I got hooked on the Bean Pie I used to get from the Muslim bakery back home, so had to try and recreate it! This is very good and reminds me of pumpkin pie, except it's made from beans. :-) (To get the beans smoothly mashed, I would recommend a food processor).

1 unbaked 9-inch pie shell
2 eggs, lightly beaten
1 cup evaporated milk
2 cups cooked and mashed navy beans
3/4 cup sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon ginger
1/2 teaspoon clove
whipped cream (optional)

Steps:

  • Preheat oven to 425 degrees.
  • Combine eggs and evaporated milk in a bowl.
  • Add beans, sugar and all spices.
  • Beat at low speed of a mixer until well blended.
  • Pour into unbaked pie shell.
  • Bake at 425 degrees for 15 minutes.
  • Reduce heat to 350 degrees and bake for another 35 minutes or until knife inserted in center comes out clean.
  • Serve warm with whipped cream or you can even enjoy it cold. :-).

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, combine eggs, evaporated milk, and mashed navy beans. Mix well. Add sugar, salt, cinnamon, ginger, nutmeg, and cloves. Mix until all ingredients are thoroughly combined. Pour mixture into pastry shell.
  • Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake an additional 35 minutes.

This is a traditional Muslim bean pie that most people have never had and even more have never made. Made with navy beans, it is surprisingly a wonderful dessert. Once you've had it, you'll love making it. There are only a few recipes for this pie and it took me years of tweaking other recipes to come up with one that actually makes an edible bean pie. This recipe you can trust to make an awesome dessert.

2 deep-dish prepared pie crusts
2 (15.5 ounce) cans navy beans, rinsed and drained
1 (12 fluid ounce) can evaporated milk
½ cup butter, melted
1 teaspoon ground cinnamon

2 tablespoons all-purpose flour
2 ½ cups white sugar
2 tablespoons vanilla extract
2 eggs
2 egg yolks

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Place pie crusts into 9-inch pie dishes.
  • In a food processor, place the navy beans, evaporated milk, melted butter, cinnamon, nutmeg, flour, sugar, vanilla extract, eggs, and egg yolks; pulse the mixture a few times, then process until smooth, about 1 minute. Pour the filling into the prepared pie crusts.
  • Bake at 450 degrees F (230 degrees C) for 15 minutes, then reduce heat to 350 degrees F (175 degrees C) and bake until the filling is set and the crust is golden brown, an additional 35 minutes. Cool before slicing. Eat warm or cold. Refrigerate leftovers.

2 to 3 garlic cloves, minced
1 can (11-1/2 ounces) condensed bean with bacon soup, undiluted
1 jar (16 ounces) thick and chunky picante sauce, divided
1/4 cup cornstarch
1 tablespoon chopped fresh parsley
1 teaspoon paprika
1 teaspoon salt
1/4 teaspoon pepper
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
2 cups shredded cheddar cheese, divided
3/4 cup sliced green onions, divided
Dough for double-crust deep-dish pie
1 cup sour cream
1 can (2-1/4 ounces) sliced ripe olives, drained

Steps:

  • Preheat oven to 425°. In a large skillet, cook beef over medium heat until beef is no longer pink. Add garlic; cook 1 minute longer. Drain. In a large bowl, combine soup, 1 cup picante sauce, cornstarch, parsley, paprika, salt and pepper. Fold in beans, 1-1/2 cups cheese, 1/2 cup onions and beef mixture., On a lightly floured surface, roll half the dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim even with rim. Add filling. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. , Bake until crust is lightly browned, 30-35 minutes. Let stand for 5 minutes before cutting. Serve with sour cream, olives and remaining picante sauce, cheese and onions.

2 tablespoons white sugar

1 cup vegetable shortening, chilled

½ cup dried great Northern beans, soaked overnight
½ cup dry garbanzo beans, soaked overnight
½ cup dry navy beans, soaked overnight

½ cup dried pinto beans, soaked overnight

Steps:

  • Whisk together the flour, sugar, and salt in a mixing bowl. Cut in the chilled shortening and butter with a knife or pastry blender until the mixture resembles coarse crumbs. (This can also be done in a food processor: pulse the cold shortening and butter until it's the size of small peas. Turn mixture into a bowl and proceed.) Add the ice water a tablespoon at a time, tossing with a fork, until the flour mixture is moistened. Do not add more water than you need: when you squeeze a handful of the moistened pastry mixture, it should form a ball. Divide the dough in half and shape into balls. Wrap in plastic and refrigerate for at least 1 hour or up to three days. Roll one ball out to fit a 9 inch pie plate. Place bottom crust in pie plate and chill for at least 20 minutes before baking. Roll out top crust and set aside.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Drain the great Northern beans, garbanzo beans, navy beans, black beans, black-eyed peas, lentils, pinto beans, and kidney beans and place in a food processor. Blend beans while slowly drizzling the olive oil into the mixture. Blend in the hummus. Pour the batter into a large mixing bowl and stir in the nutmeg, ginger, cinnamon, allspice, cream of tartar, and vanilla extract. Pour the batter into the pie crust and smooth with a spatula. Place the second pie crust on top. Seal the edges using a fork.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, about 45 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

