BUFFALO CHICKEN LOADED TATER TOTS
This is a simple recipe using just about any leftover protein with a bag of your favorite Tater Totos. This is Meat and Potatoes on a new level. Full of flavor and trust us, its hard to stop eating once you start. The only thing that might make you stop is that you run out. However, it is so simple you can make another batch quick! Get the kiddos involved too. They will love this recipe too.

Steps:
- In a large cast iron skillet add frozen tater tots and place on smoker. Follow tater tots instructions. Season with Lane's SPF-53 rub
- Add evenly over the top Bacon, Shredded Chicken, Cheddar Cheese, and top with SPF-53 Rub. Cook for another 5 to 10 minutes until cheese is good and melted.
- Pull when done - drizzle One-legged Chicken Buffalo Sauce and Sorta White Sauce. Optionally top with Chives and tomatoes.

BBQ CHICKEN TATER TOT SKILLET
A twist on a traditional Midwestern tater tot hot dish, this BBQ Chicken Tater Tot Skillet goes from stove to oven, to the table in just one pan.

- Preheat oven to 425 degrees.
- Prepare the chicken breasts: Place the chicken breasts on a cutting board and cover with plastic wrap. Pound the chicken with a meat mallet until each piece is of even thickness, about 1 - 1 1/2 inch thick. Season both sides of the chicken with salt and pepper (a few pinches of each).
- Cook the bacon over medium heat until crispy. Remove the bacon, reserving the fat, and transfer to a plate lined with paper towels. Drain off some of the fat, leaving about 1 tablespoon in the pan. Add the chicken breasts to the pan and cook through, about 8-10 minutes. Remove the chicken from the pan and set aside.
- Add the onion, garlic, and peppers to the pan. Cook them until the soften, about five minutes. While the veggies are cooking, shred the chicken.
- Add the chicken stock to the pan with the veggies and bring it to a boil. Scrape all the browned bits off the bottom of the pan. Add the oregano and salt and stir. Sprinkle the flour over the top of the veggies and stir until the mixture thickens. Add the shredded chicken to the pan and stir it all to combine.
- Add the BBQ sauce to the pan and stir to combine. Turn the heat off and top the BBQ chicken with the shredded cheese. Top the cheese with the frozen tater tots. Sprinkle the crispy bacon over the top.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the dish is bubbling and the tater tots are hot and baked through. Garnish with chopped parsley before serving.

BBQ TOTCHOS
Steps:
- Cook the sweet potato tots according to the package instructions.
- Preheat the broiler to high.
- Put the cooked tots in an even layer on a parchment-lined baking sheet and sprinkle with the shredded chicken. Pour 1/2 cup BBQ sauce evenly over the top and cover with the cheese. Broil until the cheese is melted and bubbly, 3 to 4 minutes.
- Drizzle with the remaining 2 tablespoons BBQ sauce and garnish with fresh scallions. Serve immediately.
TATER TOT CHICKEN CASSEROLE

- Preheat oven to 400 degrees F. Spray a 9x13" baking dish with cooking spray, and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add onion, ground meat, chili powder, hot sauce, and salt. Stir and cook until meat is almost cooked through. Stir in corn and drained beans, and cook a couple more minutes until hot.
- Pour meat mixture into the prepared baking dish. Drizzle BBQ sauce over the meat, and spread shredded cheese over that. Arrange tater tots in an even layer over the top of the cheese.
- Bake uncovered in preheated oven for 30-40 minutes until potatoes are golden brown. (I like to bake mine a little longer so the tots get pretty crispy on top.).
