1 cup navy beans, soaked in water overnight and drained
4 cups water
2 sprigs fresh thyme
1 bay leaf
1 clove garlic, peeled and crushed
1 pound shrimp, cooked and shelled
1 cup slivered fennel
1 teaspoon salt
Freshly ground pepper to taste
2 tablespoons chopped fresh chives, for garnish
4 teaspoons Sherry vinegar
4 teaspoons olive oil
2 tablespoons chopped fresh tarragon
1/4 teaspoon salt
Freshly ground pepper to taste

Steps:

  • To make the salad, place the beans, water, thyme, bay leaf and garlic in a medium saucepan and bring to a boil. Reduce to a simmer, cover and cook until the beans are tender but not mushy, about 45 minutes. Drain and remove thyme, bay leaf and garlic. Place in a large bowl and set aside until cool. Toss in the shrimp, fennel, salt and pepper.
  • To make the vinaigrette, whisk together all ingredients. Toss with the salad. Divide among 4 plates, garnish with the chives and serve.

8 ounces dried white beans or 2 (15-ounce) cans Great Northern or cannellini beans
Salt
2 bay leaves, if using dried beans
1 pound asparagus
1/2 cup tarragon leaves
1 teaspoon packed finely grated lemon zest
2 garlic cloves, peeled
1/4 teaspoon freshly ground black pepper
1 large lemon, juiced, plus more to taste
1/2 cup olive oil

Steps:

  • If using canned beans, drain and rinse. If using dried beans, soak in plenty of water for 6 hours or overnight. Drain beans and transfer to a medium pot. Cover beans by 2 inches with water and add 1 1/2 teaspoons salt and the bay leaves. Simmer until just tender but not at all mushy, about 45 minutes to 1 1/2 hours, depending upon what kind of beans you're using. Drain.
  • Break off tough ends of the asparagus. Bring a medium pot of salted water to a boil and prepare a bowl with ice and cold water. Blanch trimmed asparagus for 1 1/2 minutes, or until just cooked through but still firm, then plunge them into the ice bath. Let sit for 5 minutes, then drain. Pat dry and slice diagonally into 1/2-inch pieces.
  • In a blender or food processor, combine tarragon, lemon zest, garlic, 1 teaspoon salt, the black pepper and the lemon juice, and process until garlic is chopped. Pour in olive oil. Process until mixture is well blended and bright green, about 1 minute.
  • In a large mixing bowl, gently toss together beans, asparagus and dressing. Taste and add more lemon juice and salt if needed.

2 cloves garlic
1/3 cup lemon juice
1 teaspoon ground cumin
1 teaspoon honey
1 teaspoon Dijon mustard
2/3 cup extra-virgin olive oil
Salt and pepper
3 stalks celery, finely chopped
1 bunch green onions, green parts only, finely chopped
One 15-ounce can black beans, drained
One 15-ounce can red kidney beans, drained
One 15-ounce can white beans, drained
Salt and pepper
3 tablespoons chopped fresh parsley

Steps:

  • For the lemon vinaigrette: Using a rasp grater, grate the garlic into a bowl. Add the lemon juice, cumin, honey and Dijon. Whisk in the olive oil and season with salt and pepper.
  • For the 3-bean salad: Mix the celery, green onions, black beans, kidney beans and white beans in a large bowl.
  • Dress the salad with 1/4 cup of the vinaigrette and toss well. Season with salt and pepper and toss with the parsley.

1/4 cup pine nuts, plus for garnish
1 cup mayonnaise
1/3 cup grated pecorino cheese, plus 2 tablespoons for garnish
1 tablespoon lemon juice
1 tablespoon Dijon mustard
4 anchovy fillets
3 dashes Worcestershire sauce
Pinch cayenne pepper
Kosher salt and freshly ground black pepper
1 pound green beans, chopped
4 tomatoes, sliced
1 bunch basil, leaves torn

Steps:

  • For the vinaigrette: In a skillet over medium-low heat, toast the pine nuts, stirring occasionally, until golden and fragrant, 4 to 5 minutes. Remove from the heat and set aside. (Alternatively, place the pine nuts on a baking sheet and toast in a 350-degree oven until golden, 6 to 8 minutes.)
  • In a blender, combine the mayonnaise, pecorino, toasted pine nuts, lemon juice, Dijon, anchovies, Worcestershire, cayenne and a pinch of salt and pepper. Blend until smooth. Set aside.
  • For the salad: Bring a large pot of salted water to a boil. Blanch the beans until crisp-tender, 5 to 7 minutes. With a slotted spoon, remove the beans to a serving plate and add the sliced tomatoes and torn basil. Drizzle with the vinaigrette, and sprinkle with some pine nuts and the 2 tablespoons pecorino. Season with salt and pepper.

