SHRIMP-STUFFED JALAPENO POPPERS

Steps:
- Cut off the tops of the jalapenos and scoop out the seeds. Pat the shrimp dry and generously season with salt. Insert 1 shrimp into each jalapeno, leaving the tail sticking out.
- Whisk 3/4 cup flour, the cornstarch, Old Bay and beer in a medium bowl until smooth; set aside. Heat 2 inches of vegetable oil in a large pot or Dutch oven over medium heat until a deep-fry thermometer registers 350 degrees F. Whisk the remaining 3/4 cup flour and 1/2 teaspoon salt in a shallow bowl.
- Working in batches, dredge the jalapenos in the flour, shaking off any excess, then dip in the beer batter, coating the shrimp and jalapeno completely. Fry, stirring occasionally, until the shrimp are cooked through and the jalapenos are golden and crisp, about 5 minutes. Remove with a slotted spoon and drain on paper towels; season with salt. Serve with malt vinegar.
HOT PEPPER JELLY BBQ SAUCE
A sweet but spicy BBQ Sauce. Just thick enough to slab on any meat over the grill or in the oven. The whole family enjoyed the stickiness and flavor. Brush sauce onto meat of your choice. Sweet, but a touch of hotness, too. I found this to be very enjoyable on ribs. Was able to do a 8-rib rack, but it can do another one; I just like it thick. This would be enough for 12 chicken quarters. Very easy.

Steps:
- Preheat the air fryer to 325°F (160°C).
- Wearing latex gloves, slice the jalapeños in half lengthwise. Carefully scoop out the seeds and membrane.
- In a medium bowl, mix together the cream cheese, cheddar cheese, salt, and pepper with a rubber spatula. Transfer the cheese mixture to a piping bag fitted with a medium round tip or a resealable plastic bag with a corner snipped off.
- Pipe the cream cheese filling into each jalapeño half.
- Wrap each jalapeno in 1 strip of bacon.
- Working in batches, place half of the poppers in the air fryer and fry for 8-10 minutes, until the bacon is crispy. Repeat with the remaining poppers.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a baking sheet with cooking spray.
- Mix cream cheese, Cheddar cheese, and mayonnaise together in a bowl. Spread on the inside of each butterflied shrimp.
- Whisk eggs and milk together in a bowl. Place bread crumbs on a plate.
- Dip each stuffed shrimp into the egg and milk mixture; roll over breadcrumbs to coat. Arrange in a single layer on the prepared baking sheet.
- Bake in the preheated oven until lightly browned, about 30 minutes.

Steps:
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Place shrimp in a glass bowl. Pour lime juice over shrimp. Stir in cilantro and garlic. Set aside.
- While the shrimp is marinating, slice jalapeno peppers in half and remove seeds. Cut onion into chunks.
- Tuck 1 shrimp into a jalapeno half. Wrap with 1 slice of bacon and thread onto a skewer. Repeat with remaining shrimp, jalapenos, and bacon, adding onion chunks in between every 2 or 3 shrimp.
- Place skewers on the preheated grill. Cook, flipping every 4 to 5 minutes and basting with lime juice if desired, until shrimp are pink and bacon has browned, 15 to 20 minutes.

CHARRED JALAPENO POPPERS
Roast jalapeno peppers stuffed with cream cheese and wrapped in bacon. These are a little time consuming, but the results are delicious. Prep time includes time to grill the peppers. You can let your imagination go wild and adjust the recipe by adding anything you think sounds good. Cream cheese measurement is an estimate because of the difference in pepper sizes. Thanks to Chuck who makes these and takes them to all the neighborhood cookouts and potlucks. He often goes home with requests for more.

- Halve and seed the jalapenos.
- Roast on a hot grill just until skins start to turn dark.
- Slice the bacon strips in half.
- Fill the jalapeno halves with cream cheese.
- Wrap halves with bacon and secure with a toothpick.
- Bake in a 350 degree oven about 30 minutes or until bacon is done to your liking.
- Serve warm.

- Using a paring knife, slice the tops off of the jalapenos. Cut a slit down the side of each jalapeno and carefully remove the ribs and seeds. (Tip: Have a bowl of water handy. Dunking the jalapenos in water helps get the last few seeds out. If desired, soaking the peppers in water for about 30 minutes, too--it helps reduce the the heat a bit.)
- Stuff each jalapeno with one shrimp. Wrap jalapeno with half slice of bacon and then secure bacon with a skewer through the center.
