MEATLOAF WITH MASHED POTATOES AND CHEESE
This Meatloaf with Mashed Potatoes and Cheese recipe is ideal for any occasion. It is the perfect recipe for lunches and the whole family loves it.

Steps:
- Preheat your oven to 400 degrees.
- Heat the oil in a skillet over medium temperature.
- Add the onions to the skillet and saute until tender.
- Stir in the garlic, and saute another 30 seconds. Remove, and let cool.
- Add the cooled onion mixture and the rest of the ingredients to a mixing bowl. Knead with your hands until combined.
- Form the meat into a loaf, and place into a casserole dish. Bake for 30 minutes.
- Boil the potatoes until tender while the meatloaf is baking.
- Drain, and mash with the butter, heavy whipping cream and salt and pepper to taste.
- Top the meatloaf with the mashed potatoes and then the shredded cheese. Bake for 15 more minutes before serving.

MASHED POTATO-STUFFED MEATLOAF
Forget mashed potatoes as a side dish and reinvent meatloaf with this spud-stuffed version. The potatoes are ready in no time, thanks to your microwave, and could easily become a weeknight go-to recipe all on their own.

- Preheat the oven to 350 degrees F. Line a baking sheet with foil.
- For the mashed potatoes: Poke each potato with a fork several times and microwave until soft, about 15 minutes (or use your microwave?s potato setting). Cool until you are able to handle them with a towel, about 2 minutes. Halve the potatoes and scoop out the flesh with a spoon and discard the skin. Mash the potatoes and butter in a medium bowl until smooth then fold in the sour cream, chives and 1 teaspoon salt until well combined. Set aside.
- For the meatloaf: Toast the bread crumbs in a dry skillet over medium heat until browned and fragrant, about 1 minute. Transfer to a large mixing bowl and set aside. Add the oil, onions, garlic, oregano, 1/2 teaspoon salt and 1/2 teaspoon pepper to the skillet and cook, stirring, until onions are tender, about 8 minutes. Let cool slightly. Add the onion mixture to the bread crumbs along with the meatloaf mix, Parmesan and Worcestershire sauce. Toss and mix gently. Add the eggs and mix it completely into the meat mixture.
- Transfer 1/2 of the meatloaf mixture to the prepared baking sheet and gently press into a 12- by-3-inch rectangle. Gently create a well down the middle of the meatloaf mixture with a 1/2-inch wall on all four sides. Spoon the mashed potato mixture into the well. Working with a quarter of the remaining meatloaf mixture, gently flatten the mixture with the palms of your hands. Lay the meatloaf mixture over 1/2 of the mashed potatoes. Repeat with the remaining meatloaf mixture ensuring the potatoes are completely enclosed.
- For the glaze: Whisk together the ketchup, brown sugar and vinegar in a small bowl. Spoon the glaze evenly over the entire loaf.
- Bake until an instant read thermometer registers 160 degrees F in the center of the loaf, about 45 minutes.
- While the meatloaf is cooking, cook the peas according to package directions. Toss with the butter and season with salt and pepper. Keep warm.
- Slice and serve the meatloaf with butter, black pepper and the peas.
TURKEY BBQ MEATLOAF WITH CHEESY MASHED POTATOES

- Heat oven to 350ºF.
- Mix turkey, stuffing mix, water, onions, chiles, egg and 1/4 cup barbecue sauce just until blended; press into 12 muffin cups sprayed with cooking spray.
- Bake 25 to 30 min. or until done (165ºF), brushing with remaining barbecue sauce for the last 5 min.
- Meanwhile, cook potatoes in boiling water in large saucepan 15 min. or until tender; drain. Return potatoes to pan. Add cream cheese, butter and milk; mash until potatoes are smooth and ingredients are well blended. Stir in shredded cheese and chives.
- Serve meatloaves topped with potatoes.

MASHED CHEESY POTATOES & GRAVY

- Put the potatoes in a pot with salted water to cover. Bring to a simmer over medium heat and cook until tender all the way through, about 10 minutes. Drain.
- Combine the butter, heavy cream and 1 1/2 teaspoons salt in the same pot you cooked the potatoes in and melt over low heat. Use a masher to puree the potatoes right back into the pot while still hot. Stir in the sour cream. Add large handfuls of cheese and stir and fold the potatoes over themselves until the cheese melts, then add another handful. If it gets too thick and hard to stir before you've added all the cheese, add a few tablespoons of additional cream. Season with salt and pepper. Serve and add the Gravy on top.
- Heat the drippings in a small saucepan (or the meatloaf pan) over medium heat. Whisk in the flour until smooth. Cook and stir until lightly toasted, 1 to 2 minutes. Stir in the thyme. Whisk in the beef stock until smooth. Bring to a simmer over medium heat and stir in the Worcestershire. Simmer until thickened, 4 to 5 minutes. Season with salt and pepper.

- Mix together the meat, crushed crackers salsa and egg. Cut the mixture into two parts. I generally make one part a little bit bigger then the second.
- Take the larger section and form it into a loaf, flatten the top and create a ridge around edge. Fill the hole you created with the shredded cheese. Take the remaining meat mixture and cover the cheese, pinching together the edges of the meat to keep the cheese inside. press down the center of the loaf to flat it out a bit.
- Cook for 50 minutes at 350 degrees. Take the loaf out and poor the sauce on top and cook for another 10 minutes.

- Preheat oven to 350°.
- Heat a large nonstick skillet over medium-high heat. Cook bacon until crisp. Remove from pan and place on a paper towel. Allow to cool. Crumble into pieces.
- Add chopped onion to the reserved bacon drippings and sauté 3-4 minutes. Cool.
- Add turkey, breadcrumbs, cheddar cheese, BBQ sauce, eggs, sautéed onions & crumbled bacon to a bowl and mix until combined.
- Spoon the meat mixture into 12 muffin cups coated with cooking spray. Bake at 350° for 20-25 minutes or until cooked through. Let stand for 5 minutes before removing.
- While the meatloaf is cooking, make the mashed potatoes. Place potatoes in a pan; cover with water. Add pinch of salt, Bring to a boil; cover, reduce heat, and simmer 10 minutes or until tender. Drain. Put potatoes into a ricer for best results. Return potato to pan. Add heavy whipping cream and remaining ingredients; stir with a spoon to desired consistency. If they are not creamy enough for you, add up to 1/4 cup more cream or milk - although they need to be stiff enough to pipe on top.
- Put the potatoes into a pastry bag with a wide star tip and pipe the mashed potatoes on top of the meatloaf.

- Preheat oven to 375*F. Spray an 8x4 inch loaf pan with cooking spray.
- Mashed Potatoes: Cover potatoes with water in a saucepan; boil for 15 minutes or just until tender. Drain and mash well.
- In a nonstick skillet spayed with cooking spray, heat the oil over medium heat; cook onions for 8 minutes or until browned.
- Stir onions into potatoes along with sour cream, olive oil, garlic, basil leaves and salt. Mix together until combined.
- Meatloaf: In a bowl, combine ground beef, egg, barbecue sauce, breadcrumbs, green onions, garlic, basil leaves, salt and pepper. Pat in to loaf pan. Bake for 30 minutes.
- Remove from oven, and spread mashed potatoes over top. Sprinkled with Parmesan cheese and drizzle with barbecue sauce. Bake another 15 minutes.
- Let rest for 10 minutes before removing from pan and slicing.