1-1/2 pounds fresh green beans, trimmed
2 cups thinly sliced radishes
1/2 cup pecan or walnut pieces, toasted
1/4 cup tarragon leaves
3 tablespoons grated Parmesan cheese
1/2 garlic clove
1/4 teaspoon coarse sea salt or kosher salt
1/8 teaspoon crushed red pepper flakes
1-1/2 teaspoons white wine vinegar
1/4 cup olive oil

Steps:

  • In a 6-qt. stockpot, bring 8 cups water to a boil. Add beans in batches; cook, uncovered, 2-3 minutes or just until crisp-tender. Remove beans and immediately drop into ice water. Drain and pat dry. Toss together beans and radishes. , Place pecans, tarragon, cheese, garlic, salt and pepper flakes in a small food processor; pulse until chopped. Add vinegar; process until blended. Continue processing while gradually adding oil in a steady stream. Toss with bean mixture.

4 chicken breasts
1/4 cup tarragon, chopped
2 garlic, gloves minced
1 tablespoon lemon juice
1 bunch medium asparagus, trimmed
1 lb green beans, picked
1 cup sweet peas
1 large fennel bulb, julienned
2 pints cherry tomatoes, halved
2 lemons, zested and quartered
1/2 cup olive oil
4 tablespoons sherry vinaigrette
1/4 teaspoon salt and pepper, to taste
1/2 cup dried edamame seeds

Steps:

  • Take tarragon, garlic, lemon, juice and 1/4 cup extra virgin olive oil and blend in a food processor.
  • Trim chicken and place in a pan and cover with tarragon marinade, cover and chill for 20 minutes.
  • Grill chicken. Set aside to cool while making salad.
  • In a large pot, boil 3 quarts of water. When boiling add the lemon (reserve zest) then add fennel. Cook for 4 minutes or until tender. Remove fennel with a hand strainer into an ice water bath, leaving lemon behind.
  • Follow the same method with green beans and asparagus. They all cook at different temperatures and you need to cook at least 4 minutes. After each minute check crispness until finished. Refresh ice bath each time.
  • Reserve poached vegetables on a paper towel to dry while making warm vinaigrette.
  • In a large sauté pan add rest of oil and sherry vinegar. Cook on medium high till hot then add tomatoes and peas. Sauté till tomatoes start to break down then immediately remove.
  • Place vegetables in a large bowl then pour vinaigrette over and toss. Place on 4 plates or bowls.
  • Slice chicken on the bias and place each sliced breast on salads and garnish with dried edamame seeds.

1/2 teaspoon Dijon mustard
1 garlic clove, crushed

3 cups cooked chicken, cut into bite-size chunks
1/2 small granny smith apple, very thinly sliced into wedges
1 celery, finely diced
1/4 cup red onion, diced
1/4 cup pecan halves, toasted and chopped
lettuce leaf (optional)

Steps:

  • To make the dressing, whisk the vinegar with the Dijon, garlic, salt and pepper in a small bowl.
  • While whisking, drizzle in the oil.
  • Stir in the tarragon.
  • To make the salad, toss the chicken with the apple, celery and onion in a bowl.
  • Add 1/4 cup of the dressing or enough to coat.
  • Add the pecans, taste and add more dressing if you wish.
  • Serve on a bed of lettuce (I use romaine.).

  • Place a large pot on the stove and fill it 2/3 full of water. Bring the water to a boil. While the water is coming to a boil prepare an ice bath with a strainer that fits inside the bath. When the water is boiling, add the peas. Blanch for 45 seconds. Using a large slotted spoon or strainer, scoop out the peas and place them in the ice bath strainer. Strain the peas and place them in a large mixing bowl.
  • To a small mixing bowl add the oil, mustard, lemon zest, lemon juice, tarragon, red pepper, salt, a few grinds of black pepper and the garlic. Use a whisk to whisk all the ingredients together. I cannot get this dressing to form an emulsion.. if you can, I want to know your secret! There is too little dressing to put in a food processor - I tried. So just whisk until it all comes somewhat together.
  • Dress the salad with all the dressing and toss with hands. Finish it with fresh ground pepper to taste. This salad holds well overnight in the fridge already dressed. iIf packing it for a picnic, lunch or dinner party, go ahead and dress it in advance.
