HOT COCOA WITH BROWN SUGAR

Steps:
- 1. Pour milk into pan and heat to simmer over medium heat. Stir cocoa powder and brown sugar together. A couple teaspoons at a time, stir about 2 tbsp. of the hot milk into the cocoa mixture to make a smooth paste. Add cocoa paste to milk in pan and simmer for 2 minutes; don't let it boil. Remove from heat and stir in the vanilla. Pour into small mugs and add a dollop of whipped cream and a sprinkling of chocolate shaving on top of each. Serve at once. Serves 4

- Combine the milk, heavy cream, sugar, cocoa powder and a pinch of salt in a medium saucepan. Cook over medium heat, whisking occasionally, until the sugar and cocoa powder dissolve and the milk is steaming; do not boil.
- Whisk in half of the chopped chocolate until melted, then whisk in the remaining chocolate until smooth. Remove from the heat and whisk in the vanilla. Pour into mugs and top with marshmallows or whipped cream.

- Combine all ingredients in a mixing bowl and incorporate evenly. In a small pot, heat 4 to 6 cups of water.
- Fill your mug half full with the mixture and pour in hot water. Stir to combine. Seal the rest in an airtight container, keeps indefinitely in the pantry. This also works great with warm milk.

- Add water. Stir well.
- Cook over med. heat until mixture comes to a boil and the sugar is dissolved.

HOT CHOCOLATE CHOCOLATE CHIP COOKIES
These are killer. Seriously. Don't make these if you are on or near a diet. I found them on a blog when I was looking for a way to use up the insane amounts of hot cocoa mix I have on hand. I made them with Starbucks' mix which contains only cocoa, vanilla and sugar, so I'm not sure how other brands will turn out. If you use a brand that is very sweet, adjust the sugars accordingly. I also slightly packed my flour to see if they would come out more cakey (they did). This batter does not need to be refrigerated before baking. I tried 2 batches each way and the cookies actually came out better when the dough was at room temperature.

- Cream butter and sugars until smooth.
- Beat in eggs and vanilla until combined.
- In a separate bowl, combine flour, hot chocolate mix, salt and baking soda. Add to wet ingredients in 3 to 4 parts.
- Fold in chips.
- Form into balls and bake for 9-11 minutes.
- Let cool for 5 minutes before removing from pan.

I was messing around in my kitchen one day and was craving hot cocoa. Since I only had dark chocolate on hand, I used that, and for a festive touch added cinnamon. Pour into a mug and top with whipped cream or marshmallows, if desired. Serve hot.
