Spice Rubbed Grilled American Bison Short Ribs with Orange Honey Chipotle BBQ Sauce image

2 tablespoons ancho chile powder
2 tablespoons Spanish sweet paprika
1 tablespoon ground cumin
1 teaspoon ground cinnamon
Kosher salt and freshly ground black pepper
Canola oil, for brushing
16 bone-in 1/3- to 1/2-inch-thick flanken-style American bison short ribs
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Orange Honey Chipotle BBQ Sauce, for brushing, recipe follows
2 tablespoons canola oil
1 clove garlic, finely chopped
1 small red onion, finely diced
1/2 cup freshly squeezed orange juice
Finely grated zest of 1 orange
1/2 cup ketchup
1/4 cup clover honey
1/4 cup red wine vinegar
2 tablespoons chipotle in adobo puree
1 tablespoon soy sauce
1 1/2 teaspoons ancho chile powder
1 teaspoon kosher salt

Steps:

  • Combine the ancho, paprika, cumin, cinnamon, 2 tablespoons salt and 1 teaspoon pepper in small bowl. Sprinkle both sides of the ribs with salt and pepper, and then rub the spice mix onto the top of the ribs. Put on a baking sheet lined with aluminum or parchment. Let the ribs sit at room temperature for 30 minutes.
  • Heat a charcoal or gas grill to high for direct grilling. Brush the ribs on both sides with oil and grill, spice-side down, until golden brown and slightly charred, about 4 minutes. Flip and grill another 4 minutes. Brush with some of the Orange Honey Chipotle BBQ Sauce during the last minute of grilling. Remove to a platter and brush with more of the sauce.
  • Heat the oil in a medium saucepan over medium heat. Add the garlic and onions and cook until soft, about 2 minutes. Add the orange juice and zest and cook until slightly reduced.
  • Add the ketchup, honey, vinegar, chipotle puree, soy sauce, ancho powder and salt, and bring to a simmer, stirring occasionally and simmer until slightly thickened, about 10 minutes. Remove from the heat and let cool to room temperature.

4 pounds boneless beef short ribs, cut into 3-inch long pieces
Kosher salt and freshly ground black pepper
2/3 cup light brown sugar
1 teaspoon Hungarian paprika
1/2 teaspoon garlic powder
1 tablespoon white vinegar
1/2 teaspoon dried ground thyme
2/3 cup ketchup
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce

Steps:

  • Preheat the oven to 300 degrees F. Arrange the short ribs in a 13-by-9-inch baking dish and season with salt and pepper, to taste. In a small bowl, combine all the remaining ingredients and stir to incorporate. Pour the sauce over ribs and toss well, coating all the pieces. Cover with aluminum foil and roast until cooked through and tender, about 3 hours. Remove the foil during the last 30 minutes of cooking to brown the top. Transfer to a serving platter and serve.

Fondue made at home?! Yes it's totally doable! This easy recipe has a BBQ short rib twist, making it extra hearty and with a zing of spice.

3 oz sharp aged cheddar cheese, shredded medium-fine
2 oz Swiss cheese, shredded medium-fine
4 oz pilsener beer (I used New Belgium Pilsener)
1/2 tsp chopped garlic
1/2 tsp Head Country High Plains Heat Original Seasoning
1/4 tsp smoked paprika
1/4 tsp black pepper
1/4 tsp salt
1 tsp Worcestershire sauce
1½ ounces Head Country Chipotle BBQ Sauce
2 oz homemade shredded cooked short ribs, chopped well
1/2 tsp chopped scallions, for garnish
Artisan breads, seasonal vegetables, apple slices, etc for dipping

Steps:

  • Add cheddar and Swiss cheeses to a small bowl, stirring to combine. Set aside.
  • Fill a small saucepan with about 2 inches of water. Place a metal bowl on top - make sure it is one that fits inside but doesn't touch the water. Essentially you are making a double boiler! You can use a double boiler if you have one as well.
  • Bring water to a boil over high heat. Reduce heat to medium and add beer to the metal bowl.
  • Add chopped garlic, Head Country High Plains Heat Original Seasoning, paprika, black pepper, and salt. Stir to combine.
  • Add 1/3 of the cheese mixture and stir in with a fork until the cheese is melted. Add another 1/3 of the cheese, mixing thoroughly with a fork.
  • Add the final 1/3 of the cheese and mix thoroughly until combined. Continue to stir until melted and combined well.
  • Stir in Head Country Chipotle BBQ Sauce and brisket until combined.
  • Pour into a warm serving bowl, and garnish with chopped scallions. I like to warm my oven safe serving bowl in a 350˚F oven for about 15 minutes or so before adding the fondue. This will keep it warm and to temperature!
  • Serve immediately with breads, vegetables, apples, and more.

