RIB TIPS

Rib Tips image

Lem's and Barbara Ann's are the two best reasons we can think of for a trip to Chicago. Barbara Ann's links and Lem's rib tips with fries make a feast fit for royalty, and that's how you'll feel from first bite to last. James Lemon, proprietor, has lived on Chicago's South Side since he moved from Mississippi in 1942. Later he joined his other brothers to help run the barbecue joint established by the oldest brother, Miles, a.k.a. "Lem," in 1951. The brothers had a history of barbecuing hogs in a homemade brick pit their father built in their hometown, Indianola. Today James is the only surviving brother, and we're thankful he is still running the business. We're big fans of rib tips. There's no duplicating Lem's rib tips with "spicy gravy"-that's what Mother Lemon called her special barbecue sauce-but when you can't be in Chicago, we hope our rib tips and spicy sauce will provoke some good memories.

Categories     main-dish

Yield Serves 4 to 6

Number Of Ingredients 20

1/4 cup packed light brown sugar
2 tablespoons seasoned salt
1 tablespoon chili powder
2 teaspoons finely ground black pepper
1 teaspoon cayenne
1 teaspoon Old Bay seasoning
1 teaspoon rubbed sage
1 teaspoon onion powder
1/3 cup ketchup
1/4 cup packed light brown sugar
2 tablespoons granulated sugar
2 tablespoons apple cider vinegar
1 tablespoon chili powder
1 teaspoon dry mustard
2 tablespoons Worcestershire sauce
1 teaspoon sea salt
1 teaspoon finely ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon ground celery seeds
4 pounds rib tips

Steps:

  • To make the dry rub, combine the brown sugar, seasoned salt, chili powder, pepper, cayenne, Old Bay, sage, and onion powder and blend well. Store in an airtight container in a cool, dark place until ready to use, for up to 6 months.
  • To make the barbecue sauce, combine the ketchup, sugars, vinegar, chili powder, dry mustard, Worcestershire sauce, salt, pepper, garlic powder, and celery seeds in a saucepan over medium heat, stirring to dissolve all the sugars. Heat, stirring occasionally, for 30 minutes. Cool to room temperature.
  • Set up your smoker to cook indirectly at 250 degrees F. Season the rib tips all over with the barbecue rub. Place on the smoker and barbecue for 4 to 5 hours, or until the ribs tear apart easily, basting with the sauce during the last 30 minutes of cooking.

Instant Pot® Beef Tips image

These super tender and delicious sirloin tips are braised and pressure-cooked in a rich gravy. Serve over mashed potatoes, rice, or cauliflower rice.

Provided by WCFranck

Time 1h20m

Yield 4

Number Of Ingredients 16

3 tablespoons all-purpose flour
2 teaspoons steak seasoning
2 teaspoons garlic powder
1 teaspoon onion powder
1 ¼ teaspoons kosher salt
½ teaspoon ground black pepper
1 (2 pound) beef sirloin, cut into 2-inch strips
2 tablespoons olive oil
2 tablespoons salted butter
1 medium onion, chopped
2 large cloves garlic, minced
⅓ cup red wine
1 (10.5 ounce) can beef consomme
1 tablespoon Worcestershire sauce
1 teaspoon beef bouillon granules
1 teaspoon dried thyme leaves

Steps:

  • Mix flour, steak seasoning, garlic powder, onion powder, kosher salt, and pepper together in a 1-gallon zip-top bag. Add sirloin strips and shake until evenly coated.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. When the pot is hot, add the oil. Then add 1/2 of the steak in one layer. Brown both sides, about 5 minutes, but don't cook through, and remove to a plate. Repeat with the remaining meat.
  • Add butter, then onion to the pot. Stir and scrape the bottom of the pot, scraping up all of the browned bits. Add the garlic; stir. Cook for about 20 seconds, then add the red wine. Add consomme, Worcestershire sauce, beef bouillon, and thyme leaves. Mix well to dissolve the bouillon. Cancel the Saute setting. Add the beef tips back into the pot. Close and lock the lid.
  • Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, for 10 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes. Unlock and remove the lid. Stir, taste gravy, and adjust salt if necessary.

Korean-style BBQ Beef Recipe by Tasty image

Here's what you need: ribeye steak, onion, garlic cloves, pear, spring onions, brown sugar, black pepper, soy sauce, sesame oil, canola oil, sesame seed, cooked rice, Banchan (Korean side dishes)

Provided by Alvin Zhou

Categories     Dinner

Yield 2 servings

Number Of Ingredients 13

1 ½ lb ribeye steak, or any other well-marbled, tender cut
1 onion, 1/2 roughly chopped and 1/2 thinly sliced
3 cloves garlic cloves
½ pear, peeled and roughly chopped
3 spring onions, 1 cut into pieces and 2 sliced into 1/4-inch rounds
3 tablespoons brown sugar
1 teaspoon black pepper
⅓ cup soy sauce
3 tablespoons sesame oil
1 tablespoon canola oil
1 teaspoon sesame seed, for serving
2 cups cooked rice, for serving
Banchan (Korean side dishes), for serving (optional)

Steps:

  • Slice the beef as thinly as you can, then set aside in a large bowl. Using frozen or cold beef will make the slicing easier.

  • Pour the marinade over the beef, add the thinly sliced onion, then mix to coat evenly. Cover with plastic wrap and marinate in the fridge for at least 30 minutes, or overnight.
  • Heat the canola oil in a large skillet over high heat. Pat the meat dry.
  • Being careful not to crowd the pan, sear the marinated beef and onions until browned. Sprinkle with the sliced green onions and sesame seeds.
  • Serve with rice and side dishes.
  • Enjoy!
