SNOW CONE PIMM'S CUP

Number Of Ingredients 6

Crushed ice, for serving (see Cook's Note)
8 thin cucumber slices
8 thin lemon slices
8 strawberries, halved
8 ounces Pimm's
12 ounces sparkling lemonade

Steps:

  • Handful fresh basil leaves, plus sprigs for serving
  • Fill 4 highball glasses with crushed ice. Add 1 cucumber slice, 1 lemon slice and 2 strawberry halves to each glass.
  • Add the Pimm's, sparkling lemonade and the remaining cucumbers, lemons and strawberries to a pitcher. Add the basil. Stir until combined, then pour evenly amongst the glasses. Top each with a sprig of basil.

small bunch basil
500ml Pimm's
1 ½l chilled lemonade
200g sliced strawberry

Steps:

  • The night before, whizz the basil leaves with 500ml water. Fill 2-3 ice cube trays and freeze overnight until solid.
  • On the day, mix the Pimm's with the chilled lemonade in a large jug. Add some basil ice cubes and the sliced strawberries, stir and serve.