This recipe was given to me by a friend of my wife. It is the best bean pie I have tried, and I've tried quite a few. I use a convection oven so I'm a little lenient with the bake time. My oven bakes a little faster than regular ovens. I am working on a chocolate version, a low fat version and a sugar free version of this pie. I'll post these recipes as soon as I perfect them.

4 eggs

1 cup sugar
1 tablespoon flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup evaporated milk or half-and-half
1/4 cup butter, melted
2 eggs
1 tablespoon vanilla extract
1 cup mashed, cooked navy beans

Steps:

  • Heat the oven to 350 degrees F. Line a 9-inch pie pan with crust, then crimp the edges decoratively.
  • In a medium bowl, combine the sugar, flour, cinnamon, and nutmeg, and stir with a fork to mix well. Add the milk, butter, eggs, and vanilla, and stir to mix everything well. Add the mashed beans and use an electric mixer or a whisk to beat all the ingredients together well, making a thick, smooth filling.
  • Pour the filling into the piecrust. Place the pie on the bottom shelf of the oven. Bake until the edges puff up and the center is fairly firm, wiggling only a little when you gently nudge the pan, 40 to 50 minutes.
  • Place the pie on a cooling rack or a folded kitchen towel and let cool for 20 to 30 minutes. Serve warm or at room temperature.

  • In a large skillet, cook onion in oil over medium heat until the onion is tender. Add garlic; cook 1 minute longer. Add the beans, cumin and chili powder. Reduce heat; simmer, uncovered, for 5 minutes, mashing the beans with a wooden spoon. Stir in chili sauce; set aside., Wrap tortillas in foil; bake at 350° for 10 minutes. 400g can chopped haricot beans , drained and rinsed
4 sausages , cooked, then sliced into rounds
150g passata
pinch of dried oregano
4 spring onions , chopped
pinch of sugar
320g ready-rolled puff pastry sheet
50g cheddar , grated
1 egg , beaten
salad , to serve

Steps:

  • Heat the oven to 200C/180C fan/ gas 6. Combine the beans, sausages, passata, oregano and spring onions with some seasoning and the sugar.
  • Unroll the pastry and cut into four rectangles. Spoon the bean and sausage mixture onto one side of each rectangle, leaving a 1cm border - so you can fold the pastry like a book. Sprinkle the cheddar over the bean and sausage mixture.
  • Brush some egg around the edges, then fold the pastry over to enclose the filling. Seal the edges by pressing with a fork, then put on a baking sheet lined with baking parchment. Brush with more egg, and cut a small hole in the top of each pie for steam to escape. Will keep chilled for up to 24 hrs. Heat the oven to 180C/160C fan/gas 4.
  • Bake on the middle shelf for 40 mins until golden. Leave to cool for 5 mins, then serve with salad.

250g plain spelt flour , plus a little extra for dusting
125g cold unsalted butter , cubed
a few sprigs each of rosemary and thyme, leaves picked and finely chopped
1 lemon , zested
25g mature cheddar , grated
1 medium egg yolk
700g butternut squash , peeled and cut into 2cm cubes
2 tbsp olive oil
3 bulbs of garlic , cloves separated and peeled
1 tsp balsamic vinegar
1 tbsp runny honey
2 sprigs each of rosemary and thyme, leaves picked and finely chopped, plus extra to serve
220g lancashire cheese or mature cheddar, crumbled or cut into cubes
150g crème fraîche
½ lemon , juiced
1 tbsp wholegrain mustard
small bunch of parsley , finely chopped
dash of vegetarian Worcestershire sauce (optional)
2 large eggs , beaten
2 x 400g cans butter beans , rinsed and drained
a drizzle of olive oil
1 lemon , zested
2 sage sprigs, leaves picked and finely chopped, plus extra to serve

Steps:

