BBQ CHICKEN WINGS WITH PINEAPPLE-GINGER TERIYAKI SAUCE

Steps:
- For the wings: In a large bowl, combine the cayenne, white pepper and 1/2 teaspoon salt. Add the chicken wings, bell peppers and serrano chiles. Drizzle with the vegetable oil and then, using clean hands and preferably wearing gloves, massage the seasoning mixture into the wings, peppers and chiles. Set aside.
- For the sauce: To a medium saucepan over medium heat, add the soy sauce, vinegar, honey, brown sugar, granulated sugar, sesame oil, garlic, pineapple and ginger and stir to combine. Cook over medium heat until reduced by half and thick enough to coat the back of a spoon, about 15 minutes. Cool slightly.
- Pour half of the cooled sauce over the wings and peppers, reserving the other half for the finished wings.
- Heat a grill pan or a gas or charcoal grill over medium-high heat. Place the wings, peppers and chiles on the grates in a single layer and cook until nicely charred, 6 to 8 minutes per side. Transfer to a serving platter. Pour the remaining sauce over the cooked wings. Garnish with the sesame seeds and green onions.

- Drain pineapple, reserving juice; refrigerate pineapple. In a small bowl, combine teriyaki sauce and reserved juice. Pour 3/4 cup marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat. Refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade for basting. , Drain and discard marinade. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes on each side or until a thermometer reads 170°, basting frequently with some of the remaining marinade. , Grill eight pineapple slices for 2 minutes on each side or until lightly browned, basting with remaining marinade (save remaining pineapple for another use). , Top each piece of chicken with cheese and two pineapple slices. Grill, covered, for 1-2 minutes or until cheese is melted.

- In a large Ziploc plastic bag, combine 3/4 cup Teriyaki Marinade with chicken; seal bag. Marinate in refrigerator for 30 minutes.
- In a medium bowl, combine 1/3 cup Marinade with pineapple slices, gently turning slices to coat; set aside.
- Remove chicken from bag, discarding used marinade.
- Grill or broil chicken, brushing often with remaining marinade, until thoroughly cooked, about 10 to 15 minutes.
- Grill pineapple slices, brushing with remaining marinade in bowl.
- Serve with a pineapple slice under and on top of each grilled breast.

I found this about recipe about 10 years ago and with a few revisions I've been using it ever since! It's quite easy to make and it tastes great! ...sometimes I like to add some fresh chopped cilantro as a topper. NOTE: Prep time includes the time it takes to marinade the chicken.

- Mix all ingredients with a wire whisk (except chicken, pineapple slices, and cilantro). -- next add pineapple slices and let sit in marinade for about 1 or 2 minutes, then remove slices and place in separate bowl in frig.
- Place the chicken in the marinade and refrigerate at least 1 hour, or longer if time is on your side.
- After about an hour or so, remove the chicken from the marinade and cook marinade to a full boil on stove top, then simmer about 5 more minutes -- remove from heat and keep covered.
- -- Meanwhile, place chicken breasts on the hot BBQ grill (searing chicken uncovered about 4 minutes on each side to hold in juices). Next, grab the pineapple slices out of the frig and lay them on top of the chicken and cook covered until the grillin' is good and done! -- Or, if you'd like you can place the pineapple directly onto the grill for a nice charbroiled flavor -- it's really good.
- Grab a plate, toss a piece of chicken and pineapple on it, pour some marinade sauce over top and garnish with cilantro if it suits your buds -- eat this with some steamed rice and -- voila!

GRILLED PINEAPPLE APPETIZER WITH TERIYAKI GINGER CHICKEN MEATBALLS

- Spray pineapple slices with cooking spray and grill or pan brown, lightly brush both sides with hoisin sauce. Cut rings into bite size pieces about 1 " wide (just big enough for the meatballs to sit on top of).
- Prepare a medium skillet with pan spray and brown al fresco all natural Teriyaki Meat Balls over medium high heat on both sides. Add water, cover and fully heat meatballs.
- Skewer meatballs on top of pineapple and lightly brush with the hoisin sauce to give a glaze.
- Set-up on a platter, and put remaining hoisin sauce in a small dipping bowl. Garnish with fresh mint. Serve immediately.

- Combine water, 1/4 cup plus 5 tablespoons soy sauce, molasses, ginger, and garlic in a saucepan and bring to a gentle boil, about 5 minutes. Combine water and cornstarch in a bowl; add to saucepan and stir until slightly thickened, about 3 minutes. Set sauce aside.
- Heat oil in a large wok or frying pan over medium heat until sizzling. Add garlic, red pepper flakes, and chicken. Cook until chicken is no longer pink inside, 5 to 7 minutes. A very simple marinade....fantastic results. You can either serve the chicken breasts whole or sliced into large pieces. This recipe will marinate 6 chicken breasts(of course you can use other cuts of chicken) To make this dish gluten free ensure the soy sauce used is labelled as GF. Currently Fountain brand is GF in Australia, also many tamaris and some Japanese soy sauces.

- Melt the honey and the soy sauce together- I use the microwave for this.
- Stir in all of the remaining marinade ingredients.
- Arrange the chicken in a single layer in a baking dish or tin.
- Pour the marinade over the chicken and then turn the chicken over to coat thoroughly in the marinade.
- Leave the chicken to marinate for two hours in the refrigerator. Turn the chicken occasionally.
- If you are picnicing you can marinate the chicken in a large tupperware container and keep it stored in your esky.
- Cook the chicken on the BBQ plate or grill -5 to 7 minutes on each side shoud be about right. You can baste the chicken with some of the marinade in the first few minutes of cooking.
- NOTE: Cooking time includes marinating time.

- Make a marinade of soy sauce, ginger, garlic, half of the lime juice and zest, honey, and sesame oil in a large bowl. Add chicken, and stir to combine.
