Baked Beans with Bacon image

A couple slices of bacon add just the right amount of richness to this sweet-and-savory side dish.

3 slices bacon, halved crosswise (4 ounces)
1/4 cup pure maple syrup
1/4 cup Dijon mustard
1/2 cup ketchup
2 tablespoons light-brown sugar
3/4 cup low-sodium chicken broth
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic (2 to 3 cloves)
3 cans (each 15 ounces) navy beans or small white beans, rinsed and drained
Kosher salt and freshly ground pepper
3 sprigs thyme

Steps:

  • Preheat oven to 375 degrees.
  • In a 2-quart Dutch oven, cook bacon over medium, flipping occasionally, until some of the fat is rendered and bacon is browned in places, about 7 minutes. Transfer to a plate.
  • In a large bowl, combine maple syrup, mustard, ketchup, brown sugar, chicken broth, Worcestershire, and garlic. Stir in beans. Season with 1 1/2 teaspoons salt and 1/2 teaspoon pepper.
  • Transfer beans to Dutch oven and top with bacon and thyme. Bake, covered, for 30 minutes. Uncover and continue to bake until liquid has thickened and bacon is brown, about 40 minutes more. Let sit 5 minutes; mix well before serving.

Steps:

  • Start by trimming the ends of your green beans and slice into 2 inch pieces. Bring a large pot of water to a boil and add the green beans. Cook until tender 5-8 minutes and drain and put the green beans in an ice bath.
  • In a medium sized skillet cook the bacon until crisp. Remove with a slotted spoon and drain the fat. Add the butter to the skillet and garlic and saute until tender. Add bacon, green beans, and parmesan cheese to the skillet and cook until heated through. Salt and pepper to taste.

1 tbsp oil
150g/ 5 oz bacon (, chopped)
1 medium onion (, finely chopped)
3 cloves garlic (, minced (or 1 1/2 tsp garlic paste))
3 x 400g / 14oz cans red kidney or other beans, drained and rinsed ((Note 1))
3/4 cup ketchup ((Note 2))
3/4 cup tomato passata / US tomato puree ((Note 3))
1/4 cup molasses ((Note 4))
2 tbsp cider vinegar
3/4 cup water
2 tsp mustard powder ((or 1 tbsp Dijon or American mustard))
1 1/2 tsp Worcestershire sauce
1/2 tsp cayenne pepper
3/4 tsp EACH salt & pepper (, plus more to taste)

Steps:

  • Heat oil over high heat (can skip oil if bacon is super fatty). Add bacon and cook for 2 minutes.
  • Add onion and garlic. Cook for 3 minutes until onion and bacon are golden.
  • Add remaining ingredients. Stir, bring to simmer, then place lid on.
  • Then either turn down heat to medium low (simmering gently) and cook on the stove for 1 hour, stirring every now and then so the bottom doesn't catch. OR bake at 160°C/325°F for 60 minutes.
  • SLOW COOKER option: Reduce water to 1/4 cup, transfer to slow cooker and cook for 6 hours on low.
  • The sauce should be thickened (cook with lid off for a bit if not thick enough) and glossy. Adjust salt and pepper to taste at the end. See notes for serving suggestions!

1 (8 ounce) can tomato sauce
2 cups chicken broth
¼ cup chopped onion
6 thick slices bacon, cooked and cubed

Steps:

  • In a large saucepan over medium high heat, combine the beans, tomato sauce, chicken stock and onions. Bring to a low boil, reduce heat to low and simmer for 10 to 15 minutes.

I'm sorry to be posting so many soups lately, but it's been darn cold on the ranch and soups seem to be the only coping mechanism I have.

1 lb. Great Northern White Beans
4 c. Low Sodium Chicken Stock
1 lb. Thick-cut Bacon, Cut Into 1 Inch Pieces
1 whole Onion, Diced
2 whole Large Carrots, Peeled And Diced
2 stalks Celery, Diced
Salt And Pepper, to taste
4 cloves Garlic, Minced
2 tbsp. Tomato Paste
2 whole Bay Leaves
Minced Parsley, To Taste
3 whole Roma Tomatoes, Chopped (optional)

Steps:

  • Pick through the beans and give them a rinse. Put them in a bowl and cover them with water by two inches. Let them soak overnight.Drain the beans and place them in a pot. Add the chicken stock and 4 cups of water. Bring to a boil, then reduce to a simmer. While the beans are cooking, cook the bacon in a large skillet over medium heat until just barely crisp. Remove to a paper towel lined plate. Add 2/3 of the bacon to the beans and reserve the rest for garnish.Drain the bacon grease from the pan and add the onions, carrots, and celery. Season them with some salt and pepper and cook until just beginning to soften, about 3 to 4 minutes. Add the garlic and tomato paste and cook for another minute or two. Add the vegetables to the beans. Add the bay leaf and give it a good stir. Cover and cook on low (to medium-low) until the beans are tender, about 1 1/2 hours. Add a cup of broth if the liquid level gets too low. When ready to serve, taste and add more salt and pepper if needed. If desired, stir in the tomatoes. Serve with chopped reserved bacon and chopped parsley.

