SUMMER HERB DIP (GERMAN)

Summer Herb Dip (German) image

*Sommerlicher Krauter-Dip* in German, this recipe is from *Modern German Food* by Roz Denny. A colorful veggie mixture including cucumber sticks, carrot sticks, radishes, yellow & green bell pepper sticks & young celery stalks was suggested to accompany this herbed dip. *Enjoy* !

Categories     German

Time 10m

Yield 6 serving(s)

Number Of Ingredients 10

250 g Quark (may use cream cheese per Note #1)
140 g low-fat yogurt (see Note #2)
1 garlic clove (crushed)
2 green onions (finely chopped)
3 tablespoons fresh parsley (chopped)
2 tablespoons fresh dill (chopped)
2 tablespoons of fresh mint (chopped, may use coriander)
1/4 teaspoon cumin
1 tablespoon lemon juice
salt and black pepper (to taste)

Steps:

  • Mix quark & yogurt in a mixing bowl. Add next 7 ingredients (garlic thru lemon juice).
  • Mix well, taste & season w/salt & pepper to pers pref. Chill in refrigerator for at least 2 hrs b4 serving.
  • NOTE #1: I confess I have not used Quark as an ingredient & do not know if I can get it here in Iceland. However, Roz said "Quark makes a quick light dip & has fewer calories than richer cream cheese." Taking this cue from her, my assumption is cream cheese may be used as an alternative to quark.
  • NOTE #2: As written the recipe offered a choice of using single cream OR low-fat yogurt. I opted for the latter, but the former may be your choice. Feel free. :-).

OBATZDA BAVARIAN SOFT CHEESE DIP

Obatzda Bavarian Soft Cheese Dip image

How to make Obatzda - the signature beer cheese dip of Bavaria (also known as Gerupfter in the Franconia region) and a classic Oktoberfest feast item.

Provided by CraftBeering

Categories     Cooking with Beer

Time 3h5m

Number Of Ingredients 9

8 oz Camembert , (or other soft, ripe cheese such as Brie)
8 oz spreadable cheese, (such as Laughing Cow in the US)
1/3 cup butter
2 1/2 tsp sweet paprika, (Hungarian works best)
2 tsp caraway seed, ground
salt and pepper to taste (start with a pinch of each)
1/4 cup Dunkel lager, Weissbier or Schwarzbier, (most likely will use a bit less)
1/3 cup onion, (sweet onion recommended, diced)
1 small bunch chives, (finely chopped, 2 tbsp for dip and the rest for garnish)

Steps:

  • Bring the Camembert (cut in small pieces), spreadable cheese and butter (cut in small pieces) to room temperature.
  • In a mixing bowl add the Camembert, spreadable cheese, butter, paprika, caraway seeds, salt and pepper and beer and press using a fork until well mixed together.
  • Start by adding only 2 tbsp of the beer and keep adding until you reach the desired consistency (should be spread like but not runny).
  • Cover with a lid or plastic wrap and refrigerate for 3 hours to firm up.
  • Just before you are ready to serve take the dip out of the refrigerator and finely dice the onion. Run the diced onion under water (use a strainer) and dry off with paper towel before using. Finely chop the chives.
  • Add the diced onion and chopped chives to the dip and fold until they are well incorporated. Garnish with chives. Serve with pretzels or thinly sliced onions and radishes or sliced rye bread.

BAVARIAN PARTY DIP

Bavarian Party Dip image

This is a spread I have been making for many years. It goes great with crackers (Saltines are my favorite) or with thinly sliced cocktail breads. (I'm not really sure why it was ever called a "dip"... it is definitely a "spread"). It is a very quick recipe and super easy to make. Can be made a day ahead and refrigerated for ease of serving at a party, just let sit out of the fridge for about 20 minutes before serving to soften a bit. Enjoy!

Provided by rosie316

Categories     Spreads

Time 10m

Yield 1 1/2 cups

Number Of Ingredients 6

1/2 cup minced onion
4 ounces cream cheese (softened)
1 lb braunschweiger sausage (I like Dubuque, but your favorite brand will work)
1/4 teaspoon black pepper
1 tablespoon vegetable oil
crackers (your favorite) or cocktail bread, for serving (your favorite)

Steps:

  • Heat oil in small fry pan and saute the minced onions 8-10 minutes over medium-low heat, stirring frequently until softened. Remove from heat and drain. Set aside.
  • Remove Braunschweiger from its wrapper and mix it in a bowl with the softened cream cheese. Once combined well, add in sauteed onion and black pepper.
  • Serve along side your choice of crackers or cocktail bread (or even try some raw veggies with it).
  • Enjoy!

15 DISHES OF BAVARIAN FOOD TO TRY IN GERMANY I TRAVEL EARTH

From travel.earth
Estimated Reading Time 4 mins
  • Sauerkraut. Sauerkraut is an extremely popular side dish made of finely-shredded, fermented cabbages. It is served with everything, from sausages to pork dishes.
  • Currywurst. A beloved German snack, currywurst is made with steamed and fried pork sausages, or bratwurst, that is then served with curry ketchup, sprinkled with curry powder and accompanied by fries.
  • Kaiserschmarrn. Kaiserschmarrn is a mildly-sweet pancake dish that is scrambled until it is lightly caramelized. As the pancake mix cooks, it is turned and cut with a fork, and then usually served with sugar, berries, jam, or seasonal fruits.
  • Leberknödelsuppe. Lots of traditional Bavarian foods are based around liver, and the leberknödel suppe (liver dumpling soup) is quite popular. The leberknödel, or liver dumplings are a savoury blend of liver, flour, eggs and spices, that are served in a clear broth.
  • Weisswurst. Bavarians love their sausages. The thick and tender Weisswurst (literally, “white sausages”) are usually eaten for breakfast. These distinctive white sausages are made from veal and pork flavoured with parsley and onion.
  • Apfelstrudel. Apfelstrudel, or apple strudel, is another tasty Bavarian treat. This dessert consists of fine sheets of dough (strudel) filled with apple mousse or apple chunks and baked until crisp.
  • Bretzel and Obatzda. Bavarian pretzels, or bretzels, are known for their slightly hard crust and soft, chewy centre. Ther are lots of varieties to be found, and bretzels are often accompanied by obatzda, a thick, creamy dip made with soft cheese and butter and seasoned with salt, paprika, pepper, garlic, and spices.
  • Beer. What is a visit to Bavaria without trying some of its famous beer? Like the rest of Germany, beer is brewed according to the Reinheitsgebot, a purity law that only permits water, hops, and malt as ingredients in beer, making it free of additives.
  • Schnitzel. Another popular dish from Bavaria, the schnitzel is usually made from veal or pork. The meat is pounded until flat and then lightly breaded and fried.
  • Germknödel with vanilla sauce. The knödel is a typical Bavarian dumpling. Here, it is filled with powidl, a delicious plum sauce, and served with creamy pudding, vanilla sauce and topped with poppy seeds.
