A spicy full flavored version of roasted baby potatoes. I adopted this from the Recipezaar account and I am the very happy new owner of such a winner :) Now that I have made it several times myself, I totally agree with reviewers recomendations to add carrots to this too. I have also added cubed sweet potato, but be aware that they will be fairly soft, rather than crunchy like the potatoes. A firm favourite in our home from now on ! Enjoy :) Oven time depends on how much you are making.. mine took 45 minutes for the potatoes to be nice and crunchy. It serves 4 at our place... 6 would be fighting each other for the biggest serving LOL.

3 lbs red potatoes or 3 lbs yukon gold potatoes, cut into bite sized pieces
6 tablespoons unsalted butter
3 tablespoons olive oil
3 garlic cloves, pressed
1/2 cup fresh Italian parsley, chopped
1 tablespoon fresh thyme, minced
1 1/2 tablespoons fresh rosemary, minced
1 1/2 teaspoons smoked paprika
cayenne, to taste
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Preheat oven to 375.
  • In large pan, melt butter in oil over moderate heat.
  • Add garlic, parsley, thyme, rosemary, paprika and cayenne.
  • Add potatoes and toss well.
  • Roast, basting until potatoes are tender.
  • Season.

8 medium potatoes
1/3 cup green onion, sliced
1 cup celery, sliced
1/3 cup pimiento, chopped
2/3 cup bay shrimp, cooked
1/2 cup italian kitchen wine vinegar
1 tablespoon salad oil
1 1/2 cups mayonnaise
2 tablespoons sweet pickle relish
salt, to taste
pepper, to taste
garlic powder, to taste

Steps:

  • Bring potatoes to a boil in a large pot. Reduce the heat and boil them for approximately 20 min or until a fork pokes through their centers easily. Place them in cold water immediately. Peel and then dice the potatoes approximately 1/3 inch thick.
  • Place them in a 2 qt bowl and add vinegar. Stir gently and set aside for 20 minute Mix salad oil with the mayonnaise and then add with all remaining ingredients. Stir gently. Place bowl in fridge for at least 2 hours so the flavors will intensify.

Marmitako is a traditional Basque dish, which I have yet to make myself. I'm told it's delicious and seems very easy to make. I like the one pot idea! I'm unsure of the serving size, it seems like a lot to me for 4 people!

2 lbs fresh tuna
5 tablespoons olive oil
1 onion, diced
4 garlic cloves, chopped fine but not minced
2 green peppers, diced
2 large tomatoes, seeded and diced
1 teaspoon paprika
1 fresh chili peppers or 1 pinch cayenne
1/2 teaspoon sea salt (or to taste)
1/4 teaspoon pepper
2 lbs potatoes, peeled and sliced
water
1/2 cup white wine (optional)
2 tablespoons fresh parsley, minced (optional)

Steps:

  • Cut the fish into large, chunky pieces (about 1 1/2 inch squares).
  • Heat the olive oil in a large stove-top safe casserole dish or pot. (I'd use a nice heavy cast iron pot). Add in the onion, garlic, peppers and tomatoes and fry over a low heat for about ten minutes.
  • When the onion is looking cooked, add the paprika, cayenne, salt and pepper and cook for another few minutes.
  • Add in the potatoes then add just enough water to cover the potatoes and veggies. Bring up to a gentle boil.
  • When the potatoes are nearly done, add in the tuna and the white wine and cook for a further 15 minutes All depending you may need to add a little more liquid if it's drying up, or let some cook off if it's too runny. Garnish with the parsley if using.
  • Serve with crusty bread and a salad!

1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
3 medium fresh tomatoes - cored, quartered, and sliced as thin as possible
1 large cucumber - peeled, seeded, and thinly sliced
1 Spanish onion - peeled, cut in half, and thinly sliced
⅓ cup red wine vinegar
¾ cup extra-virgin olive oil
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 teaspoon white sugar
¼ teaspoon dried oregano
¼ teaspoon dried basil
¼ teaspoon dried marjoram
chopped fresh parsley

Steps:

  • In a large bowl, toss together the green, red, and yellow peppers with the tomatoes, cucumber, and onion.
  • In a medium bowl, whisk together the vinegar and olive oil. Season with salt, pepper, and sugar. Whisk in oregano, basil, and marjoram. Continue whisking until ingredients are well blended and the oil and vinegar are emulsified.
  • Pour dressing over vegetables, and toss gently with a wooden spoon. Cover, and marinate at room temperature for 1 to 2 hours, stirring frequently. Refrigerate until 1 hour before serving; then remove from the refrigerator, and let sit at room temperature. Garnish with chopped parsley.