SLOW-COOKER CHIPOTLE RIBS

1 3- to 4-pound rack pork spare ribs, halved
Kosher salt and freshly ground pepper
1 tablespoon vegetable oil
2 tablespoons packed dark brown sugar
1 tablespoon chipotle chile powder
1 tablespoon ground cumin
1 tablespoon dried oregano
3/4 cup chipotle barbecue sauce
1/4 cup agave nectar
Fresh cilantro, lime wedges and cornbread, for serving

Steps:

  • Season the ribs all over with salt and pepper, then brush with the vegetable oil. Combine the brown sugar, chile powder, cumin and oregano in a small bowl. Sprinkle the spice mixture all over the ribs and rub into the meat. Transfer the ribs to a 6- to 8-quart slow cooker. Cover and cook on low, 7 1/2 hours.
  • Preheat the broiler and line a baking sheet with foil. Whisk the barbecue sauce with the agave in a bowl. Transfer the ribs to the prepared baking sheet and brush both sides with half of the barbecue sauce mixture. Turn bone-side down and broil until the glaze is bubbling and browned, 3 to 5 minutes.
  • Slice the ribs between the bones and top with cilantro. Serve with lime wedges, cornbread and the remaining barbecue sauce.

10 pounds short ribs of beef, 2 inches thick
2 tablespoons salt
2 tablespoons brown sugar
1 tablespoon garlic
1 teaspoon thyme leaves
1 tablespoon ancho powder
3 tablespoons French's mustard
3 tablespoons ketchup
1 teaspoon garlic powder
2 cup apple cider

Steps:

  • Mix all seasoning in a large bowl. Add short ribs and toss to coat evenly. Allow to sit for one hour before smoking. Build a hickory fire in grill on one side only. Place the beef ribs on the grill on the opposite side of the fire and close off the air so the fire goes down. Maintain a temperature of 275 degrees for 3 hours, basting with mop every 15 minutes for the last 45 minutes.
  • Mix all ingredients together.

2 racks baby back ribs (about 3 1/2 pounds each)
1 tablespoon paprika
1 tablespoon garlic powder
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
1 medium onion, chopped
Kosher salt
2 cloves garlic, finely chopped
1 1/2 cups no-sugar-added ketchup
3/4 cup fresh orange juice
2 teaspoons Worcestershire sauce
2 chipotles in adobo, chopped, plus 1 tablespoon adobo sauce

Steps:

  • For the ribs: Preheat the oven to 350 degrees F. Line a large rimmed baking pan with foil.
  • Place the ribs on the prepared baking pan meat-side up. Sprinkle them with the paprika, garlic powder, 1 tablespoon salt and a generous amount of pepper. Rub the spices all over the ribs.
  • Cover the pan tightly with foil and bake until the meat is very tender and can easily be pulled off the bone, about 2 hours.
  • For the barbecue sauce: Meanwhile, heat the oil in a medium saucepan over medium heat. Add the onions and 1/2 teaspoon salt and cook, stirring often, until very soft and golden brown, about 20 minutes. Add the garlic and cook, stirring, 1 minute. Add the ketchup, orange juice, Worcestershire, chipotles and adobo and 1/2 cup water. Increase the heat to bring to a boil, then reduce the heat to keep at a simmer until slightly thickened, about 10 minutes. Transfer to a blender and puree until smooth (be careful when blending hot liquids). Alternately, an immersion blender can be used in the pot.
  • Finish the ribs: Preheat the grill to medium-high (or set the oven to broil).
  • Reserve about a cup of the barbecue sauce for serving alongside the ribs. Brush a small amount of the remaining sauce on the bone side of the ribs and a generous amount on the meaty side.
  • Grill the ribs, meaty-side up, until the underside is lightly charred, about 3 minutes. Turn the ribs over and grill until the meaty side is charred in spots, 3 to 5 minutes (if using the oven, simply broil for 3 to 5 minutes). Transfer to a cutting board and cut each rack in half. Serve immediately with the reserved sauce on the side.
