BLACK BEAN BUTTERNUT SQUASH AND HAM PASTA - GLUTEN / LACTOSE FRE

Black Bean Butternut Squash and Ham Pasta - Gluten / Lactose Fre image

I came up with this recipe on my own when trying to find alternatives to the traditional wheat meat pasta dish. Plus.. these were the ingredients I had in the cupboard.

Provided by BethyBaby

Categories     One Dish Meal

Time 1h25m

Yield 4 serving(s)

Number Of Ingredients 6

1/2 butternut squash (Roasted, see step one)
250 g brown rice pasta (rotini shape)
1/2 cup cooked ham (I used Piller's)
1 cup black beans (if canned, rinse a few times)
1 tablespoon butter (use olive oil for lactose free)
salt & pepper (to taste)

Steps:

  • Roast butternut squash. Bake at 400F for approx 1 hour until a fork reveals that it is mush inside. Let cool for two hours on counter or in fridge. (It must be cool when you handle it so you don't burn yourself.) Do not add oil.
  • Warm shaved or thinly diced ham with black beans in fry pan. No oil required in a non-stick pan. Low to med heat. Do not overcook.
  • Cook brown rice pasta in boiling water. Do not overcook. Al Dente is at 7 minutes from the boil. You want the pasta to have a very very slight crunch. (Rice pasta has the tendency to turn to mush when overcooked.).
  • Use a spoon and remove squash from skin. Do not include the hard outer bits. You only want to use the veg that has turned to mash.
  • Drain pasta. Add butter/oil to prevent sticking.
  • Add butternut squash mash to pasta. Mixing. You may have to mash it lightly as you turn it into the pasta. Do not over mix.
  • Stir in ham and black beans.
  • Serve. (you can add sat, pepper & Parmesan cheese - OPTIONAL).

WHITE BEAN PRIMAVERA

White Bean Primavera image

Pasta primavera, the creamy, vegetable-heavy pasta dish popularized in the 1980s at Le Cirque, in New York, is a little too fussy for a busy weeknight, but this reimagined white bean version comes together in less than a half-hour. The simple beans and vegetables feel fancy in their robe of cream, Parmesan, lemon juice and mustard. The dish is best with fresh spring vegetables, and it's also very flexible: Substitute spinach for the peas, a handful of halved cherry tomatoes for the carrot, and sugar snap peas for the asparagus. Drained jarred artichoke hearts wouldn't be out of place, either.

Time 25m

Yield 4 to 6 servings

Number Of Ingredients 18

3 tablespoons unsalted butter
1 medium to large zucchini, cut in half lengthwise and sliced into ½-inch thick semicircles
Kosher salt (such as Diamond Crystal)
8 ounces asparagus (about ½ large bunch) or green beans, or a mix, cut into 1-inch lengths
1 carrot, peeled, then shaved into strips with a peeler
5 garlic cloves, finely chopped
1 cup fresh or frozen peas (no need to thaw)
2 scallions, green and white parts, sliced
1/2 teaspoon red-pepper flakes
1/2 teaspoon dried oregano
Black pepper
3 (15-ounce) cans butter beans or cannellini beans, drained
3/4 cup heavy cream
1 tablespoon lemon juice (from about 1/2 large lemon), plus more to taste
2 ounces grated Parmesan (about ½ cup), plus more for serving
1 tablespoon Dijon mustard
1/2 cup toasted slivered almonds or pine nuts
Fresh basil leaves, torn, for garnish

Steps:

  • Melt the butter in a 12-inch skillet (preferably straight-sided) over medium-high heat. Add the zucchini and 1 teaspoon salt, and stir, then cook undisturbed in an even layer until one side is golden, about 4 minutes. (It's great if the butter browns, but decrease the heat if it threatens to get too dark.) Stir in the asparagus, carrot and garlic, and cook, stirring occasionally, until fragrant and softened, about 4 minutes. Stir in the peas, scallions and ½ teaspoon salt, then add the red-pepper flakes, oregano and a generous amount of black pepper. Cook, stirring, until the peas are warmed through and bright green, about 2 minutes.
  • Add the white beans and the cream, lower the heat to medium, and let the cream come to a simmer. Simmer for about 1 minute.
  • Turn off the heat and stir in the lemon juice, Parmesan and Dijon. Taste and season with more salt, pepper or lemon juice as needed. Add 1 or 2 tablespoons of warm water to the creamy beans to loosen as you like; the sauce will thicken as it cools. (You may need more water when you reheat any leftovers.) Serve in bowls topped with the nuts and a handful of basil leaves. Pass more Parmesan at the table.

PEA & HAM PASTA

Pea & ham pasta image

Celebrate peas being in season with this classic combination. This quick and easy pasta dish takes less than 20 minutes to make

Provided by Samuel Goldsmith

Categories     Dinner

Time 19m

Number Of Ingredients 8

200g conchiglione pasta
160g podded peas
1 tbsp olive oil
1 red onion, finely chopped
100g cooked ham
150ml double cream
½ lemon, juiced
40g parmesan, grated, plus extra to serve

Steps:

  • Bring a large pan of salted water to the boil, then cook the pasta following pack instructions, about 9 mins. Around 3 mins before the pasta is cooked, add the peas.
  • Meanwhile, heat the olive oil in a frying pan over a medium heat and fry the onion for 5 mins until soft but not golden. Add the ham, double cream, lemon juice and parmesan, then season and mix well. Remove from the heat.
  • Drain the pasta and peas (keeping a mugful of the cooking water) and return them to the pan. Tip in the creamy ham mixture and stir everything together to combine. If the mixture seems a little dry, add some of the reserved cooking water to loosen it a little. Serve with extra parmesan on top, if you like.

OLD FASHIONED BUTTER BEANS & HAM

Old Fashioned Butter Beans & Ham image

There's nothing better than a big bowl of these beans with a slice of fresh homemade bread slathered in butter. I use a 1 lb. bag of large dried lima beans for this. From my collection of handwritten recipes. Note: soak beans overnight or use quick-soak method.

Provided by CJAY8248

Categories     < 4 Hours

Time 1h40m

Yield 1 recipe beans, 6 serving(s)

Number Of Ingredients 8

1 lb dried large lima beans, soaked (butter beans)
1 ham hock (or ham shank)
2 medium onions (1 quatered and 1 finely chopped)
3 garlic cloves, peeled
2 bay leaves
1 tablespoon butter
1 1/2 teaspoons hot sauce
salt and pepper

Steps:

  • Half fill a large saucepan with water and stir in the beans, ham hock, quartered onion, garlic and bay leaves. Bring to a boil, then lower the heat and simmer, uncovered for 1 hour or until the beans are tender. Drain the beans, reserving all of the liquid and discarding the onion, garlic, and bay leaves. Transfer beans to a bowl and the ham hock to a cutting board. Cut the meat into small pieces (you should have about 1 cup). Discard the bones. In the same saucepan, melt the butter over medium heat. Add the chopped onion and saute for 5 minutes or until tender. Stir in the ham and enough bean liquid to make the beans soupy (about 2 cups); bring to a boil. Lower heat and simmer, uncovered, for 5 minutes. Stir in the beans, hot sauce, and salt and pepper to taste; heat for 3 minutes or until hot. Ladle into bowls (I like to add a couple of drops of catsup) and serve with warm fresh homemade bread and butter.