1 medium onion, sliced
1/2 teaspoon garlic, minced
1/2 cup parsley, chopped
1/4 cup pimiento, drained and chopped

6 medium potatoes, sliced 1/4-inch thick
1 cup chicken broth

Steps:

  • Heat the oil in a heavy skillet (that has a lid).
  • Add the onion and garlic.
  • Cook until soft.

This probably is an interpretation of a Basque salad and not traditional-who knows? Normally I would use a 'bleu de Basque' cheese but the store was out of stock and I substituted Oregon made 'Smoky Bleu' cheese from Rogue Creamery. 8 cups loose leaf lettuce (try a variety of lettuce including heirloom lettuce if possible)
2 medium tomatoes, sliced (heirloom tomatoes if available)
1/2 cup walnuts
1 cup blue cheese, crumbled
1 orange, peeled, seeded and sectioned (Blood orange or Valencia would be great!)
2 hard-boiled eggs, quartered
1/2 cup extra virgin olive oil
1/2 cup raspberry vinegar
1 tablespoon white sugar (decreased from 1/2 cup)
2 teaspoons Dijon mustard
1/4 teaspoon dried Mediterranean oregano (or 1 teaspoon fresh if you have it)
1/4 teaspoon ground black pepper

Steps:

  • In a jar with a tight fitting lid combine olive oil, vinegar, sugar, Dijon mustard, oregano and pepper. Shake well.
  • Tear the lettuce and place on individual salad plates.
  • Add the tomato pieces, walnuts, and blue cheese.
  • Garnish with orange sections and egg quarters; drizzle with raspberry vinaigrette. Finish with a sprinkle of fresh cracked black pepper.

Spicy potatoes. You can do these in the oven if you like, but I find the stovetop to be easier when I have a limited amount of time and/or energy. When I'm feeling especially lazy, I sub out a premixed creole seasoning for the seasonings. Always add the fresh garlic though.

1 lb new potato, scrubbed but not peeled
2 tablespoons butter
1 tablespoon extra virgin olive oil
1 large garlic clove, minced
1/2 teaspoon thyme

1/8 teaspoon cayenne pepper (to taste)
1/4 teaspoon salt

Steps:

  • Melt the butter in the evoo in a skillet.
  • Add potatoes and roll around to coat with the oil/butter.
  • Sprinkle in the seasonings except for the garlic.
  • Cover and saute, stirring occasionally, until potatoes are done. This should be about 30-40 minutes.
  • Shortly before the potatoes are done, add the garlic to the skillet and stir to combine.

4 medium potatoes, peeled and cut into 1 inch cubes
1/2 cup milk (approx)
salt
black pepper
1 1/2 tablespoons olive oil
1 large onion, cut into thin wedges
1 small green sweet pepper, deseeded and cut into thin strips
1 large garlic clove, crushed
2 small tomatoes, cut into 1/2-inch wedges
2 ounces pimento stuffed olives, sliced
1 strip orange rind
1 teaspoon dried basil or 1 tablespoon fresh basil
3/4 cup dry white wine
2 tablespoons freshly chopped parsley

Steps:

  • Place the potatoes in a large saucepan, just cover with water and bring to the boil. Reduce the heat, cover and cook for 12-15 minutes until just tender.
  • Drain well then mash with a potato masher or fork until smooth.
  • Add the milk, season with salt and pepper and beat well. Cover and keep warm.
  • Heat the oil in large frying pan over medium heat. Add onion, pepper and garlic and sauté for 5 minutes.
  • Mix in the tomatoes, olives, orange peel, basil and wine, blend well and simmer for about 5 minutes, stirring occasionally, until onions and bell pepper are just tender.
  • Remove the orange peel and adjust the seasoning.
  • To serve - place the potatoes in a shallow serving bowl, spoon vegetables and juices over the top and garnish with parsley. Serve hot.