  • Put the flour in a mixing bowl, and add the butter and ½ tsp fine salt. Rub gently with your fingertips until the mixture resembles fine breadcrumbs, or blitz in a food processor. Stir through the herbs, lemon zest and cheddar. Beat the egg yolk with 50ml cold water, add to the bowl and mix until it forms a dough. Add more water, 1 tsp at a time, until it comes together into a smooth dough. Wrap and chill in the fridge while you make the filling.
  • Heat the oven to 180C/160C fan/gas 4. Toss the squash pieces with 1 tbsp olive oil and some seasoning. Tip onto a baking tray and roast for 25-30 mins until golden and tender. Leave to cool.
  • Meanwhile, put the cloves of garlic in a saucepan, cover with cold water and bring to a simmer. Cook for 2-3 mins, then drain. Wipe the pan dry, add the garlic back in with 1 tbsp olive oil and fry on a high heat for 2 mins until golden. Add the balsamic vinegar and 100ml boiling water, bring back to the boil then turn down and simmer for 10 mins.
  • Add the honey, most of the rosemary and thyme and a good pinch of salt. Continue to cook on a medium heat for a further 3-5 mins, or until most of the liquid has evaporated and the garlic cloves are coated in a dark syrup.
  • Tip the cooled squash into a bowl and add the cheese, crème fraîche, lemon juice, mustard, parsley, a splash of Worcestershire sauce and the beaten eggs. Add a good pinch of salt and black pepper and gently fold in the garlic cloves.
  • Roll out the pastry on a work surface dusted with flour to 3-4mm thick. Line a 23cm-diameter springform or loose-based cake tin with the pastry, ensuring a little spills over the edges (the pastry is quite short - you can patch up when lining the tin, if needed). Pour the filling into the pastry case.
  • Pat the drained beans dry using kitchen paper and dress with a little olive oil, most of the lemon zest and a good pinch of salt, then scatter over the squash filling. Finish with the reserved rosemary and thyme, the sage, and a drizzle of olive oil. Bake for 1 hr-1 hr 10 mins or until the filling has set and the beans have popped and are crisp. Trim the edge of the pastry to neaten.
  • Remove from the oven and leave to cool a little (about 20 mins), then take it out of the tin. Scatter the remaning lemon zest and more herbs on top and serve warm. Leftovers are great cold, too.

Serve this hearty dish with a dollop of cilantro laden sour cream, some Spanish rice, and a mixed green salad. The ingredients for this recipe make a very small 7 inch pie. If you are using a normal sized pan, you might want to increase the amount of black beans to 2 cans, and adjust only the seasonings accordingly. The chopped onion and peppers can remain the same.

  • Heat oven to 325 degrees.

  • Reduce heat to low and simmer for 15 minutes.
  • Spoon half of the mixture into one of the pie crusts lining a pie plate.

Beef and Bean Pie image

We made this all the time when I was growing up. It originally came from the Pillsbury bake off book from the 1970's I think. We lost it for several years and I emailed the company and they sent it to me. It was one of my brother's favorite meals and when he came back from serving the Army in Iraq, we fixed it for him as a surprise. We never used the Pillsbury refrigerated crescent rolls like the recipe called for but would put it in a pie crust. Also, we left off the American cheese.

1 lb ground beef
1/4 cup chopped onions or 1 tablespoon instant minced onion
1/2 teaspoon salt
1 tablespoon Worcestershire sauce
1/2 teaspoon Tabasco sauce
1 3/4 cups pork and beans (I used pinto beans)
1 (6 ounce) can tomato paste
4 ounces cheddar cheese (can use sliced American or cheddar)
1 double crust pie crusts (see note below for use pastry crust or crescent refrigerated roll) or 1 (8 ounce) can Pillsbury Refrigerated Crescent Dinner Rolls (see note below for use pastry crust or crescent refrigerated roll)

Steps:

  • If you want to use a 2 crust pie shell you can or use what the recipe calls for which is 1 (8 oz.) can of Pillsbury refrigerated crescent rolls.
  • Preheat oven to 350°F.
  • Fry ground beef and onion together until brown and onion is tender.
  • Drain meat.
  • Stir in salt, Worcestershire sauce, Tabasco sauce, beans and tomato paste.
  • Simmer while preparing crust.
  • (If using crescent rolls, separate cough into 8 triangles. Arrange triangles in ungreased 9 or 10 inch pie pan in a spoke fashion with narrow tips of triangles extending over pan 4 inches. Press dough over bottom of pan. Spoon meat mixture into crust; top with cheese if desired. Bring tops of dough over filling to center).
  • (If using pie crust then just spoon meat mixture into pie crust and top with cheese if desired. Put top crust on and make a few slits in it).
  • Bake 25-30 minutes until golden brown.