8 ounces thick cut bacon, diced
1 cup diced yellow onion ( (about 1 medium onion))
1 cup diced carrots ( (about 2 carrots))

1 clove garlic, minced

4 cups chicken broth, unsalted
3 cups water
3 (15 oz) cans great northern beans, rinsed and drained ((or 1 lb. dry beans, see note))

Steps:

  • In a large heavy bottomed pan, cook the bacon over medium heat. Remove bacon to a paper towel-lined plate. Remove all but 1 tablespoon of the bacon fat.
  • Add vegetables to pan and cook until onions are translucent and carrots and celery are beginning to soften, 4-5 minutes.
  • Add garlic and tomato paste and cook, stirring, for another minute or until fragrant.
  • Add chicken broth, water, beans, bay leaves, thyme, salt, pepper, and half of bacon. Bring to boil, reduce to simmer and cook, partially covered, for 15-20 minutes or until vegetables are soft.

2 cups dried red beans or 2 cups dried pinto beans
6 cups water
2 garlic cloves, minced
1 large tomatoes, peeled, seeded, and chopped or 1 pint tomato juice
1 teaspoon salt
1/2 lb bacon
shredded cheese

Steps:

  • Combine beans, water, garlic, tomato, and salt in slow cooker.
  • Cover. Cook on high 5 hours, stirring occasionally. When the beans become soft, drain off some liquid.
  • While the beans cook, brown bacon in skillet. Drain, reserving drippings. Crumble bacon. Add half of bacon and 3 tablespoons drippings to beans. Stir.
  • Mash or puree beans with a food processor. Fry the mashed bean mixture in the remaining bacon drippings. Add more salt to taste.
  • To serve, sprinkle the remaining bacon and shredded cheese on top of beans.
  • VARIATIONS:.
  • Instead of draining off liquid, add 1/3 cup dry minute rice and continue cooking about 20 minutes. Add a dash of hot sauce and a dollop of sour cream to individual servings.
  • Instead of frying the mashed bean mixture, place several spoonfuls on flour tortillas; roll up, and serve.

1/3 cup Compliments Sliced Almonds 75 mL
4 slices Compliments Thick Slice Bacon, cut into 1/4-in. (5 mm) pieces
6 cloves garlic, thinly sliced
1/2 lemon, zested and juiced
½ tsp cracked black pepper 2 mL

Steps:

  • Blanch beans in salted boiling water for 1 min. Drain, shock in cold water, drain again; set aside.
  • In a large frypan, toast almonds over medium heat until golden. Immediately transfer to a small dish; set aside. Return frypan to heat and cook bacon until crisp, 5 to 6 min. Drain on paper towels; set aside.
  • Drain off about half the bacon fat from the pan. Add the garlic to the pan and cook on medium heat until golden, about 2 min. Transfer garlic onto the paper towels.
  • Put reserved green beans into the pan. Stir-fry over medium-high heat about 2 min., until green beans look lightly roasted. Remove from heat. Stir in reserved almonds, bacon and garlic, plus the lemon zest and juice, pepper and salt. Serve immediately.

9 cups water
1 pound bacon
2 onions, chopped
2 stalks celery, chopped
4 teaspoons chicken bouillon
1 bay leaf
⅓ teaspoon salt

⅛ teaspoon ground cloves
1 (16 ounce) can diced tomatoes
4 cups water

Steps:

  • Boil the beans in 9 cups of the water and then let sit for one hour. Drain and set aside.
  • Cook the bacon to your desired texture (it can be soft or crisp, whatever you prefer) and drain except for 1/4 cup grease. Coarsely chop the bacon.
  • Add the onions and celery to the reserved grease and bacon and saute until soft, do not drain. Add the chicken base or cubes, 4 cups water, beans, bay leaf, salt, pepper, and cloves, and simmer for 2 hours.

