3/4 cup butter, softened
1/2 cup sugar
1-1/2 cups all-purpose flour
1/2 teaspoon vanilla extract
FILLING:
2 packages (8 ounces each) cream cheese, softened
1/4 cup sugar
2 eggs
3/4 teaspoon vanilla extract
TOPPING:
3 cups thinly sliced peeled tart apples
1/2 cup sugar
1 teaspoon ground cinnamon

Steps:

  • Combine the first four ingredients. Press onto the bottom of an ungreased 9-in. springform pan. In a bowl, beat cream cheese and sugar. Add eggs and vanilla; mix well. Pour over the crust. Combine topping ingredients; spoon over filling. Bake at 350° for 55-65 minutes or until the center is set. Cool on a wire rack. Store in the refrigerator. Cut into wedges with a serrated knife.

1/3 cup sugar
1 cup all-purpose flour
1/4 teaspoon vanilla extract
FILLING:
1 package (8 ounces) cream cheese, softened
1/4 cup plus 1/3 cup sugar, divided
1 large egg, lightly beaten
1/2 teaspoon vanilla extract
5-1/2 cups thinly sliced peeled tart apples (about 6 medium)
1/2 teaspoon ground cinnamon
1/4 cup sliced almonds

Steps:

  • Preheat oven to 450°. In a small bowl, cream butter and sugar. Beat in flour and vanilla until blended. Press onto the bottom of a greased 9-in. springform pan., In a large bowl, beat cream cheese and 1/4 cup sugar until fluffy. Beat in egg and vanilla. Pour over crust. In another large bowl, toss apples with cinnamon and remaining sugar. Spoon over cream cheese layer., Bake 10 minutes. Reduce oven setting to 400°; bake 25 minutes. Sprinkle almonds over top; bake 10-15 minutes longer or until lightly browned and a toothpick inserted in the center comes out clean. Cool on a wire rack. Remove sides of pan before slicing. Store in the refrigerator.

Steps:

1 (250 g) package PHILADELPHIA Brick Cream Cheese, softened

  • Heat oven to 425 degrees F. Beat butter and 1/3 cup of the sugar in small bowl with electric mixer on medium speed until light and fluffy. Add flour; mix well. Spread onto bottom and 1 inch up side of 9-inch springform pan.

1 1/2 cups all-purpose flour
1/2 cup sugar
1/2 cup margarine or 1/2 cup butter, softened
1 egg
1/4 teaspoon almond extract
1/2 cup raisins
1/3 cup sliced almonds
2 large apples, peeled, cored, cut into 1/4-inch slices
2 teaspoons cornstarch
1/4 cup milk
1 tablespoon lemon juice
1/4 teaspoon vanilla
1/4 teaspoon almond extract
1 (8 ounce) carton vanilla yogurt
1 egg, beaten
1/4 cup apricot preserves, melted

Steps:

  • Heat oven to 375 degrees.
  • Lightly spoon flour into measuring cup; level off.
  • In large bowl, combine flour, sugar and margarine; beat on low speed until well blended.
  • Beat in 1 egg and 1/4 tsp almond extract to form crumbs.
  • Press crumb mixture in bottom and 1 1/2 inches up sides of ungreased 9-inch springform pan.
  • Sprinkle with raisins and almonds.
  • Arrange apple slices over raisins and almonds in desired pattern.
  • In medium bowl, dissolve cornstarch in milk.
  • Add lemon juice, vanilla, 1/4 tsp almond extract, yogurt and 1 beaten egg; blend well.

  • Cool 30 minutes, remove sides of pan.
  • Brush preserves over apples.
  • Refrigerate any remaining tart.

4 large cooking apples, peeled
125 g sugar
250 g self raising flour (2 cups)
100 g butter
30 g sugar
1 egg, beaten

Steps:

  • Cut peeled apples into quarters, then each quarter into 5 pieces, then partically cook apple with sugar, keep hot.
  • Sift flour into bowl, rub in butter, add sugar, then egg and mix to soft dough.
  • Roll out half the pastry and line large, deep flan.
  • Spread apples to within 1/2" of top of flan tin.
  • Grate remainder of pastry over top and bake 25-30mins at 220 deg C (425 deg F).
  • Serve hot or cold, with cream, custard or ice-cream.

My friend, Nancy, shared this recipe with me. For such an elegant presentation, it's very easy to make. In this version, you don't even need to mix the apples before putting them on the filling.

1 teaspoon pure vanilla extract
1 cup flour

  • Hint #1: I purchase almonds already sliced, and simply toast them in a non-stick skillet at medium-high heat until fragrant and just starting to turn golden, just 2 or 3 minutes.
  • Hint #2; Have all ingredients at room temperature, and make the recipe in the order as written, saving the apple-peeling until just before you sprinkle on the almonds.
  • Hint #3: Use real vanilla extract, not vanilla flavor. It makes a big difference in the quality of flavor.

1/2 c sliced almonds
2 Tbsp sugar
1/4 tsp salt
6 Tbsp cold unsalted butter, cut in small pieces
1 large egg yolk

FILLING
1 large egg
8 oz cream cheese, softened
1/4 c sugar
3/4 tsp vanilla extract
TOPPING
4 c peeled and thinly sliced mcintosh apples

1/2 tsp ground cinnamon

Steps:

  • 1. For crust: Pulse flour, almonds, sugar and salt in a food processor, using about 10 one-second pulses, until combined. With the motor running, add butter, a few pieces at a time, until combined. Add egg yolk and vanilla and process until evenly combined (mix will look like wet sand). Pat the crust into the bottom of a 9-inch springform pan and about 1 inch up the sides.
  • 2. For filling: Wipe out the food processor. Add egg, cream cheese, sugar and vanilla; process until smooth. Spread into the crust.
  • 3. For topping: Toss apples, sugar and cinnamon in a bowl until combined. Spoon over the filling, pressing gently. Top with almonds.
  • 4. Bake in a preheated 400º oven for 15 minutes.
  • 5. Reduce oven temp to 350º. Continue baking until set around edges and just a bit jiggly in the center, 20 to 25 minutes more.
  • 6. Cool on wire rack for 15 minutes. Run a knife around the edges, remove the pan sides and let cool completely for about an hour. Refrigerate until cold, from 2 to 8 hours, before serving.
