, toast almonds over medium heat until golden. Immediately transfer to a small dish; set aside. Return frypan to heat and cook bacon until crisp, 5 to 6 min. Drain on paper towels; set aside.

- Boil the beans in 9 cups of the water and then let sit for one hour. Drain and set aside.
- Cook the bacon to your desired texture (it can be soft or crisp, whatever you prefer) and drain except for 1/4 cup grease. Coarsely chop the bacon.

- Toss the green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and shock in a large bowl of ice water to stop the cooking. Drain the beans again and pat dry.

- Blanch green beans. Take a medium to a large pot, fill with water enough to cover the beans later. Add salt and take it to a boil. Reduce the heat and lower the green beans into the water. Cook on medium heat for 3 minutes. Remove the beans from water with kitchen tongs or a slotted spoon and lower them into prepared ice-cold water to stop the cooking process. Once cooled to touch, drain in a colander and pat dry the beans with a kitchen towel.
- Meanwhile, preheat the oven to 350 F (180C).
- Fried onions. While the oven is getting warm, prepare the fried onions. In a large bowl, mix flour, breadcrumbs, salt, and pepper. Toss the onions in the mixture making sure they are fully coated. Heat oil in a medium or large saucepot (or a wide and deep skillet). When the oil is hot enough (about 375 F) that it is sizzling (make a test by lowering one onion slice into the oil, if sizzling, your oil is ready!)
- Add a bunch of onion slices and fry until they become golden brown turning them over once making sure they are browned on all sides. You may need to do it in batches depending on the size of your pot or skillet. Don't overcrowd the pot.
- The process is quick, don't leave them unattended! Once browned, spread them out on a cooling rack to remove the excess oil making sure the fried onion slices don't touch one another. The onions will darken even more once cooled.
- Make the creamy sauce. In a large skillet, melt the butter over medium heat. Add mushrooms and saute for about 1 minute. Make space in the middle and add garlic, season the mix with salt and pepper. Stir to combine and saute until garlic becomes fragrant and mushrooms golden brown.
- Next, lower the heat and stir in the flour making sure to coat the mushrooms. Pour in ½ of the chicken/vegetable broth, stir and continue slowly adding the broth until all is used.
- Simmer for few minutes and follow with cream, cajun, and parmesan. Stir constantly until sauce has thickened. The sauce will not thicken in the oven later.
- Lower the green beans into the skillet and stir again until well combined. Remove from the heat.
- Casserole Assemble and Baking. Place the green beans sauce in a 9 x 13-inch baking dish, add a layer of bacon and cheddar cheese on top. Top with fried onions in the middle or all over the dish (your call!). Cover the dish with foil and bake for 15 minutes. Take off the foil and bake another 5-10 minutes until cheese has melted and the sides bubbly.
- Serve immediately while warm.
