Steps:
- Preheat oven to 375°F (190°C).
- Slice the chicken into even strips.
- Dip the chicken strips into the BBQ sauce, then coat them in the bread crumbs.
- Place on a baking sheet lined with parchment paper and bake for 15 minutes.
- Brush the remaining BBQ sauce evenly on both sides of the chicken strips and bake for another 10 minutes and serve.
- Enjoy!

BBQ BAKED CHICKEN FINGERS
Homemade Chicken Fingers that are Marinated in BBQ Sauce then Dipped in Egg and Panko Crumbs for a Delicious Homemade Chicken Finger!

Steps:
- Pound down chicken breasts and cut into strips. Place in bowl and cover with bbq sauce. Cover tightly and marinate in the refrigerator for at least 30 minutes and up to 6 hours. The longer they marinate the more bbq flavor your chicken will have.
- Preheat oven to 400 degrees. Line a baking sheet with silicone baking mat or coat heavily with nonstick spray.
- Combine flour, salt, pepper, and smoked paprika in a shallow dish. In another dish beat eggs. Pour Panko breadcrumbs into a third shallow dish. Coat each chicken strip in flour mixture, shake off excess. Then dip in egg mixture, let excess drip off. Then roll chicken strip in Panko crumbs, shaking excess off. Place chicken strips on baking sheet. Spray each with nonstick spray. You MUST do this!
- Bake for 10 minutes. Turn each piece over and spray with nonstick spray on this side. Bake an additional 10 minutes or until chicken is cooked through.

POTATO CHIP-CRUSTED CHICKEN STRIPS WITH HONEY MUSTARD DIPPING SAUCE
Steps:
- For the chicken: Preheat the oven to 450 degrees F. Line a baking sheet with parchment.
- In a bowl or baking dish, add the flour, garlic powder, onion powder, paprika, ground mustard and 2 teaspoons each salt and pepper and stir to combine. Beat the eggs in a separate baking dish. Finely crush the potato chips in their bag or in a separate resealable bag. Pour into a bowl or baking dish.
- Sprinkle the chicken with 2 teaspoons salt. Dip the chicken in the seasoned flour and coat completely, then into the egg mixture until completely coated. Finally, dip the chicken into the potato chips, making sure the chips stick to the whole surface. Transfer the chicken to the prepared baking sheet.
- Bake, flipping halfway through, until the chicken is golden brown and reaches an internal temperature of 165 degrees F, about 20 minutes.
- For the honey mustard sauce: While the chicken is baking, mix together the honey, mayonnaise, Dijon, yellow mustard, whole-grain mustard and garlic powder in a small bowl. Season with salt as desired. Serve with the chicken.
BAKED CHICKEN FINGERS
This is a recipe I created after trying several baked chicken finger recipes. I like this combination of seasonings, but it's always fun to try different things. You could use saltines, other crackers, other spices, etc!

- Preheat oven to 400 degrees.
- In a medium glass or plastic bowl, combine chicken breast and buttermilk.
- Cover and put in refrigerator for 10-15 minutes.
- Combine corn flakes (or cheese crackers),italian seasoned breadcrumbs, garlic powder, oregano, and black pepper in large ziploc bag.
- After chicken is chilled, drain off liquid and add to ziploc bag, shaking to coat.
- Add olive oil to shallow baking pan.
- Place chicken in pan.
- Bake for approximately 4 minutes on each side, or until chicken is thoroughly cooked.
- Serve with honey mustard dip or light ranch dressing.

BARBECUE GRILLED CHICKEN
Steps:
- Heat the oil in a medium saucepan over medium-high heat. Add the onion, and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic, and cook, stirring, until golden, about 30 seconds. Add 1/2 cup water and the ketchup, molasses, vinegar, Worcestershire, allspice, clove, chipotles and 1/2 teaspoon salt and bring to a boil. Reduce the heat, and simmer, stirring occasionally, until thickened, about 10 minutes. Puree in a blender or food processor until smooth. Store the sauce in the refrigerator until ready to grill the chicken. (Sauce can be made up to 1 week in advance.)
- Prepare a grill for high heat and then adjust the heat to medium. Separate 3/4 cup of the barbecue sauce and reserve for serving.
- Lightly season the chicken with salt and pepper. Lightly oil the grill grate. Sear the chicken, skin-side down, until well-marked, about 5 minutes. Reduce the heat to low. Cook the chicken, covered, turning and basting with the barbecue sauce every 5 minutes, until the chicken is just cooked through, about 25 minutes more. Do not baste during the last 5 minutes to prevent cross-contamination.
- Serve the chicken with the reserved sauce.

Add the chicken strips to the bowl and stir to coat. Cover tightly and marinate in the refrigerator for 30 minutes and up to 4-6 hours. The longer, the more flavorful your chicken.
- Preheat oven to 400°F (204°C). Line a large baking sheet with a silicone baking mat or coat heavily with nonstick spray.
- Combine flour, salt, pepper, and smoked paprika in a shallow dish. Beat eggs in another shallow dish. Pour Panko breadcrumbs into a third shallow dish. Coat each chicken strip in flour, shaking off any excess. Then, dip in egg and let any excess drip off. Then generously roll in the breadcrumbs, shaking off any excess. Add more Panko to the dish if you are running low. Place the chicken strips on the prepared baking sheet. Spray each with nonstick spray to “seal” the breading, which will prevent the breading from staying raw and allows it to bake onto the chicken fingers.
- Bake for 10 minutes. Turn each piece over and continue baking until the outside is crisp and the centers are cooked through, about 10 minutes more. Baking times may vary, just make sure yours are cooked through. If you like them more brown, bake longer.