Steps:

2 cups dried navy beans, picked over, soaked in water to cover overnight and drained
2 -3 slices bacon, cooked until the fat is rendered but not crispy

1 bouquet garni (1/2 tsp. dried oregano, 3 sprigs parsley, 1/2 fresh sage leaf and 1 bay leaf wrapped in cheesecloth)

2 1/2 pounds green beans, trimmed
Kosher salt
1/2 pound bacon, roughly chopped
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 teaspoon red pepper flakes
1/2 cup chopped toasted pecans
Juice of 1/2 lemon
Freshly ground pepper

Steps:

  • Toss the green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and shock in a large bowl of ice water to stop the cooking. Drain the beans again and pat dry.
  • Cook the bacon in a large, heavy saute pan until crisp, about 5 minutes. Remove the bacon to a paper towel-lined plate to drain. Spoon off the excess bacon grease, leaving 2 tablespoons in the pan. Add the onion to the pan and saute until soft and very tender, 4 to 5 minutes. Sprinkle in the garlic and red pepper flakes and saute until just fragrant, about 1 more minute. Add the reserved green beans and the pecans and cook until heated through, 5 to 6 minutes more. 1 pound thick-cut bacon, cut into 1-inch pieces
2 large carrots, chopped

2 Roma tomatoes, diced
Chopped fresh parsley, for garnish

  • Pick through the beans, then rinse and drain them. Put them in a large pot and cover with water by 2 inches. Let soak overnight.
  • Drain the beans and return them to the pot. Add the chicken stock and 4 cups of water. Bring to a boil and reduce to a simmer.
  • While the beans are simmering, cook the bacon in a large skillet over medium heat until crisp, 8 to 10 minutes. Remove to a paper towel-lined plate to drain. Add half the bacon to the beans, reserving the rest for garnish.
  • Remove all but 2 tablespoons of the bacon grease from the skillet and add the carrots, celery and onions. Season with some salt and pepper and cook until the vegetables are just beginning to soften, 3 to 4 minutes. Add the tomato paste and garlic and cook for another minute, stirring to combine.
  • Using a slotted spoon, add the vegetables to the beans. Add the bay leaves and give it a good stir. Taste to check if it needs any additional seasoning. Simmer until the beans are tender, 1 to 1 1/2 hours.
  • When ready to serve, stir in the tomatoes. Serve with the reserved bacon and chopped parsley.

1 1/2 pound fresh green beans washed and trimmed
7-10 bacon slices cooked and crumbled
1/2 cup cheddar grated
4 tbsp butter
8 oz fresh cremini or white button mushrooms sliced
4 medium garlic cloves minced
2 1/2 tablespoon gluten-free flour or regular all-purpose
1/2 cup vegetable or chicken broth or bouillon cube more if needed roo thick
1 cup heavy cream
1/2 cup parmesan grated
1 teaspoon cajun spice
1/2 teaspoon salt or more to taste
1/4 teaspoon black pepper or to taste
1 large red onion sliced into thin half-moon circles
3 tablespoon gluten-free flour
3 tablespoon gluten-free breadcrumbs
salt and pepper to taste
Peanut or canola oil for cooking preferred but can use other oil of choice

Steps:

  • Blanch green beans. Take a medium to a large pot, fill with water enough to cover the beans later. Add salt and take it to a boil. Reduce the heat and lower the green beans into the water. Cook on medium heat for 3 minutes. Remove the beans from water with kitchen tongs or a slotted spoon and lower them into prepared ice-cold water to stop the cooking process. Once cooled to touch, drain in a colander and pat dry the beans with a kitchen towel.
  • Meanwhile, preheat the oven to 350 F (180C).
  • Fried onions. While the oven is getting warm, prepare the fried onions. In a large bowl, mix flour, breadcrumbs, salt, and pepper. Toss the onions in the mixture making sure they are fully coated. Heat oil in a medium or large saucepot (or a wide and deep skillet). When the oil is hot enough (about 375 F) that it is sizzling (make a test by lowering one onion slice into the oil, if sizzling, your oil is ready!)
  • Add a bunch of onion slices and fry until they become golden brown turning them over once making sure they are browned on all sides. You may need to do it in batches depending on the size of your pot or skillet. Don't overcrowd the pot.
  • The process is quick, don't leave them unattended! Once browned, spread them out on a cooling rack to remove the excess oil making sure the fried onion slices don't touch one another. The onions will darken even more once cooled.
  • Make the creamy sauce. In a large skillet, melt the butter over medium heat. Add mushrooms and saute for about 1 minute. Make space in the middle and add garlic, season the mix with salt and pepper. Stir to combine and saute until garlic becomes fragrant and mushrooms golden brown.
  • Next, lower the heat and stir in the flour making sure to coat the mushrooms. Pour in ½ of the chicken/vegetable broth, stir and continue slowly adding the broth until all is used.
  • Simmer for few minutes and follow with cream, cajun, and parmesan. Stir constantly until sauce has thickened. The sauce will not thicken in the oven later.
  • Lower the green beans into the skillet and stir again until well combined. Remove from the heat.
  • Casserole Assemble and Baking. Place the green beans sauce in a 9 x 13-inch baking dish, add a layer of bacon and cheddar cheese on top. Top with fried onions in the middle or all over the dish (your call!). Cover the dish with foil and bake for 15 minutes. Take off the foil and bake another 5-10 minutes until cheese has melted and the sides bubbly.
  • Serve immediately while warm.
