3 cups hearts of romaine salad mix
2 medium nectarines, chopped
2 cups julienned fully cooked ham
1 tablespoon minced fresh cilantro
1/2 cup Caesar salad croutons
1/4 cup shredded Parmesan cheese
CREAMY CAESAR DRESSING:
1/3 cup mayonnaise
2 tablespoons sour cream
4 teaspoons chopped onion
4 teaspoons half-and-half cream
1 teaspoon lemon juice
1/4 teaspoon minced garlic
1/8 teaspoon dried basil
1/8 teaspoon dried oregano
Dash pepper

Steps:

  • In a serving bowl, combine the salad mix, nectarines, ham, cilantro, croutons and cheese. In a small bowl, whisk the dressing ingredients; drizzle over salad.

1 head romaine lettuce
1 garlic clove, halved
3 tablespoons fresh lemon juice
5 tablespoons olive oil
1 teaspoon Dijon mustard
1 dash fresh ground pepper
1 egg yolk
3/4 cup seasoned croutons
2 tablespoons grated parmesan cheese

Steps:

  • Wash lettuce and tear into large pieces.
  • Rub garlic halves around the inside of a large wooden salad bowl, and discard garlic.
  • In bowl, combine lemon juice, oil, mustard and pepper.
  • Add egg yolk and mix well.
  • Add lettuce, croutons and Parmesan, and toss lightly.
  • Top with additional Parmesan if desired.

2 large head romaine lettuce, outer leaves removed & discarded
1/4 cup walnuts (optional)
2 tablespoons roasted tahini
1 (2 ounce) can anchovies, drained of oil, rinsed and chopped
4 medium garlic cloves, chopped
3 tablespoons lemon juice
2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
salt
cracked black pepper

Steps:

  • Rinse lettuce.
  • cut into bite size pieces.
  • and dry.
  • Try to get lettuce as dry as possible so dressing is not diluted.
  • If you have a salad spinner it is best.
  • Blend dressing ingredients together for 1-2 minutes, drizzling olive oil at end a little at a time.
  • Toss romaine with desired amount of dressing and walnuts if using them.
  • There will be dressing left over.
  • It saves very well in your refrigerator for 2 weeks.

8 cups romaine lettuce, loosely packed
3 -4 tablespoons grated parmesan cheese
1 cup garlic-flavored croutons (to taste)
1 small garlic clove, peeled
1/2 cup mayonnaise or 1/2 cup light mayonnaise
3 tablespoons fresh lemon juice
1 tablespoon Worcestershire sauce
1 tablespoon water
1/3 cup olive oil or 1/3 cup vegetable oil
1/2 teaspoon salt
fresh ground pepper

Steps:

  • To make dressing: Crush peeled garlic through garlic press into a 2-cup glass jar with a lid. Add remaining dressing ingredients, 1 tablespoon cold water, 1/2 teaspoon salt and pepper. Cover tightly and shake well or stir to combine.
  • Place sliced romaine in a large bowl. Drizzle on 1/4 cup of dressing. Sprinkle on cheese. Drizzle on a little more dressing if necessary and toss to combine. Divide onto salad plates. Sprinkle with croutons and serve. Refrigerate remaining dressing in a closed container for up to 2 weeks.

10 leaves romaine lettuce, washed and refrigerate to crisp
6 slices French bread, 1/2 inch thick
1/4 cup virgin olive oil
3 cloves garlic, crushed
6 anchovy fillets
1 egg
1 tablespoon fresh lime juice
1 teaspoon Worcestershire sauce
1/4 cup fresh grated parmesan cheese
salt & pepper

Steps:

  • Heat oven to 400 degrees F.
  • Put bread on an ungreased baking sheet, bake until crisp, 30 minutes.
  • Baste bread with 1 1/2 tbsp of olive oil.
  • return to oven to brown 15 minutes.
  • Crush together the garlic and anchovy filets,gradually add 1 tbsp of oil.
  • Spread this mixture on the toasted bread& cut into cubes, set aside.
  • Cover the egg in boiling water and cook for 1 minute only.
  • Tear the lettuces leaves into a salad bowl,worcestershire sauce and any remaining oil In the last minute toss in the bread crumbs and the parmesan cheese.
  • Toss and serve- do not let the croutons get soggy.

1 cup crouton
1/2 cup shaved parmesan cheese
1/2 bunch fresh parsley leaves
4 hard-boiled eggs, quartered
2 anchovies, chopped

Steps:

  • Barbecue the ham, and then toss the lettuce, croutons, parmesan and parsley in the mayonnaise and dress with eggs, anchovies and ham.
